  • I love butter mayo, but I hate dealing with it when it’s hard from the refrigerator. Here’s my tweak on the recipe to make it creamy, fluffy, and spreadable straight from the fridge! Written recipe below.
    With the recent research showing major issues with seed oils this has become an important staple in my house. Here’s the video Dr. Berry posted with Dr. Knobbe talking about how important it is to avoid seed oils.

    Here’s the 2 Krazy Ketos original butter mayo recipe I started with when I first began my journey to find spreadable butter mayo. Thanks so much to them for their great videos and incredible work!

    • How to make Butter may...
    Spreadable butter mayo recipe:
    1 large egg (separated)
    1-2 tsp apple cider vinegar (optional)
    1 tsp Dijon mustard (optional)
    1 pinch salt
    1 stick butter (melted; 140-145F)
    Place egg yolk, vinegar, mustard, and pinch of salt in narrow container. Use stick blender on medium speed to combine well (10-15 seconds).
    Add melted butter 1-2 Tbsp at a time, blending well 10-15 seconds each time with stick blender in between each addition. This will create a thick mayonnaise. Add additional salt to taste if desired.
    Add egg white on top of thick mayo. Blend 5-10 seconds to combine. Blend an additional 10 seconds on high speed. Mayo will be a little frothy and somewhat runny. Refrigerate and use after it sets up. Mayo should be soft and spreadable straight out of the fridge.

    This Vyci, Ron’s wife. I had made butter mayo and was disappointed once it was cold….and hard. I had used a whole egg in my recipe so I thought that would be no different than adding the egg white at the end. I was so wrong! It made a total difference. It is the next day and this mayo is smooth and creamy and delicious! Thank you!👏🏼👏🏼👏🏼

      @@jodizaffiri8300I can taste the butter, but as alternative mayo’s go, I really like this one. I have tried making olive oil Mayo, avocado oil Mayo, etc & taste the oil so strongly that I won’t even make them anymore. I like this one and I have made the ranch dressing/dip as well & took it to a gathering-everyone raves about how good it was so I told them how it was made (after all the tasting and eating)!

    I made this recipe last night & it worked perfectly! I used 1 tesp ACV & 1 tesp horseradish mustard & a pinch of salt. I don't taste the horseradish in the mustard but I'm sure it's adding to the flavor. Walmart sells their brand (Great Value) of horseradish mustard & its a great change of pace from yellow or spicey brown. It was thin after adding the egg white but I trusted the process. After cooling in the fridge a while, it's got those bubbles on top, just like you said & it's wonderfully thick & creamy. Perfect! I can finally say goodbye to Hellmann's & their nasty oils. This recipe is so much better!! I love it! ❤❤ Thank you so much Chris for this recipe. Your the best!! 😊

    Just made the butter in my new 5c KitchenAid stand mixer with whipping attachment. Yolks whipped up quickly with mustard, salt, vinegar, . Poured the melted butter through little hole on cover which was great to keeping impatient me from dumping it in. Removed the cover to put egg whites in all at once(too thick to drip through hole). Whipped up quickly. Love it! Will be making my own mayo all the time. Thank you again!

    Thank you so much for the recipes! Congrats on your Carnivore journey. I lost 170# and remember the thrill of getting under 300 pounds. Enjoy the journey! I have since moved to more of a Ketovore diet due to some heart issues related to sleep apnea and a lifetime of being a 'big guy'. Take it from me, the sooner in life one corrects the weight and metabolic issues the better! I thought I dodged a bullet, but I started too late to get off without consequences. Like that broken leg from 20 years ago that hurts when it rains now, the cumulative damage of metabolic disease impacts us forever! Keep up the good work!

      I saw this video for extending the shelf life of mayo. I was wondering if it is only the pickling juice from something that is actively fermenting or if pickle juice would work. I also found her technique interesting and time saving for sure.

    What a fantastic find!!! Such an easy tweak to do! I think the only change I will do is that I love Maria Emmerich’s idea of using pickle juice, in place of apple cider vinegar. So glad to find your channel! 😊🥩🥓🍗🥚

      I have not but I’m sure you could and get a great mayo with a little bit of a pickle flavor. I would think dill would be better than most other kinds personally. Might be a good start towards a tartar sauce for the ketovore and keto folks too! 😊

      @@MsTruthSeekr1 Yes, I actually have a jug of just Mt Olive pickle juice from Amazon, but I also have just siphoned a couple of teaspoons out of a normal jar of dill pickles. It doesn’t make the mayo taste like pickles. It just gives it a similar kick to the apple cider vinegar, but also prolongs the shelf life of the mayo. 😊 I have been making this spreadable mayo every week since finding Chris’ recipe! Absolutely love it! ❤🥓🍗🥚🦐🧈

    Can't wait to try this! I have been Keto for 6 years now and lost 89 lbs and at goal for about 4 years. I am trying Carnivore for my digestive issues and trying to move away from the bad oils and other things that could be contributing to those. Congrats on going below 300!       I’m not for sure how it compares, but my guess is it’s probably less than idea just because most plant oils like that seem to be. I know for me it would probably mess with me as even things like olive and coconut (which are the accepted best ones) bother me some.

