Soft Pandesal For Days Using Home Made Bread Improver by Mai Goodness

- This is a step by step guide in making pinoy bread roll called pandesal. Delicious, very soft and wrinkle free bread using a home made bread improver. You can make this at home for your family or for your home baking business. The bread stays soft even for days at your table and there are lots of tips and tricks for your baking journey. Enjoy!
Pandesal (Pinoy Bread)
Ingredients:
Roux:
1/2 cup (125g) hot fresh milk or evaporated milk (heat on your stove or in the microwave for a minute)
1/2 cup (65 g) bread flour or all purpose flour taken from the sifted 4 cups or 500g flour for the dough
Dough:
1/2 cup (125g) fresh milk or evaporated milk
2 tsp (6g) instant dry yeast
1/2 cup (110g) vegetable oil (you may also use other types of oil)
1 large egg
1/2 cup (110g) light brown sugar or white sugar
1 tbsp of vanilla extract or 1 tsp if you are using concentrated vanilla extract
4 cups (500g) sifted bread flour or all purpose flour
1 tsp (5g) iodized salt
Optional:
add 1/4 cup of milk powder to the mixture for a tastier pandesal
Coating:
1/4 cup bread crumbs
Baking Pan:
16 x 12 inch baking sheet
Baking Time:
180 Degrees Celsius for 15 to 18 minutes
Costing:
Total cost of ingredients - P58
Overhead Cost (water, elec, gas, fare etc is 40% of the cost of ingredients) - P23.20 (adjustable)
Total Costing - P81.20
Per piece costing for 35g - P2.80 x 1.70 (tubo) = P4.76
Per piece costing for 20g - P1.75 x 1.70 (tubo) = P2.97
Yields:
29 pcs of 35g each that you can sell for P4.00 to 4.50 each = P130.50
or 46 pcs for 20g that you can sell for P2.50 to 3.00 each = P138.00

Sige kaya mo yan, magaling ka na gumawa ng bread eh. Makikita mo habang nagmi mix ka kung may kulang or sobra sa ingredients kasi hirap mixer mo pag sobra sukat flour. Use weighing scale if meron ka.

Ang conversion nyo ang problems,
Thanks Mai for sharing this. My dough didn't rise the 1st try but they still tasted good. Proofing is a bit tricky and challenging here in Canada because of our weather. I checked online on some techniques in proofing, put the dough inside the oven with hot water in skillet on the lower level. Voila! It did helped in rising the dough and they tasted good. Next to address is the dryness of my dough.
Wow great to hear! One of my friend whose a chef there find it very hard to let her dough rise as well. It turn out dry. Are you weighing your ingredients or you're using measuring cups? Thanks.
Hi Mai, I'm using measuring cups. I think it's how i put in the flour, iI think it's too compacted. So, will do the right way on my 3rd try. 🙂
If you're using meaauring cups, use a scoop to put the flour into your measuring cup and not use your measuring cup to scoop the flour or else it will be compact and will have a different weight. Your 1 cup will be more. It would be best to invest on a weighing scale if you are into baking bread but with muffins and cupcakes it's tolerable. Malambot ang result ng aking pandesal but I have to use 1 cup of warm milk instead of half cup kasi matakaw ng liquid yong bread flour. The first one I tried following yong exact recipe ay matigas yong dough so I tried it the 2nd time using 1 cup of fresh milk and it was a hit. Thank you for the recipe. You are a good teacher! Hello po. 1st timer here. I enjoy watching your tutorial. Ask q lng po, anu po pagkakaiba ng pgtunaw muna ng yeast at pglagay n agad ng yeast s ibang ingredients? Dun po kc s isany video tutorial nyo ng pandesal tinunaw p, pero d2 direct ng jilagay ang yeast. Slamat po s pgtugon
Pag instant yeast puede ng derecho halo sa ibang ingredients basta may warm liquid kang gagamitin. I had trouble with my instant yeast before, hirap sya mag activate pag di ko nilagay.muna.sa warm liquid. Depende pala sa brand ng yeast so I opted to buy yung mas mahal ng konti na instant yeast at hindi na ko nahirapan magpa activate sa kanya kaya derecho na. Pag inihalo sa warm liquid makakasiguro kang mag activate ang yeast mo pero kung ok naman ang yeast, puede mo ng iderecho. Lalo na sa mga first timer sa baking mas ok na ihalo sa warm liquid para siguradong madaling aalsa dough mo. Maganda din itong gawin lalo na sa malalamig na bansa.
Any procedure will do as long as instant yeast gamit mo depende na lang sa temperature sa lugar mo o kung galing ref ang yeast mo.

Mam ngtry na akong gumawa ng pandesal ok ba lang for 8 hours before cook ang 1 and one half table spoon ng yeast sa 500 grams na flour di po ba siya mapapanis salamat po
Aasim po tinapay, madami ang yeast. Check mo yung ube cheese pandesal overnight proofing na video. Nandon po ang measurement ng yeast at procedure pag gusto mong 8hrs proofing.

Yes correct sa flour, sa milk naman 1 cup talaga yan. Hinati lang, 1/2 cup sa roux at 1/2 cup sa mixture.

Yudane po ata ang bread improver na gamit. Tanzhong pag niluto yung flour.
Yes yudane pag hindi niluto, pero ang yudane ay pinagre rest pa ng 24 hrs, pinabilis ko lang po at pinag combine 2 procedure to make it easier and less time consuming. Thank you for your input.

Yes double the ingredients. Mga 4 tsp ok na sa yeast.

Yung instructions ng overnight pandesal ay yung ube cheese pandesal overnight proofing. Puede din itong overnight pero adjust ka sa yeast. Check mo yung latest ube cheese pandesal video ko kung paaano gawin at ilan measurements ng yeast

Try checking my ube cheese pandesal overnight proofing. Iba ang procedure at measurements ng yeast. No need to put in the ref.
Hi - so the dry ingredients should just have 3.5 cups flour since we deducted 0.5 cups for the roux, is this correct? Or should it be a total of 4.5 cups flour (4.0 + 0.5 for the roux)? Thanks…

Yes po at saka sa tamang measurements ng mga ingredients kaya dapat po weighing scale ang panukat instead of cups. Kasi pag napadami.lang po ng flour magiging matigas na ang dough. Check nyo rin po mga latest videos about bread making para makita nyo ang pag retoke sa kanya.

Yes, madaling tumigas just like mga pandesal sa bakery after a day matigas na sya. Kung gagamit ka ng butter dapat maubos din agad ang pandesal in a day or two, pero kung gusto mo na malambot kahit ilang araw na, oil is better.

Mag practice ka muna pag pang benta, 2g lang ang yeast. Iform na sa gabi mga mga 7pm tapos ang proofing nyan 8 hrs. Sa madaling araw ang bake
Mam ,nag ask na ako sa isang video nyo if separate mixture ang flour for tangzhong,then sabi nyo separate sya,pero dito sa video ngayon,bumawas po kayo sa main recipe ng flour?
Yap 2 ways that you can do it, seperate or kuha ka sa ingredients. Mas marami magagawa tinapay pag seperate, you can use this also which ever is easier for you.

@dannavi8151 room temp lang pero kung mas matagal pa sa 12 hrs iref mo na lng but make sure umalsa bago ibake kapag ni ref, pag hindi ganon kalaki alsa ilabas lang sa counter at hayaan umalsa pa.
