Alaskan Apple and Fresh From the Pumpkin Pie | perfect fall pie made from scratch

    Pie crust
    1c salted butter
    2 1/2 c flour
    1/2 tea salt
    1/4 c sugar
    4-5 tbs cold water
    Apple pie
    2 pie crust
    3/4 to 1 c sugar
    1-2 tbs flour
    1/2 -1 tea cinnamon
    1/8 tea salt
    4-5 c apples
    1 tbs lemon juice
    2 tbs butter
    Pumpkin pie
    2 c fresh pumpkin
    1 c brown sugar
    1 1/4 c sugar
    3 TVs flour
    1 tea cinnamon
    1/2 tea allspice
    1/2 tea ginger
    1/4 tea clove
    1 tea salt
    1 1/2 c caned milk
    1/2 c heavy cream
    3 eggs slightly beaten
    450 for 15 min 350 for 45 min could take up to 1 1/2 hours until the center is set

    My granddaughter and I made your grandmother in laws pumpkin pie. We cooked two pie pumpkins and it yielded almost 4 cups of pumpkin puree after we used the food mill. Today we made the pie and my Harold said it tasted just like his mom's and he loved it. It was a real compliment as he is an eat to live not a love to eat kind of guy. We roasted the seeds yesterday and they turned out really good too. I am going to the Farmer's Market tomorrow for more pumpkin so we can freeze some puree for Thanksgiving. The extra in the muffin tins is a great idea and Elise and I will do that for the kids at Thanksgiving. Thank you for sharing the recipe.

    Just came home from work with a big pumpkin to make soup with, cut it all up and thought that's too much for soup I wonder how much you need to make a pie. Then litrally this video comes up on my feed. As an English girl I have never made pumpkin pie, I'm an apple or rhubarb kinda girl.
    Thank you for this perfectly timed video, I can't believe you use vapa in it too, I grew up on vapa as cream was too expensive.
    Looks like it's soup and pie this weekend yippy.

    Those pies look so enticing! My crust is very similar to yours, I use Julia Child’s sweet pastry, to the T and have never had a problem. I often use the seasonal “baby cookie cutters” to fancy both sweet and savory pies. The exception being lemon meringue !!
    I have to be honest, as a new bride I made pumpkin filling from scratch! It was a disaster, mostly because I had no idea what I was doing. The recipe assumed I did!
    My poor groom attempted to eat it by using an entire can of whipped cream. God bless him!!
    I have had the mini pies made for entertaining, but the caterer used the tiny, well greased cupcake pans. She said she never was successful with paper liners.
    I thought that you were going to point out snow flakes in that rain!! Love you.

      Lol no snow! It had already snowed several times by now last year. Still in the 40s and upper 30s for the next 10 days. Not even had a freeze yet! Crazy.

    More tips for the extra pumpkin- they are delicious in graham cracker crust tarts, Also put a ginger snap in the bottom of your muffin cup or custard dish and fill with pumpkin! Yum! (My family loves the graham cracker crust for a whole pie. I have always wanted to try a gingersnap crumb crust but have never gotten around to it. ) I also broila brown sugar pecan or walnut topping on my pumpkin pie. Double Yum. Brown sugar, chopped nuts and butter mixed well and sprinkled over the top. Broil for just a couple minutes-keep an eye on it.

    Hi Jessica, I`m so motivated to try these recipes out. I have a similar recipe from my German mother in law for apple pie with a crumble crust on top, also very delicious. And I looove pumpkin pie since I tasted it the first time 30 years ago on our trip in New England. Looking forward to your next videos. Thank you for showing and teaching us about your homestead.     Looks so good. Saw on Moss tv yesterday they smoked pumpkins and than made the mixture for 2 pies and put it in pie crust and than smoked the pumpkin pies they said were really good. Don't know if you ever heard of that. Have a blessed day!!

    I buy a bunch of pumpkins from a farm up the street when they mark them down at the end of the season. Then I roast, puree and freeze in 2 cup bags. It just makes a lighter looking pie. Also butternut squash makes a yummy "pumpkin" pie too.
    We made this pumkin pie recipe today. Plus the pie shell. We loved it! My little girls want some for breakfast 😋 I don't have a deep dish pie pan so it made 2 pies for us. Sent some to the neighbors and they said send it anytime. Lol! I'm hoping to pick up some apples from the Amish tomorrow and totally want to try the apple pie next! Thank you!

    I take leftover pie crust and I put the leftover pumpkin pie on top of the little pie crust to make like little pumpkin pie cookies

    I am going to try this crust :) All of the pies look amazing. I do add sugar to my Apple Cider Vinegar= It helps with the fermenting.

    I use the Better Crocker Cookbook oil pie crust. It's so quick and easy and I've had tons of compliments on it.

    Those pies are gorgeous and no comparison to store bought. Store bought pies taste like disappointment after a delicious homemade pie. I think you're on point with your pie game and I appreciate you sharing your family recipes with us and for sharing your tips and tricks. I usually cut strips of foil to put around my pumpkin pie crust but I like the way it looks when you cut it off. Thanks for bringing us along

      Thank you! It was born out of frustration and with pumpkin the pie cooks so long it’s not light and flaky on the top. So why not just cut it off.

    I so appreciate this video. I have made homemade pumpkin pies for years, but with canned pumpkin. Many years ago, I attempted pumpkin pies with fresh pumpkin, and I couldn’t figure out how to get rid of all the liquid (which sort of ruined the pies). So, I’ve used can pumpkin ever since. Your method has given me confidence to try fresh pumpkin again. Also, I’ve always wanted to make apple pie. I’m excited to try your recipe! Thank you, Jessica!!!

    Thank you for making the pumpkin pie. My daughter made her own pie for the first time and was so mad at me because her whole life she bragged about my pumpkin pie, only to find out it was pure pack from the can with the recipe from can! She felt deceived lol! I told her that it’s the same thing without all the work, but honestly I’ve never cooked the pumpkin because I thought it was a big deal. I’m definitely going to try it now.

      Seriously a little more work and I like todo the pumpkins when I’m doing a bunch of other prep just let the cook. So it ends up not being such a big deal.

    I have pressure canned it and I love it as it just mashes so easily! drain the jar and its ready for anything. Excited to try your pie crust recipe. Working on making the switch from store bought to homemade.

    Hahaha... hooked on making pies? Hmmm... sound familiar. Seeing all of you homesteaders making pies prompted me to have a go as well. Not a thing here in the Netherlands. But the tomato pie was a hit, and the double crusted (? bottom and top) chicken pot pie sort of (soggy bottom, to low a temp I fear). Like the convenience of blitzing the dough in a food processor! Anyway, pumpkin: again, not a thing here in 🇳🇱. So I'm curious 🤔. See you later!

      I’m so happy you gave it a try. Secret to the chicken pot. I don’t do a bottom crust most of the time. If you do get it as close to the heat as you can. High temps. Or just do a tip crust you won’t miss the bottom.

      @@modernhomesteadalaska Thanks! Yes, I will play around a bit with it. Maybe even try a blind bake, as with the tomato pie. Although I read that then maybe the top would not adhere well? My problem: so many ideas, so little room in my fridge and freezer left 🤭

    That’s how I cut and bake my butternut and acorn squash I put mine in a glass baking pan to hold the water ,because I would spill it taking out 😢looks very good!🥧🍁🥧🍁

      Oh nice I just add some bee pollen to my hot tea or coffee it’s good for the belly and allergies. You can often find it locally

      Lol it’s fine they are called pie or sweet pumpkins depending on where you are at.
