Hey Jack. Used a trick I learned from you. My wife cooked a pot of bone broth. Had a lot of fat and stuff floating on top. I sat the pot halfway on the fire and let the boil push it to one side. Skimmed it up real nice.👍

Mmmm makin' me hungry. The "Texas Red" version of chili uses these seasonings: 4-5 tbs chili powder, 2 tbs cumin, 1 tbs Mexican oregano, 1 tbs smoked paprika and 1 tbs brown sugar or coco powder (but not both). Salt and black pepper to taste the meat when browning. I refuse to argue if chili has tomatoes and /or beans (or not). As, I like both in my chili. However, I will say a sirlon cubed into small pieces tastes so much better than hamburger. Enjoy your cooking sir. Have learned a lot.
Both ground and diced steak is the way to go, I like your blend of seasonings Joe. The cocoa powder sounds interesting. I won a chili cookout in Dallas w/ a Turkey, Andouille, Blue Corn Chili at a Texas Chef's event years ago. Wish I still remembered the recipe! Jack

F.Y.I. if you're an idiot like me: Half-way through making this dish I realized I was out of regular chilli powder. I used hot Indian chilli flakes instead - about three spoons just like Daddy Jack in the video. Big mistake! Don't substitute strong asian chilli for regular chilli. Unless you want to sweat through your clothes with a burned out mouth! Good though.

The origin of chili: The are many legends but I will only give you the historically documented one (empirical evidence). 1731 - On March 9, 1731, a group of sixteen families (56 persons) arrived from the Canary Islands at Bexar, the villa of San Fernando de Bar (now know as the city of San Antonio). They had emigrated to Texas from the Spanish Canary Islands by order of King Philip V. of Spain. The King of Spain felt that colonization would help cement Spanish claims to the region and block France’s westward expansion from Louisiana. These families founded San Antonio’s first civil government which became the first municipality in the Spanish province of Texas. According to historians, the women made a spicy “Spanish” stew, Chilindron, that is similar to chili. The first chili mix was concocted around 1850 by Texan adventurers and cowboys as a staple for hard times when traveling to and in the California gold fields and around Texas. Needing hot grub, the trail cooks came up with a sort of stew. They pounded dried beef, fat, pepper, salt, and the chile peppers together into stackable rectangles which could be easily rehydrated with boiling water. This amounted to “brick chili” or “chili bricks” that could be boiled in pots along the trail. Chili should be called “chili a la Americano” because the term chili is generic in Mexico and simply means a hot pepper. Chili con carne began as the “pemmican of the Southwest.” During the legendary cattle drives of the 1880's some of the chuck wagon cooks planted pepper seeds, oregano, and onions in mesquite breaks (to protect them from foraging cattle) to use on future trail drives.
