Water-oil dough: 200 grams of all-purpose flour, 100 grams of water and 60 grams of lard 0:24,
Pastry dough: 200 grams of all-purpose flour, 60 grams of lard 1:08,
Glutinous rice dough(add only if the egg yolks are too salty): 120 grams of milk, 10 grams of sugar, 100 grams of glutinous rice flour, 1:04,
Egg yolks 300 grams 2:08,
Butter 10 grams 2:39,
Cream cheese 200 grams 3:44,
• Mix evenly all the ingredients for glutinous rice dough, then put it in the pot and steam it for 25 mins. Then take it out, add the butter in it when it’s still hot and blend it to be even.
• Baking temperature for an 80-liter oven: preheat the oven to 160 degrees for top heat and bottom heat. Keep it on the middle rack of oven and bake it for about 20 mins. A smaller oven usually provide more heat, therefore please reduce the temperature by 5 degrees for every 10-liter reduction in oven capacity.
