    I knew the standard American lifestyle was not for me and I knew that the standard American diet was not for me back when I was in my thirties.
    So I have been living the good life ever since.

    Hello, as Korean, been eating overdosed rice and flour all my life and the family history of stroke. At age 70+, my lab results indicated I’m just about heading for the same fate and for years I been striving for healthier lifestyle changes and it’s not an easy. One thing I added to my diet is black soy beans which you can find in any Korean grocery store. I cooked a large pot of the beans and freeze in a qt size bags. Black soy beans are not same as yellow soy beans and has less sugar, high protein and antioxidants.

    I’ve been eating a no added salt diet for 2.5 years and people think I’m crazy. Every time I get salted (usually from restaurant food) just like you mentioned I gain 4 pounds of fluid and it takes about 3 days to recover! It’s definitely not worth ruining how I feel for days afterward. I’m so glad you are talking about this because I think it’s a bigger issue than recognized and is hiding in plain sight.

Learn from some very good Gurus and help others because yoga is the final remedy for many ailments especially for the patients who have had some kind of surgery (for example knee surgery). I have friends who have had knee surgeries a few times but finally are able to walk and even jog everyday by doing yoga.

He does research on Foods and Cancer, very interesting as I was a counselor supporting cancer patients, leading support groups and stress management groups.     I def agree on salt. When I was being more health conscious with my diet, I noticed I ate reasonable portions and wasn't hungry. I cheated a little is past month and went back to eating way more takeout. I really need the will power to reset and go back to my low sodium meals.

    @28:22 - I find that dry frying oyster mushrooms produces a very pleasant end product. I usually tear them in to shredded strips and dry fry them. Sprinkle seasoning on afterwards (doesn’t necessarily need salt since the mushroomy flavour is intense).

    1:50 Regarding your question about the knives, as far as I'm aware, when a knife has those divots it's typically referred to as serrated and is meant to be used for things like pumpkins, bread, and other baked goods. The other knife-a flat edge-should be used for more delicate jobs such as cutting tomatoes, garlic, onions, etc. Also, when cutting onions the sharper the blade you have the lower the chance of your eyes tearing up due to fewer things getting ruptured and thus less chemical irritant being released.

I think when I left that comment I was only listening to the video during a walk so when he said something about divots in the knife I automatically assumed he was comparing a serrated against flat edge.     Not sure if someone mentioned this already, but I put any squash in the microwave for a minute or three before cutting (careful, it will be hot, use a pot holder or something to protect your hands).     Squash....acorn squash, you can save the seeds and plant them in the spring
    Cut in half, of course clean out the seeds
    Bake but if you want a real treat in each half put in a bit of butter and brown sugar or maple syrup
    I would suggest a cleaver for cutting

    Goobie i know youre a very educated man, but as someone who has many years in the diet and biochemistry/ physiology space, i highly recommend you learn about how sugar/ carbs in high amounts impacts kidney function/cellular fluid balance and how it affects the body vs how sodium does those things. Pleas do a deep dive into this, i think you'll be a little surprised at the results you find, especially looking at lowering sodium by large amounts because "it lowers blood pressure" impacts the bodies impact on insulin resistance.

    Hi Goobie.
    For a retired Neurosurgeon, your knife skills in the kitchen leave much to be desired. Whether chopping or slicing/cutting, the main trick is the the blade must be absolutely sharp. That's why a new scalpel is always used for surgery. In the kitchen, you need to sharpen those blades regularly.
    For acorn squash, the initial cut, to halve the squash should be done with a cleaver. It has the weight and if the blade is sharp, will cut through easily. No need to hammer with your hand. If you are not successful chopping through, you can try using a rubber mallet on the back of the cleaver.
    At this point, I wouldn't recommend quartering the squash. Rather, use a spoon to remove the seeds and inner fibrous material. (You can save and roast the seeds if you like. They make a good and nutritious snack. Like I mentioned last t time, place the squash halves, face down on a microwaveable plate and pre-cook them in your microwave. Maybe 5 to 7 minutes. It's sort of like cooking a potato. You don't lose anything nutritionally, and the meat of the squash becomes soft enough to easily remove from the husk.
    If you are going to quarter the squash, like you did in this video, you always want the food that you are slicing as stable as possible for the best and safest cut. That means turning the halved squash open side down onto your cutting board. Again, use a cleaver to chop through the top outer shell.

    1:01:08 I personally have found I can gain about 10 lb in 2 days by eating a standard American diet. I found that out about 2 years ago. also when I'm 10 lb heavier I came to the determination that's inflammation. I also wear bracelets on both wrists and that helps me to tell my body's inflammation level. when inflamed I can only do about half the push-ups compared to healthy normal. also when I am not inflamed my muscles feel fast and light.

    I water fasted for 22 days at the True North Health Centre in Santa Rosa this year. It was amazing! I no longer need high blood pressure meds and felt so healthy coming off the fast. I'm keen to go back to True North just to eat from their phenomenal SOS free buffet. No Sugar, Oil or Salt.

