I like this recipe so much that I converted it to many of my favorite recipes. It has become my standard basic to turn to. Great recipe thank you.☺️ Great hamburger and hotdog buns, cinnamon rolls, dinner rolls, multi grain seed bread, fruit bread, peanut butter twists etc.
I would recommend using tangzhong in order to make the bread even more soft and fluffy, for an extended period! Just take a small part of the flour+milk and cook them until you get a gelatinous roux and add it back to the mix. Its honestly silly how good this works! I use it in all kinds of milk breads, buns etc.

You can, but it will take a while. I did it once and I had to keep taking breaks every 10 minutes or so. It took me 40 mins total kneading to get it to window pane stage! I finally saved enough to buy a stand mixer. I said never until I could get one!!
It's a matter of preference. If you use egg wash, you'd get a shiny and golden brown top so the looks are more appealing. Instead, milk wash will give a pale look rather than egg wash. I always use milk wash for my homemade bread, because it's kinda waste to break a whole egg just to use it as a wash on top of my bread (I could use it for another bread recipe). To make the look more shiny, you could brush unsalted butter on top of your bread while it's still warm.

I made it right now, using bread flour. I notice the dough is dry even I have added 3tsp of milk. Now waiting to proof. Hopefully it will be soft and fluffy.

Yeast won't rise if it's cold so use room temperature to 90C milk too hot will kill the yeast as well
