      @@helenalovelock1030 Oh no, I dread this, haha. We try to scoop and wipe out as much as possible and pre-wash with some soapy water we try to toss outside first. Probably time for a drain cleaner soon. 😑

      In fact, I have noticed that since I switched to saturated fat from seed oils, there's no more gummy build up on the kitchen furniture. Amazing how toxic seed oils must be.

    Came out to the hunting lodge without the immersion blender so I just made this up with a 1950s hand crank non-electric blender I had stored here!

    When using the immersion blender method, the egg/mustard/acid mixture has to be deep enough to reach the blades of the blender, and the jar must be narrow enough so that there is very little clearance around the blender frame. That way, the fat is drawn gradually into the egg mixture by the vortex, just as if you were dribbling it in slowly.

    It's fantastic! It's BETTER than mayo!
    I’ve never “loved” mayo. When you fed her a spoonful, I gagged a bit. No doubt in some things there simply is NO substitute. This is a real game changer! Deviled eggs are back, baby. Can't wait to try this on everything! Thank you so much!

    Thank you! I've struggled for years to find a palatable homemade mayonnaise due to the overpowering oil flavors. This we can do! It gets a thumbs up from majority of my household. Also, I have some pics and videos I can send you somehow if you'd like. I melted my 4 sticks of butter in a pot on the stove on low until about half melted and mostly softened big chunks then used the immersion blender directly in the butter and it whipped up like thin mayo! I then spooned and mixed that in gradually still with the immersion blender and it took a lot less time to mix, didn't separate, and is nice and thick too!! :) 😀

    I make your butter mayo and after the mayo comes together I throw the 2 egg whites in and whip it some more. Stays spreadable out of the frig.

    If you want to take it to the next level brown your butter first! super yummy... And to the next, next label, toast some garlic in your butter first! not sure you can do that BBBE. The last batch of mayo I made was a combination of butter with toasted garlic, bacon grease and avocado oil! I use whole eggs to so I don't have to separate whites/yolks :)

      The first 2 batches were with browned butter and ghee. We wanted to make it simple for people.

      @@2krazyketos Good point!... I think you would like trading 1/4 or 1/8 cup of your butter for bacon grease! That way you get some added flavor without the whole thing being only bacon grease

      it sounds like i need your recipe it sounds amazing although i would leave out the avocado oil only because im not a fan of the taste. Is that important to prevent it from getting hard in the fridge or do these all get hard anyway? i have never made something like this

    I added everything into the quart jar and it worked fine, but I used 2 tbs ACV, 1 whole egg and 1 tsp Dijon.

    Lucky to have a Kitchen Aid to blend it, I like the 2 tablespoons of ACV and added some good pickle juice giving it great taste and consistency. My second time making it, It is better with duck yolks if you have them, I didn’t this time, I already turned them into egg salad with butter mayo. Yummy

    I can see adding tarragon and a variety of herbs to this to make differnt flavors that would pair with food ... sage for pork, dill for fish and eggs, etc. I'll be trying this soon!

    I made this using my handheld mixer. I don't know what you call them in the US, but it has two blades like a rotary egg beater. Came together first time, no problem. I live alone so made half a recipe in a small mixing bowl that's only slightly bigger around than the mixer blades. Great recipe. Thank you, Joe.

      Thank you for mentioning this, as I was wondering. I gave away my KitchenAid immersion blender because I just did not use it much. Of course, now I need it- but good to know it can be done w/a standard hand mixer. Yes, the electric kind w/2 beaters are called the same here too =) ~Samantha in AZ/USA

    I just made a batch of the butter mayonnaise. Delicious! My hubby, who is a junkovore…to my ketovore lol, was very confused by the concept and finally said, oh, it is a cold hollandaise sauce! Thank you for the tutorial!

    Can you believe it took me THIS LONG to work up the courage to try making it? My failures at stick blender mayo left me traumatized so I decided to take Joe's advice and make it in the bowl with the plunger whisk. Wow! What a game changer. It came out a gorgeous golden color, creamy rich and velvety smooth. Licking the mixing bowl clean as I type this. 😋

      Meee tooo! Used s very expensive bottle of top shelf rustico olive oil on my first ever attempt at making mayo. EEEW! GROSS TOTALLY CHOKEWORTHY. HARSH AS HECK. Once again I gave it a try...quasi palatable avocado mayo this time...runny though. Most diffently NOT a success

    Fantastic mayo! I kicked it up a notch and made it with half melted tallow, half butter and the yorks, mustard and salt. Yummo!!! Going to make chicken salad with it and pork rinds to dip into it. Almost a month ketovore and loving it!!! Thank you for posting this.

