Keto Bacon Mayo | How to make Bacon Mayonnaise for Keto or Carnivore at home!

  • Keto Bacon Mayo is so fast and easy to make! It's economical and you control what ingredients to use so you can make this completely Carnivore or Keto compliant.
    Ingredients: 2 egg yolks, 1/2 c bacon grease. Anything else is optional such as salt, pepper, mustard, ACV or lemon juice.
    One way to make it more spreadable when cold from the fridge is to sub out some of the bacon grease for MCT oil. Not 100% carnivore but makes it easier to use.

    Hubby's on Carnivore to deal with an autoimmune disease and just found out he can't have any dairy or mustard... but bacon and egg yolks are good so THANK YOU for this recipe. I'll be mixing some up this week.

      @@KetogenicWoman I go to my local meat market and get the whole piece which runs between 130-150 but you end up with around 15 or more steaks so it averages around 8-9 for a huge 1 1/2 steaks. I have a food sealer so I have steak for many meals it saves me $ in the long run.

    I strain my bacon grease into a small mason jar that has a coffee filter rubber band with a small slope works great. Change filter each time. Store there too

    Just did this and the first thing I did was to check the opening of the jar. Good lesson. Most fruit jars are to small but there is large mouth fruit jars around.

    I've been meaning to try this. I don't understand why mayo companies don't jump on bacon mayo (clean!) bandwagon. I can see it being something keto and non keto-ers would be interested in and I would think it could be done and not cost an arm and a leg!

      AGREE. It is sooo easy to make you will wonder why you didn't do it sooner. Use fresh eggs so it lasts longer. Consider the date on the egg carton as your use by (or close to) date.

    I make “regular” mayo and would love to try this. Can’t imagine having enough bacon fat lol. . . But will for sure remember this recipe. Tip: I love to use mustard powder instead of mustard. I get it in a big container which makes it super thrifty. Can’t believe the great flavor punch I can add to foods with a one ingredient powder. Thanks for sharing!       So it was good with just the yokes and the bacon grease?! :) I want to try it but my mind can't compute. Just turned carnivore on 6/11. :) I DO like to dip my burger patties in mustard (only 1 teaspoon for 2 patties), but I'd love some mayo for roast beef. :) And I have mustard powder too! :) Glad I kept the mustard & spices! Found out at the last minute, that some can be re-introduced. :) They are SO expensive it was the only thing I didn't get rid of! :)

    For those of you with eye issues, getting rid of seed oils will make a difference. Improved 5 lines on the eye chart. If you are already keto/carnivore it's not a hard jump to eliminate ALL seed oils. even those in prepared sauces.
    I started making bacon on my little George Foreman Grill (I know, I stopped using it so much when I wanted to eat the fat). The little catch container for the grease part is great because the bacon grease is smooth and doesn't burn or have pieces of bacon--unless you want pieces of bacon. 5 folded pieces of bacon fit on the small one. Perfect for breakfast.

    For starters, I would have a bigger jar because by the time you get all your ingredients in and you put that immersion blender in there, it’s going everywhere cause you didn’t leave much space for error

    I'm so glad you posted this today, as I've been thinking about starting to make my own for some time now. We've always used Hellman's as well- "Best Foods", depending on which part of the states you're in- they are one & the same. Anyhow, bacon fat is what we seem to have the most of, & I really do think it would be better for us to get the last of the bad oils out of our diet. Same goes with our favorite coffee creamer- which I'm still working on a replacement for- neither are very 'clean' at all. We've been working so hard to get inflammatory foods out, I imagine it can only help.
    The coffee creamer is definitely the hardest, oh my word I feel like I've tried everything! Nothing comes close yet- even making it myself w/heavy cream & hazelnut extract, etc. Here we thought we were doing so good all these years, buying the sugar free CoffeeMate~ until I really studied that ingredients label~ errgghh.

      It's defnitely been a process and an evolution for me. I used to consume things I wouldn't now and it's important for people to remember where they came from and all the changes they've made and be proud of that. One day you will make that decision on the creamer too! I NEVER thought I would enjoy black coffee. And now I even rarely drink it. I gave it up completely in February, got the dependancy out of my system and have a cup of black on a lazy weekend morning and that's about it! One step, one thing at a time!

      You are so welcome! One tip would be to add 1-2 tbsp water to it near the end of mixing. I have found this makes it more spreadable out of the fridge!

    I just saw a recipe for mayo on serious keto. He used a hack to make it last longer by mixing yokes, water, acid and the like in a bowl, then cooking it in microwave to 165ish degrees, stirring every ten seconds. Not to cook them. He then stained for any small bits. I prefer your ingredients but thought i may use the egg hack when ever i get a proper kitch and try all these great recipes of yours. Thanks all you do!

