Never had pineapple upside-down cake because I'm not a fan of pineapple but when I made this Keto Rhubarb Upside-down cake I was so surprised at how delicious it was, I almost wanted to try pineapple upside-down cake (almost, lol).

Keto Rhubarb Upside-down Cake Ingredients
For the Syrup:
160g/1 Cup Allulose
56g/2oz/4 Tbs. Salted Butter
Zest of half and orange + 1 Tbs. Orange Juice (optional)
1 tsp. Vanilla Extract (if not using orange juice)
1 Lb./448g- Rhubarb
For the Cake Batter:
5oz./140g/1/2 Cup+2 Tbs.- Solid Coconut Oil/Softened Salted Butter
180g/2/3 Cup+1/4 Cup - Granular 1:1 Erythritol Sweetener Blend (Sweetener Video to explain why I use this sweetener- • What Keto Sweeteners W... )
4 Eggs (Room Temp)
2 tsp. Vanilla Extract
1 1/4 Cups/10 oz. Keto Buttermilk-2 tsp Vinegar + Alternative milk of Choice or can use the zest from half and orange 1 Tbs. Orange Juice in place of the vinegar
120 g/approximately 1-1/2 Cups - Vanilla Whey Protein Isolate (Isopure Creamy Vanilla=0 Carbs)
75 g/approximately 1/2 Cups + 2 Tbs. - Coconut Flour
1 tsp. Baking Powder
1-2 tsp. Xanthan Gum (enough to make a stiff batter) (Image above)
1-1/2 tsp. Baking soda
2 tsp. Vinegar

None of my grocery stores carry rhubarb, so I made it with blueberries instead. It turned out great!

The season for rhubarb is an late spring early summer and is Hardy so grows most of the summer. You just don't want mushy, it feels similar to celery. You're very welcome! I'm glad you enjoy the informative videos! Thanks!

Yeah I mentioned if you just do low carb you can do the normal pineapple and cherry. You can use other fruits, most don't have to be cooked though. And it will change the carb count obviously and you still have to cook the liquid.

Now I have discovered that something else that I need to keep an eye on: oxalates. Because of oxalate crystals stored in my gall bladder ( packed so full it had to be removed). That appears to be at the bottom of many of my digestive issues. I am so glad that I got the whole high fat low carb thing under control before learning about this oxalate universe😅
Is anyone else also subbing ingredients to reduce oxalates?
The only ingredient that I know is has oxalate is the rhubarb which can be replaced with any fruit. Most others you don't even have to cook first.

I avoid nut milks whenever possible, my substitute for milk is 3 tbsp of heavy cream and 13 tablespoons of water to make one cup of "milk", and it works very well for baking.
That's a good alternative also.

I had to get a huge container of whey protein powder so I'm happy to try your recipes to whittle that down! Anyway, I've also switched to allulose for my coffee, and also for cakes specifically, I find they come out softer, and made my go-to vanilla yogurt cake with allulose and it was a softy for a month (stored in the fridge, of course, cuz keto sweets last forever if you do that with little to no quality loss brought back to room temp). I'll put your new cake here on my to-do list, I'm going to make it an orange-coconut marble cake.
