My vocabulary has increased and my pronunciation has slightly gotten better. Now if I can only generate a sentence without having to remember the sentence structure
0:49 You're sure 待會/待会 is "dāi huǐ" ? Pleco tells me it's "dāi hui". And when I try to look up other sources, I get all kind of different tones for this same word. So I'm completly lost now.

Are you kidding me? Compared to some "teachers" she sounds awesome! Clear English. She already speaks better than 90% of Chinese teachers out there (who are from China).
I see you are using traditional characters. While in my early days I saw some videos using it, I have to notify all the misguided learners: China uses SIMPLIFIED characters and Taiwan, Hongkong and Macau (maybe also Tailand - too lazy to check) uses TRADITIONAL character. So, if you are planning to go to China mainland, don't waste time with traditional characters. It won't help you and will just make you more confused and you will need more time to learn characters. Unless you want to work in a Buddhist monsatery as a translator of ancient scripts (never heard of this position, but who knows), then you need to brush up those traditional characters and learn some ancient Chinese too! Yeah, more words, words that nobody uses. If you don't know where will you want to go, or just having fun with Chinese, than knock yourself out with whatever character form you find. But for mainland China only simplified form. And if you plan on going to Hongkong, where there is already 20 million people, with inflated flat prices and tiny appartments and probably around 300.000 or even a half million foreigners, be my guest. I mean, from all the China, that huge landmass that is a home of 1.4 billion people, and you choose to cram yourself with 20 million on a small island ... well, it's your doom, not mine. I would rather choose some less populated city = less poluted = less foreigners in it, and try to make my foothold in there. Or, Beijing, Shanghai, and a few other major cities that also has 20million people but on a much bigger area and with bigger flats and smaller rent prices (all compared to Hongkong). So, choose your character style wisely and use flashcards and start learning! It's not hard, only time consuming. And for Katrina I wish you all the best and great success in teaching us, westerners, Chinese! As I said in one of my comments here, your English is really good and you can easily teach people English (in countries that don't know English). I met a Chinese person living in Italy teaching English to Italians. Can you believe it? :) So, 加油!

Actually it's dāi huǐ but you pronounce it as dāi hui because you won't say the thrid tone if you have something else to say, as in 待会见.
