That's completely true the ballan wrasse is COMPLETELY UNDERRATED in the UK, as well as their difficulty to catch. Basically they don't run away cos nobody shoots them. Where I am from, Galicia in Spain, it's a delicatessen and reaches prices close to sea bass. It's a mere question of culture. However, for a ceviche I would recommend freezing them, as they usually contain anisakis in the UK! Good video!

99 Spearo Recipes has thrown me down that path. Made one with passionfruit, mango, banana, and avo for our Tas Spearo Easter Catch and Cook comp. Despite having 2 fish in there, I don't think it even lasted a minute on the table!
Definitely a perfect summer dish, even when it's cold, wet, and windy... and not summer!
It seems these "trash" fish work really well in Ceviches!

Mate! Those wrasse are a priced fish where I am from in the north of Spain. We eat them filled with shrimp… so good.. come this summer for some big dentex in shallow water if you are coming to the World Cup in Laredo.
We have thousands of them in the U.K. but they are really frowned upon to spear for some reason. Yes I’ll be in Laredo!

@@DanielMann how it begins :D I ain;t ever got board of fish and chips and wrapping ma fish in foil with lemon in the stomach and salt on the outside so I will probably stay lazy but the recipe videos do inspire me to try some other methods soon :D

I love to shoot wrasse here in the meds
In the rocky shallows you can crack up a mussel and leave it in a hole, 8/10 times a wrasse will come out for a look and it is an easy shot for some good meat.
I like to just pan fry it whole and the meat is very tender.

Hey Sam, what wrasse are you targeting in the mediterranean? So far I shot one brown or green wrasse I think they call it (Labrus merula) but only for a soup. I have to try wrasse fried then😊
@@MsNordsee my targets are the dark blue ones the I think they are the female and grow to be the biggest
I've tried a few wrasse species here in NZ (mainly because I'm a crap spearo). Clean white meat and easy to fillet, but I've found them almost completely tasteless. No bad taste at all, but not too inspiring either.
Hey Daniel. I think we have similar species here in Greece and indeed it is said that it is not that tasty... They usually cook it in soup.
I live in Iowa in the middle of America. I'd like to try that with a crappie. It's a freshwater fish that has very white fillets and is a very mild fish. Meat taste and texture is like grouper just way smaller.

I think when it comes to any desert region cities its a well known fact to NOT turn on the over when its over at least 90F or 32C!
Far from a desert where I’m from but it does get pretty sweltering in the summer over 40°C.
@@DanielMann Where I'm at in the summer it gets over 48C and in some cities around me it gets 50C.

How to ensure it is food safe? Did you flash-freeze it? Or is it not necessary? And how to know that? Thanks for your reply! (genuinely trying to learn out this one 😅)
You definitely do with some species and the FDA recommend freezing at a super low temp to kill them. I haven't had a drama off Queensland, Australia but some parts of the world do get the Anisakis worm. Hope this helps - Shrek

You can freeze first if worried but I’ve never had a problem.
