I would love to see an updated revisit to this study. New insights could be made especially since there are plenty of interesting new players in both Valles and Altos regions at the moment.

When it comes to Tequila (or any agave spirit) 'Taste is in the palate of the beholder', similar to the adage "beauty is in the eye of the beholder". I have long felt that the simple answer to questions like the ones you have addressed, is quite simply, "it depends", especially Low vs. High elevation agave growing regions. And, when it comes to flavors and producers, in most cases, 'it's all over the place' due to mixing, blending, aging, barrels, etc. It would be difficult for most to arrive at a preference. I have wondered why no one by now has not come up with a list of agave spirits producers by regions' elevation; Lowlands (valley) vs. High landrons. Again, the simple answer appears to be difficult to pinpoint As a hobby, I age my own Tequila, Sotol and Bacanora to my desired flavor profiles.

I chose/sampled and liked Fortaleza and Siete leguas as soon as I saw the group to be tested. I'm a "newby" to this....why wan't blanco/silver used because of sipping and not mixed in a drink??

Love this channel, have for a long long time!
Quick question with regards to the production details; under the bullet point "Wood fermentation details"; what's the difference between fermenting with rather than without fibres? that's something I know nothing about! many thanks

Aged tequila .. You're not getting the truest expression and the agave isn't shining as much as a Blanco.. Blah.