    Awesome milestone there, Chris, kicking those 300s to the curb!! I feel truly proud for you. It's not easy rising above the indoctrinated mindset that fat is the killer in order to transition to carnivore. It feels amazingly liberating when we know we've finally found the right path to metabolic healing and health.     I was watching Homesteading Family on RUclips and she said the secret ingredient to make this homemade mayo last in the fridge like regular mayo is a live culture such as brine from something that has been fermented. I used brine from sauerkraut in my keto mayo. She also said to leave it out for 6-10 hours on the counter with a lid on it at room temperature to allow the live cultures to take hold and then place in the fridge. I also used the whole egg in my keto mayo and it was great! I'll have to try butter mayo now!

      I tried this with brine from my fermented garlic and then left it on the counter about 8 hours. This was the best mayonnaise i have ever tasted. Will never use the commercial version again.

    Love this idea - timing the adding the of egg white seems to be the trick; would not have thought of that. Thanks!
    Also - quick idea I discovered: I add half butter and half bacon grease for great variation. It is “bacon butter mayo!” Try it. Good on absolutely EVERYthing. (So cheap to make either version!!!)

    I made this and it turned out great in spite of my mistakes! (I forgot to take the melted butter temperature until I had already poured part of it in. It was 175° but it still amazingly worked! It was really runny but it looked exactly like what you whipped up on the video, so I trusted the process.) I absolutely love that this uses the whole egg and that it's so fast & easy to whip up with a handblender. I want to try this again but with half butter and half bacon grease. It turns out so wonderfully soft and creamy after it's been refrigerated. No more stiff, unspreadable mayo! You deserve an award for making the Carnivore world happy!
    Is it okay if I add an extra egg (without doubling the recipe)? I love eggy mayo but I wasn't sure if this would throw the recipe off. I was wondering if you ever experimented with this.

      You know I haven’t tried messing with the ratio any more than this. I would guess you could use two egg yolks instead of one and end up with a slightly softer mayo. If you use another white my instinct is that it will be almost too soft and runny, but admittedly I don’t know as I haven’t tried. If you try it let me know how it turns out as I’m quite curious. 😊

      @@ChrisCookingNashville Sure thing! I just made a big plateful of Deviled eggs with this mayo. Best I've ever tasted! Half are bacon & cheese, the other half have chopped pickle. Soooo happy I can have deviled eggs again!
      I have a pint jar of half butter/half bacon grease mayo setting up in my fridge. I can already tell it's going to set up perfectly. I'm going to make a chicken salad with it. I'm so thrilled to be able to use up bacon fat and egg whites in a single recipe! Hoping I can figure out a Mock Chick-fil-A sauce with this for my family members to have with their carnivore chicken nuggets. I love how easy & versatile this recipe is! Thanks so much! 🏆

      Yes!!!! I love deviled eggs with this and they’re totally guilt free and seed oil free which makes me feel so much better about them. I’m so glad you’re enjoying it.
      Yes I wanted to make sire this recipe was flexible so I tested it a lot to make sure it was going to so what I thought it was, and now it’s a staple for us for so many things. I make a “carnivore with some light herbs and spices” ranch dressing with this that I literally have to make once a week for my wife to have for veggies she takes to work (she’s keto), and I use it as a base for so many different sauces, including my Buffalo sauce for wings and my blue cheese dressing for dipping them. So good. I’m so glad you’re enjoying it. Makes me happy that I can help people as that’s why I do this. 😊😊😊

    Yes ur right about the seed oils!! I was looking for can sardines and i find all kinds with oil and most were seed oils or oilve oil and seed oil mixedin it! I could not find any with just water..

    Happy to see you raising awareness on the down side of seed oils. Avoiding them as much as possible is healthier for us. I would also like to see you avoid storing food in plastics. Even the BPA free plastics leach particles into our environment and food. Read up on this topic. Avoid as much as possible. Go all glass for a healthier you and a healthier world.

    Hola!! Another person from Anitas channel and really loving your vids. It makes a ton of SENSE to use the whole egg as that is generally what is used in commercial mayo. (many of them go to great lengths to say "made from whole eggs") They may not do it in the same order you do, but the whole egg is totally intuitive. Made this today and yup......I am a total convert. Thanks!!!