      @@fruitloopbabe91 it was about $200 a day which included my own private room, 2 nurse visits a day to check vitals, 2 doctor visits a day, full 24 hour buffet 7 days a week. I did juice fasting, water fasting and reseeding over a period of 5 weeks. There was also free yoga. Tail Kwon Do and phenomenal health lectures 2 or 3 times a day. You get weekly blood and urine tests which cost extra but are minimal. I plan to to back. There were really fit people there just for the health Reset and boost. There were people with health issues that cleared with the protocol. The chefs gave lectures and cooking classes too. Life changing experience.

    Goobie, I think good topic for a Scary Bedtime Story would be how salt is at the root of our Taker way of life. Even today when we don’t technically need much to preserve our foods we we continue eating it way beyond our needs because we (as a society) are addicted to highly processed industrial foods. I’ve seen the comparisons of Neolithic and Paleolithic skeletons and people blame grains for our decline in health with farming but I suspect salt (amongst other things) played a role. Even our wage slavery (salary) was paid in salt to Roman soldiers. It’s fascinating and disturbing at the same time. I think we are addicted and caught in a destructive pattern and salt is a big part of it all.

    Goobie, I will appreciate your thoughts on my situation, I respect all animals. I now have mice in my house, I have bought all of the herbals, essential oils, natural products to force them outside. But, no, they remain and multiply. I cannot have these little mice running around my house. I tried mouse traps, they are smart, ate all peanut butter and nuts without causing the release of the part that stops them. I am filling all spaces to avoid them from entering the house, and bought more to add copper mesh. Im exhausted. I also bought glue traps. I must get them out or end them . I wish I didnt need to do this but my health is an issue as well. Thank you if you see this and respond. Oh, that guitar sound is amazing, it makes me happy and relieves the stress I have been feeling due to mice and the insomnia they cause me. Best Wishes to you, Doobie and your wife. Bless you all.

    Yes quinoa is good. Been having it for many years. Lately I tried half and half cup of organic millet and yellow moong lentils. Cook it like quinoa or rice. Very nice. I added slivers of young ginger a few cardamon pods a pinch of celtic salt and a teaspoon of buffalo ghee or clarfied butter..all optional. I too went to the gym today...strength training is impt and muscles know no age?? Once a week I have a trainer very young guy of 26 who says things like"u r stronger than u think"😂 and has me do bench step ups to to help lower body. The cat is emboldened by his tree house n despite his strange short legs and longish body scampers up the steps looks outside n now wants to explore the outside world which is not possible!     39:00 As far as protein goes, I keep in mind that animal agriculture is very polluting, especially when all the newly developed countries are demanding animal products. I think the establishment discourages animal protein for that reason, too. I took Biology I & II as well as Environmental Biology in my undergraduate studies.

    A quick tip if you want to avoid the difficulty of cutting a raw acorn squash. You can throw it in the oven at the roasting temperature for 10 minutes. Pull it out. Let it cool a little bit and then slice through with a lot more ease.
    I’ve prepared it in both ways (cutting raw and cutting after 10-15 mins of cooking before cutting) and I find the preheating squash much more safe when cutting through

    I support fasting and usually fast five to six days at a time, I hope to increase the duration of fasting as I have experienced the benefits over many years, I have watched many videos on autophagy and they always motivate me in prolonging the fast.

    1) That high sodium is inflammatory and causes autoimmunity is established science. It's just so recent that it haven't become mainstream yet.
    2) Civilization will not collapse - it will just continue to become more artificial and hence hamrful. Besides technological advancements and discoveries, we really aren't doing much constructive.

    TIP: When cutting raw squash, heat it in a bowl of water in the microwave until outside is softer (5min) ~ super easy to cut after that!

    I'm enjoying your videos. Put the knife point into the middle of the squash. Then bring the handle down to the counter. You will have cut half the squash. Turn it around to the other side and do the same. The pointed part of the knife goes in easier than the whole blade. I cut watermelons the same way. Keep up the good work.

    Hi Goobie!
    I want to express my appreciation and admiration for your courage and honesty to speak so openly about matters that are so personal and traumatic. I’m kind of living a similar situation as yours but I lack the courage and openness to speak about it not even with my parents and unfortunately I don’t have the support of a partner or a “Doobie” like you do.
    Your videos help me a lot emotionally but also provide a lot of useful info. in terms of health care which I apply as best as I can.
    I heard that you are considering oat milk as being very healthy which kind of arises some questions for me. It has been one year and a half since I changed the way I eat thanks to the methods of Jessie Inchauspé in her book Glucose revolution. As far as I know I never had glucose issues but I used to have digestive troubles, tiredness all the time and a high need to eat especially sugar which I tried to constantly control as I didn’t want to gain weight. So applying the methods in the book which aim at flattening the glucose curve or reducing the peaks of glucose not only solved my digestive issues but also brought me more energy and I don’t feel hungry as before. I even lost weight even if I eat more than ever.
    To come back to my question. From the info. I’ve got from the book of Jessie, oat is considered a cereal so high in carbohydrates ( the oat milk is even higher as it’s highly processed and there is a higher concentration of carbohydrates than in simple oat cereals) and it will cause a rapid increase of sugar in the blood and will lead to an increase of insuline so to peaks of glucose which can be harmful for the body and also for the weight regardless of weather you are diabetic or not. In her book better alternatives to oat milk is almond milk and even fat cow milk.
    I would like to know what is your opinion in this matter?