      It's a hack to make it last longer in the fridge, like a pasteurization of sorts.

      I only make at the most a quart at a time, and that's when I'm making chicken salad so I know I'm going to use the bulk of it right away. I rarely have more than a pint, so I go through that within a week or two. Also keep in mind, the expiration date is whatever the date is for the eggs you're using.

      Look up how to pasteurize your eggs if you are concerned about raw egg. It's super simple and I think it is hard to get a microwave to cook evenly. Heat your water. Eggs at room temp. (If you are doing the whole doz it will change the temp, but 2 eggs won't) Put them in the water for the required amount of time for the water heat. Take then out with a slotted spoon. Make the mayo.

      @@laurahudson8210 I just buy the freshest eggs, and even if I have half dozen of other eggs, I use the freshest for the mayo and put the egg date on the jar. I've eaten it for a week after the date tho...

    Thank you so much for this video! I started carnivore 3 weeks ago after 2 years on Keto from 2 years of just counting calories. I lost 80 lbs counting calories and 10 on keto. I needed to change to see if I can lose the last stubborn 20 lbs and so far I am down 5” off my body and 4lbs on carnivore!     Haven't worried about raw eggs for 50 years, whether store bought, homegrown, or farm purchased. Never had a problem. YMMV.

      I don't either, I don't generally pasteurize, but have done so occasionally for some recipes It is SUPER EASY to pasteurize. All you need is a pan of hot water, a thermometer and a timer, especially if you are only doing one or two eggs. If you are doing a dozen it is a bit harder because cold eggs cool the water and change the temp. I did pasteurize when I used my mayo this past summer for a BBQ because there were children who might be eating it and I thought they may be more susceptible to salmonella--just to be safe.

    Donall ingredients besides the greese first.
    Then while younare blending, slowly add the grease little at a time
    Also make sure the egg yolk is room temp

That container came from Amazon Canada but if you are in the US I provided a link to something similar there, they didn't seem to have the exact one. I don't have an official cookbook, just some ebooks on my website on the Shop page. They contain recipes that are keto from before I started playing around with carnivore. Maybe some day I will have an actual book on Amazon, who knows!

    Looks great! I can’t wait to try! I do have a few questions. First, do you have any videos that show the mayo being used in or on something once it’s been refrigerated 🙂 I’m curious to see the consistency after it’s been refrigerated. Second about how long is the bacon mayo good in the fridge? And last is there a reason you use such expensive mustard? From what I’ve seen mustard is usually has pretty clean ingredients but maybe I’m missing something? Thank you for your wonderful videos!

      I try to use it up within 2 weeks. As to the mustard, I did Whole30 a few months ago and have a fridge full of condiments I bought for that. So just trying to use things up. You are correct, most mustard is pretty clean, the other condiments not so much!

    May I ask about your comment during the video about pepper? I gave up black pepper because it was causing me to have skin itchiness--took it out of my diet and the itching went away. Cayenne doesn't cause the same problem. But I never thought to try substituting white pepper for the black. Did you have a specific reason for your comment? I'm new to your channel and haven't had a chance to look through your other videos to see if I can find the answer. I'm very much enjoying the ones I have watched!

      Yes I do have a reason! I weaned myself off of 15 years of PPI meds for acid reflux/GERD about a year ago. But have been suffering with symptoms on and off. This is why I started to look at meat only, because I heard it can be healing. In March I did a 30 days of only beef, lamb and salt (there's a video on this grocery haul and meals where I show what I ate) and I had ZERO symptoms until one night I decided to make oxtails and put a lot of pepper on them and I suffered for 2 days. I found out that black pepper is very high in oxalates and white pepper is not. So I'm avoiding black pepper. Your comment about cayenne was interesting and I might try some to see how it affects me.       True carnivore eliminates all spices - the only seasoning should be salt.

      @@googleuser2226thanks for pointing this out for purists, however we all need to individualize to make diets work for us. If you can't stand the taste or it's bland and boring, most of us won't stick to it. If it works using spices then where's the harm? Each must make their own choices. : )

I'm wondering if that's why I have been having this hangover-type feeling? I will try switching to the white pepper to see if it makes a difference.

    Thanks Anita. I still use Hellmans about 2 or 3 times a month. I'm aware of the bad oils in it and that's why i use it sparingly. I can't stand the PK & Chosen Food avo mayo, it has a metal taste to me. I've made the butter mayo. I will try the bacon grease mayo.

      I don't really like the taste of Chosen either, although it keeps well if you use it to make Caesar Dressing--and the anchovies completely overpower the taste of any mayo.