    I can’t wait to make this after I’m finished with the Chosen avocado mayo from Costco. Pro tip: put the ACV into the blender container first, then crack the egg and put the white where the vinegar was. One less item to clean.

    Congratulations on the milestone! I have been making mayo with a stick blender and a mason jar for years- Already in the container, just add lid! Of course, not with butter, but I do use a whole egg, right from the beginning. And avocado oil or olive oil, as I am doing Keto. A recipe I found online many years ago, all of the ingredients go in at the beginning. I will have to do some experimenting now! I am slowing converting to Carnivore, as I find I lose more when I eat less veggies! Thanks for sharing your recipes! I am binge watching your old videos when I have time.

      Thank you so much for watching! I will say with the butter Mayo if you make it, I have not had success putting the whole egg in. Making mayo with the yolk and hot butter and then adding the white separate is the only thing that’s worked for me. 👍🏼

I have tried butter mayo before and it never came out right or tasted right, but I used only 1/2 tsp ACV and 1 tsp horseradish mustard and a pinch of salt ..it's still in the fridge solidifying but even if it turns out rock hard, it's a win for me! Oh and having the mayo more liquid makes for so much easier cleanup of the stick blender lol

    I tried butter mayo, left it out to soften up, then left it out too long, tossed it and never made again. This is a game changer. I love mayo and now I can slather it on my burger (with chaffle buns), throw it in my tuna. Can't wait to try.

    Carnivore Spreadable Butter Mayo
    By Chris Cooking Nashville
    Ingredients :
    1 stick of Butter
    1 tsp Dijon Mustard (optional)
    1 Egg (separated)
    1-2 tsp vinager (optional)
    Redman's real salt 1 pinch plus more to taste
    Equipment :
    Stick blender (or any mixer, blender or even a whisk if that's all you have)
    Tall container
    Container to melt butter
    Container to separate eggs
    Container to store mayo in refrigerator
    Melt butter (will be faomy about 140 degrees)
    Next:
    Separate eggs and place yolk in tall container (keep.egg white)
    Add vinager (if using)
    Add Dijon Mustard
    Add pinch of salt
    Blend those ingredients. Now take melted butter and drizzle it slowly as you blend well. Start with a small amount and incorporate well. Repeat until all butter has been incorporated. Go slowly so your mayo does not split. If it does you can add another yolk.
    Once emulsification has stabilized, add egg white to container. Blend about 10 seconds on low then on high for about another 10 seconds or until it is fully incorporated. Mixture will be runny until it is chilled.
    Store in refrigerator.

    Yes, I found that this works for me years ago! I got very tired for whatever the reason my end product mayo was too runny. Once I added butter to my diet in a big way, I saw generally it can be melted then it semi hardens back up once refrigerated. This recipe will be embraced by many.
    A great useful tasty product for all Keto and Carnivore people! 😋 🎉

      Hi Wendy! That’s fantastic! You can also do this is a regular blender, with a high speed hand mixer whist, stand mixer on high, or some REALLY good arm muscle. Just gotta get they nice thick mayo by adding the butter slowly while it’s still about 145 degrees, and then the rest is easy. Congrats on day 14! That’s amazing! Thanks for being here. 😊

    I’ve been cracking my eggs into a berry colander over a bowl and discarding the wet part of the egg whites, then doing whatever with the eggs… it takes a lot of the watery-ness out of the eggs-which might be a nice hack for this mayo… can’t wait to try this recipe. Thanks for the video

      Interesting. The watery part I think is why this works because it needs the extra liquid bonded to protein so I don’t know what would happen by removing it. Would be interesting to see though.

    Just got done making this in a ninja blender, seems like it turned out good, had to 4x the recipe to get the yolks blended, and I added lactoferment juice at the end so it lasts longer and gets some good benefits, gotta let it sit on the counter for 8 hours before the fridge, then ill give it another blending to fluff it up. Hope it turns out well, taste great so far! Thank you!

Lasted a good amount of time in the fridge and I'm sure it would have remained good for much longer. Lactofermented is the only way I have made it, so not sure how it tastes compared to without fermenting it.

      If this is made right it’s spreadable. If someone says my recipe isn’t then they didn’t follow my instructions as I make this every week and have not had a single failure. Usually it’s because they melt the butter and let it cool rather than follow my instructions to keep it at least about 145 degrees. Or they use a different recipe that doesn’t work like this one. I have a feeling they’re missing other steps too as many people don’t always follow instructions very well. Haha

    Very interesting. I usually make my mayonnaise with a whole egg, salt, vinegar, avocado oil, and mustard. Whip it up with my stick blender, two minutes.
    This does look amazing though with the butter. I’ll need to make this.
