- Jerk chicken stands out for me as one of the very best cooking treatments you could ever throw down on chicken. When you taste this recipe complete with the sauce made in the video you will understand.
Jerk Chicken Full Recipe:
marinade: save 25% for the jerk butter sauce
2 bunch scallions
1 large onion
2 habanero pepper (scotch bonnet is better if you can find them)
10 sprigs thyme plucked
10 garlic cloves
1/3 cup lime
1/3 cup orange juice
1/2 cup soy sauce
1/2 cup coconut sugar or brown sugar
2 TBSP distilled white vinegar
1 tsp cinnamon
1/2 tsp nutmeg
1 TBSP coriander
1 1/2 tsp black pepper
1 TBSP allspice
3 tbsp unsalted butter
2 whole chickens with the spines removed

If you can't find coconut sugar it's fine you can just use brown sugar and it will be just as good my sweet friends!! Also scotch Bonnets are the preferred chili for Jerk chicken but I can never find them here... HAPPY COOKING!!

I would also add that rather than regular soy you should be using Mushroom Dark Soy Sauce. It is thicker and a bit richer in flavor. I would also use fresh All Spice Berries (aka Jamaican Pimento). You already mentioned the scotchies.
But, you did Jamaica well in this one, especially for a "non-Yardie."

Were the Allspice and Cinnamin obnoxious at all in the flavor profile? They can be so over-bearing that I often fear using them.
@@quill1260 Allspice also known as Pimento is an essential ingredient in Jerk... traditionally the meat is smoked over Pimento wood. Do a search for the Pork Pit in Montego Bay on YT to see it in action.

I love making Jerk chicken, I've never used Orange in the marinade before so I'll definitely try it. The only other difference is that I use scotch bonnet
The acid makes the meat super tender. I learned that from the Dominicans in NY. They use sour orange on all their marinades.
I’ve seen some people cut through the skin and meat right down to the bone. I believe this was in order to add more surface area for the marinade to stick. I will be making this recipe👌👌🙌

I've been doing jerk chicken for a long time. It takes me all day to make, and I love it! You're recipe is similar to some I've used. It looks really really good! It's definitely meant for the grill.
And I can attest to putting the rub on first, works a.lot better that way. I think it gives better texture.

Dude. We did this recipe last night and it was every bit delicious as you said. Our birds must have been a bit larger since the second 350 degree piece was needed (about 10 minutes) to cook them to the right temp (not a complaint at all). We'll add this to our dinner rotation, especially during the summer.
Btw, we used the second chicken in a chicken pot pie. Excellent meal for leftovers.

That was a great take! Jerk chicken takes a brining instead of a marinade, the idea is to brine the bird for at least 24 hours in saline, then, marinade for 2h min with all the ingredients. Watching your video gave me the idea of a 24h dry-brine with salt and the spices, then the marinade for a couple hours. Sure'll let you know how it goes.

Hey mate, love these videos and always learn lots from them. I don't think its necessarily your target audience but I think it would be really cool if you expanded more on the reasoning of certain techniques - like spatchcocking and how butter balances the sauce. More understanding of principles we can extend into other intuitive cooking!
Spatchcocking allows for an even cook throughout the chicken whereas cooking it whole allows the body cavity to create different dynamics and uneven cooking time on the bird.
Butter, or fat in general, helps mellow out the bite from the acid but also helps carry the flavor through. If you look up "Salt, Fat, Acid, and Heat" you will get a good idea of what many believe to be the basic principals of cooking.

This is by far the best cooking show on RUclips. So many handy tricks along with the recipes. He’s probably one the most skilled chefs on the platform. Most RUclips chefs just cook wagyu every time to mask their lack of skill, so boring.

I made my own “authentic” jerk seasoning once using a highly rated Jamaican recipe. Marinated it. Smoked it using mesquite since I can’t get pepper wood. I liked the stuff I get in a jar better. Walkerswood is the best. I will try using the butter trick though. Or else I have to go back to Jamaica. 😂

Applewood and pimento seeds. Add on grill in a small cast-iron or foil to smoke. Usually we use pimento leaves or wood but hard to find here in states
try finding pimento leaves, or add some whole allspice to your coals/smoker box. If you can swing it, there is a company that imports the wood chips. I bought a bunch at once to justify the price/shipping, and gave bags as Christmas gifts w/ Walkerwood marinade. My parents fired up the grill in December, couldn't wait for warm weather, lol.
First time i made it. I didn't have enough light soy sauce. So i substituted with a little dark soy and oyster sauce. Marinated for 24hrs and it was fantastic! The second one I made as with the soy sauce and I preferred the first one 😂. So now I just put 1/2 cup soy sauce and 1/4 cup oyster sauce.
Close to a mil subs and 1000% percent deserves it!

Recent trip to Jamaica, my and my sister went to a rural area to what was called a chickee bikkle hut.
Open air kitchen with a flat metal table grill that was over a charcoal pit, long low tables for the customers and no individual tables.
The flavours were very similar to this recipe and the chicken looked exactly like this but a wee bit more spicy then this but that might be just on me or another handful the chef added.
Buddy must've spend some time down there to learn.

I usually add a little more palm sugar or brown sugar to my final glaze. I find it adds more complex smokey flavor as it caramelizes and blackens in spots