    Thank you for this! I can only eat tuna with mayo. It's been driving me crazy because I know tuna is good for you but I can't eat it alone. This worked wonders! Used this new mayo with a dill pickle tuna recipe and perfection! I can eat tuna again!

    After my first failed attempt, seeing curdled egg, I figured OK my butter was to hot. I tried again making sure the butter was really cooled. Another fail! I could not figure out what I was doing wrong until I realized the OLD immersion blender I had was generating heat somehow. So I ran out and treated myself to a new KitchenAid that was on sale at Kohl's. 3rd attempt was a winner! The ingredients emulsified right away and no over heating! This mayo is delicious! I am never going back to store bought, ever! Thank you for this recipe and video. Oh and Rachel, I love that jacket!

    I have found just softening the butter instead of melting all the way, that I got better results.

      Remember there is water in butter and it separats... that is removed when they make ghee...

      I think the warm butter, is to warm up the egg yolk so it’s not totally raw.

    4 egg yolks and a hand mixer,,, believe me,, faster and softer :) A bit of garlic for a garlic mayo,, Yummy! Thanks for sharing!! Love seeing variations. I need condiments too!!

    When you mix it with a bit of keto friendly oil (avocado / olive / coconut) then it firms up in the fridge but doesn't solidify anymore. so it is always spreadable straight out of the fridge :-)

    You can also use a food processor to make larger batches, slowly adding your butter as you did with the immersion blender. The better the ingredients, the better the final product. Grass-fed butter and farm fresh pasture raised eggs take it to a new level.

    I make Butter Mayo all the time with both lemon and ACV. Chris Cooking Nashville's version separating the egg whites and adding white's at the end keeps it soft in the fridge. Amazing 👏 🤩

    If you use a white wine vinegar, white wine, shallots and tarragon reduction to replace the vinegar and half the lemon juice, it's phenomenal and almost like bearnaise.
    I have made it like this and I only added 1/8 teaspoon raw honey and a splash of a probiotic source, I used a little extra virgin olive oil to adjust the consistency a little bit, and it was a dreamy sauce, I'm gonna have it as a brunch on my steak strips today.

      When I use store bought mayo and add it to "smashed eggs" I always add a bit of white vinegar because I like the sharp tangy taste.

    I grew up in Europe and as a child I made Mayo every Sunday for the potato salad. At first I had to use a simple wire wisk, the technology advanced to an electric handmixer. I still use the handmixer, no special gadgets needed

    You should try that Mayo in egg salad and eat it on an egg life wrap fried in bacon grease! Or just put some crumbled bacon in your egg salad.

    I used the remainder of my rotisserie chicken and made a chicken salad with a tiny bit of celery seed and salt then added bacon bits. Yummy

    I love this recipe and will try today! I need mayonnaise in my life and have been dreaming of egg salad without the avocado flavor. I think I'll try it with ghee because I'm really triggered by dairy and don't trust the milk solids in butter :)

    It is basically a thick Hollandaise sauce. No commercial mayo seed oils. Excellent.

    I made it! So easy!! I used a small personal smoothie maker/blender I use for my keto chow shakes. I pulsed it. It turned out so good!!!! I can’t wait to eat some later 🤤 It tastes much better than avocado mayo in my opinion.

    Congrats you discovered hollandaise sauce! It is the base for those fancy steakhouses that serve bearnaise sauce for their steaks. Such an amazing condiment.

    How do you find this mayo behaves when put on something hot? I ask because I made bacon grease mayo and it would re-liquify (and get clear) if I put it on a burger.

      It behaves the same way, it almost instantly melts when putting it on a burger or any warm foods.

    This would be really good making devilled eggs or my devilled egg dip. looking forward to making this! :) Solves my seed oil issues with comdiments! plus what if i used butter AND bacon grease? worth trying.

    Wow! Just made your mayo recipe. Since the dijon mustard had sugar I used classic yellow mustard. Delish! Not sure how to add the picture.

    Well guys, in Europe we use to call this a "sauce hollandaise".., perhaps a little bit heavy on the butter side in your case

    I would add to use unsalted butter. That way you can regulate the salt level better. Especially if you want to add bacon fat too.
    Also if you despise mustard like I do you can totally skip the mustard.
    Also have to say that I use the regular stick blender mayo technique that I used for making mayo with oil. All in the jar at once.

    I'm watching this January 13, 2023 and butter and eggs are really expensive now. I had to chuckle when you were saying everything was so cheap... Anyway, I tried this and I love it. I used to eat Helman's Mayo but when I saw the type of oils they used I stopped.

    I coddle the eggs first. Submerge in boiling water for one minute, then into ice water for 3 minutes. I use fresh eggs and use the date on the egg carton as the expiration for the mayo, usually three weeks out.