    Interesting. Thought of watching your old video about salt last night. But anyway, love quinoa myself. I heard that it is good to soak it in water first for some hours before you cook it. It actually does come out fluffier.

    I can listen to you for a long time, Goobie ❤️ Thanks for your videos, I agree with all your thoughts. I like salt, but I need to eat less and take care of my cholesterol, it's high even when I eat healthy foods, I weigh 45 kilos, I'm going to try acupuncture and try running a little. I don't use deodorant just milk of magnesia and coconut oil, after that I feel like I sweat more, it was a good decision

      If it is cool I run wearing a sauna sweat jacket or put it on as soon as I stop running it makes you sweat a lot more

    Your videos are very insightful and make me relax almost in an instant. Thank you for that. Maybe I should go to the sauna in winter more regularly again. The sweating might help me regulate the sodium more easily.
    On a sidenote, now I'm craving a mushroom dish. Very yummy😅

    The ratio is what is important. If you eat more sodium than usual, just take potassium. Potassium will drive out the sodium. Read the books by dr. Robert moore. From my experience, ive gotten benefits from taking potassium bicarbonate. For me, it seems that people develop a shortage of potassium. And this caused by too much sodium possibly?

    Hi Goobie! I found that I tend get hyponatremia from too much water. I also don’t get enough salt. For me personally raising my salt intake by 1-2 grams makes me feel much much better after a few days.

    I had good results on a 5 day fast that gave me some permanent benefits, then I had a bad experience where my inflammation and gut pain got worse. But I think part of it was overeating sea salt to restore electrolytes during bad experience.

    Goobie you should check out Derek Sarno’s channel, he is a kind, compassionate vegan chef and has a video of 5 basic things about butternut squash, or something like that. He puts them in whole. You would really enjoy his kind spirit. He has been living in the UK for 10 years but moving back to US to live in his van with his dog. His fiance was killed in a car crash years ago and he has dealt with much grief. it would be neat if you two could get together somehow.

    I have low sodium because of CKD. Never know how to cook...but I still go lower salt in my cooking.

    Could you touch upon antinutrients a bit more in another video? It get's a bit confusing to me in terms of what would be the best way to prepare/cook certain food. Also, should one discard the soak water (legumes, lentils, beans etc, not sure what's the exact differences between these terms)? I read you should soak and then discard this soak water. However, I also read that this results in loss of nutrients, tho not sure how significant. So not really sure what's the "best". Or could one not discard the soak water and just cook, would cooking destroy antinutrients ? When looking it up, it's not so clear, with some health benefits attributed to antinutrients and also some sources stating potential for gut issues or decreased absorption of some nutrients. Thanks

      Hi I’ve read that some beans have some chemicals that aren’t good for us and benefit from soaking and discarding the soak water then cooking in a new batch of water. There are other chemicals like oxalates that can cause problems in high concentrations like from lots of spinach or rhubarb or beet greens. But other than that, I wouldn’t worry too much about much about antinutrients. I think a much bigger problem is too much salt oil and sugar ❤️✌️

      I appreciate Dr McDougall’s practical advice on nutrition. I think he was not aware of long term storage of sodium in the insoluble form in skin and muscle collagen. This was discovered in the last less than ten years. If he was made aware before he died, I think he would have taken a slightly different approach on salt than the one he encouraged prior to his death. But it’s hard to say what someone would or wouldn’t have done. He was a brilliant man and an excellent doctor and communicator and teacher. He taught me a lot and I’m grateful that he answered an email I sent him with questions when I was early on in my career as a spine surgeon.

Its amazing humans made it thorough all the trials and accidents to evolve this far

      @ I was thinking some of the same things after finding that Dr. McDougall passed away. It seems that no one is sure what the root trigger for his earlier death, but some attribute it to his stroke that he had when he was 18 years old before he went plantbased. It’s so hard to say. There was a time when my husband and I were sold on his ideas on salt based on his studies on communities that lived long lives one high salt diets. We were also sold on the starch solution, but have strayed a bit away from his extreme views.

    I'm surprised you haven't commented on saturated fat - heart disease link. Whatever the exact cause is, and my guess is that that saturated fat, ultra processed carbs, and high sodium all contribute to the problem, the solution is to focus on healthy eating patterns.

      But thats one of the main reasons he says avoid meat/animal products too...the fat. Ultra processed he has mentioned and is also obvious by how he prepares and shows his meals.