    My mayonnaise has been hit or miss sometimes but when it’s when it’s good it’s really good but often times like it doesn’t come out thick enough I guess. This is the first time I have tried bacon fat and I will see how it turns out

      The only thing about this mayo is how hard it can get in the fridge. The last time I made it I added 1 tbsp MCT oil to is and then it was spreadable even when cold.

    I use the whole egg when i make it. Ive only used the olive oil so far but am saving bacon grease to try this. The mustard helps it congeal together better? What the word is I'm missing. I also use lemon juice and it helps with that overpowering oil taste...try it you may like it. ALSO PEOPLE if it doesn't coagulate together do not toss it out...the oil you use can get very expensive. Just add another egg and beat it again or put it in the fridge to let it chill and blend it again or both.

      Yeah, if you Google failed mayo, you will come up with some directions on how to save your failed mayo. Which basically is you start over with a fresh egg and your failed mayo is your oil. The mustard is important to help it emulsify. Any cheap clean mustard will do.

      Sadly it got hard but I still used it all up. If you want it to be spreadable from the fridge, I have found that adding 1 tbsp MCT oil to this makes it spreadable. But it's a tradeoff if you are carnivore. For me I'm more likely to use it if it's spreadable and it's so much cleaner than anything you can buy from the store. So I accept the tradeoff for myself.

    I’ve tried this, it IS better than all the other recipies I have found, I still miss that mayo taste.
    But I don’t want soy or canola oil, both are terrible for you. I’ll have to adjust my taste buds I guess✌️

      You could mix with olive oil if you are not fully carnivore. There are also butter recipes but I think they taste too much like butter on your sandwich to me.

    This recipe is very good. I do have to alter it a little, I can't use vinegar so I opted for lemon juice and mustard powder. Turned out great.     Normally, acid and yokes are zapped together, THEN the fat is added. Try it that way and see what you think!

    When I first saw the title of the video I did a double take....bacon grease....really ???? But just bought some Primal Kitchen avocado mayo this morning ($$$) and when I tasted it, did not care for it. Need to make my own, clearly.
    So I went running back to your videos to find the bacon mayo (and then I googled it to see if it was "a thing".....who knew?! ) Will have to try this. I trust your recommendations. Haven't steered me wrong yet. And "almost free" sure beats $$$.

      Hope you enjoy! I don't really like the avocado mayos either. The only store bought one that I like is the Chosen Foods Keto mayo but very pricy! So I do both that and the homemade one, so there is always a mayo in the fridge!

      Not a fan of Primal Kitchen Avoc Mayo so got some of the Chosen Foods. Better but not great....so I diluted it 2/3 to 1/3 bacon grease....BINGO! Much better, much cheaper and something I can do in a pinch.

      I prefer to use it up within a week. So make a half recipe instead of the whole recipe. These days I use 3 yolks to 1/2 cup bacon grease (or any other fat), and that keeps the amount smaller as well as it is spreadable from the fridge. ketogenicwoman.com/how-to-make-carnivore-mayonnaise/

      It's a really good point because I only use it up to 2 weeks. I try to plan it out when I know I'll be needing mayo for example in some recipes or making a dip.

      On a previous RUclips video, I don’t remember which one, they said to go by the freshness date on your carton of eggs.
      However long past that date that you feel comfortable is good.

      @@tspears53 freshen date on eggs is in the shell... not out. Out they start oxidizing.
      I 'pasturize' my eggs by slow cooking them to 165°F for mayo, ice cream etc... I do a giant batch at once for everything & makes it convenient.
      I make everything in the blender & have never found a clump of the nearly cooked eggs in any product.
      My mayo lasts 3-4 wks... IF it lasts that long 🤓

      I would LOVE to find some beef bacon around here! Even though I have not tried it myself, I'm going to say YES because mayo can be made with any fat. The taste will of course be different and you can season accordingly. Would love to know how it turns out for you!

      The printed version is the latest, this video is old! The extra egg yolk makes it more spreadable from the fridge.

      I'm assuming you mean on the counter? I normally clean out my grease container once a month and put it into a jar in the fridge. Apparently in the fridge it can last a long time, like 6 months. I tend to use it up faster than that though.

    I do get annoyed when homechefs on RUclips do everything perfect as if they are Martha Stewart or Rachel Ray. When you are doing everything yourself (maybe even the camera work as well) you are not going to get everything right.

      It tastes like bacon first, mayo second! The only thing is that I didn't like how hard it gets in the fridge so now I add 1 tbsp MCT oil and that keeps it spreadable from the fridge.

    I just subscribed under this youtube name also. I also have althea mcnabb. I made this one hoping it would help me get back on the keto way of life and head towards carnivore.       I would say 10 days max. I usually make 1/2 recipe these days. BTW, tomorrow I have a video going live where I make a similar mayo that is 1/2 bacon fat and 1/2 butter. It's my favorite so far!
