Diluting Everclear to get proper proof needed for extracts.

  • I have never see a consistent answer this question about proofing down high proof alcohols. So I asked the person who I would know the answer my nephew Cole. So I am leaving the simple recipes here in the description for all of you to reference at anytime.
    Keep in mind the recipes here are used with the standard bottle size of 750ml. I you have a larger size bottle just use a measuring cup with ml on the side and measure out the 750ml needed. I have 4 standard measuring containers use for baking and they all have ml on the side.
    Recommended water to use is Distilled water.
    If you have 190 proof alcohol and you need
    100 proof add 675ml of H2O
    95 proof add 750ml H2O This is a 50/50 mix.
    90 proof add 833ml H2O
    80 proof add 1031ml H2O
    70 proof add 1288ml H2O
    If you have 151 proof alcohol and you need
    100 proof add 383ml of H2O
    90 proof add 508ml H2O
    80 proof add 665ml H2O
    70 proof add 866ml H2O
    If you have 120 proof alcohol and you need
    100 proof add 150ml of H2O
    90 proof add 250ml H2O
    80 proof add 375ml H2O
    70 proof add 536ml H2O

    This video was PERFECT timing for me. Just bought a190 proof of Everclear as I’ve been wanting to try different alcohol's. Was kinda panicking with the alcohol and DW ratio. Thank you and your nephew for doing this!! So so so easy now!! Phew 😮‍💨

    Very interesting and informative. So far I have used the Capt. Morgan's Coconut Rum, Grey Goose, Bulleit Bourbon and a few other rums. My favorites are the Capt. Morgan's Coconut Rum and the Grey Goose. I am looking forward to your next vanilla video. Thank you for sharing your time with us.

      So I just found out the Grey goose and the Kirkland vodka are the same at 1/3 the cost. Your paying for the name on the Grey goose. I have to agree and why I use the CM coconut rum in my opinion it makes the best extract the second best is the New Amsterdam Vodka.

      @@Mandy_39 I have never tried Amsterdam but the Grey Goose is fabulous. It does not have such a strong varnish taste that so many vodkas have. Since I am not a drinker I find the cheap alcohol pretty unbearable. The Capt Morgan Coconut Rum makes a good base and goes well with the vanilla. With Grey Goose all you taste is the vanilla.

      @@chickenstead6586 I was a big drinker back in the day & I loved Gray Goose, it was dangerous though cuz it was so smooth do I feel like it would be perfect! I hate to spend that much money cuz I'm only making a small batch so hopefully I can find a small bottle so I'm not wasting alcohol or money lol. I can't wait to see the results of the blind taste test!

    A proofing hydrometer can measure up to 200-proof or 100% ABV.

    I have a water ionizer at home. It makes water on the pH scale from 2.5-11.0...now I am curious about trying to proof down some EverClear with one of my waters 🤔 and see how it does with my extract

      Any good clean water will work. I use OR water.
      I personally don't like the way EC turns out in the end.
      The big vanilla companies use sugar cane rums and I kinda have to agree with them as it is much smoother and has a little sweetness on the back end of it.

    Can you add water AFTER you have made your tincture of plants and everclear or does the water. have to go in with the everclear and plant material etc. Thanks so much!

    I bought McCormick clearance price vanilla (jar with 3) pods more than a year ago, and they sat. With intent to extract, I afterward bought a clearance price 60 proof 750 ml Skinny Girl vodka(not knowing the extract proof necessary until watching your vanilla extract video. I ordered more organic Madagascar bean pods to have enough. (Had watched Mary's Nest first then found yours. Then bought for the 100 proof, two 1000-ml Everclear, 190 proof for price and high enough proof. I wanted some coconut rum (CM) but the proof not 100 (?) I am coconut lover.... Thanks for this video but now I mix, and since I mix should I get the coconut rum and ratio the proof together then do the ratio for the distilled water? I am not a drinker any more , so the vodka has to be used for an extract somewhere. I appreciate your response.

    Question: Can one cut the alcohol AFTER the extraction process has started or is one just SOL at that point?

    I just did this with distilled water Great Value brand and it did get super cloudy but it cleared within like 15-30 seconds

    The curiousity comes in about the time to do this. It would be beneficial to use higher proof to extract or macerate the vanilla (or lemons) or anything else. I get the desire to reduce it but then there really is no benefit to having the higher proof in the first place. Can you reduce the proof at the end? That would be the time that I would think it would make sense to do it.

      Alcohol actually kills the plant cell and flavor compounds with the action of freezing. It happens with all proofs of alcohol so the higher you go the less flavor you get. Check out my video on alcohol proofs and what you should use and why. You will get a better extract with a lower proof like 15-30 then you will with the higher ones. 70 proof is what the FDA recommends to keep it shelf stable and accounts for the dilution of the vanilla flavor and water content.

    Just wanted to say, it could behoove you to just explain the math for people. I remember doing it back in high school in chemistry, it's just a bit of stoich and a simple proportion equation. I remember seeing some bottles of high proof here in cali, I guess if I see then again I'll pick them up haha.

    Question , I can only find poland spring distilled water and it says use for appliances …is it safe to use ? I’m making tinctures . Thanks for your help

      I really cant answer that question because I don't know that brand. It should say on the label somewhere safe for human consumption. I cant imagine Poland spring water distilled not being able to use it. Some appliances can only run distilled water so it doesn't clog the parts. like a humidifier or vaporizer.

      Yes you can raise the proof of alcohol also. There are some good alcohol calculators online you can search and just type in what you have and what you want and it will give the ratios needed.

    What about . I did some cherry bounce with rhum 40% alcool .
    I use 2.3 litre and I add 0.200 ml of 95% alcool .
    What is my final proof ?
    So again
    2.3 litre 40 %(80 proof)
    + 0.200 ml 95 %(199 proof)
    What is the proof at the end ?

      So adding 0.200 ml of 95% is not enough to really change it in those volumes. The other thing is if you made cherry bounce you have to account for the volume of water coming from your cherries. What are you trying to achieve?

      @@ClementFamilyFarms it's a first time I do it . I came across some cherry .I did take the steam out ,I left the pits . Its bing cherry
      I fill up 3 jar of 3 litre to the top with cherry and a bit of sugar ,maybe 200gs sugar per jar . And top up with rhum and 95% spirit.no whater .
      2 days on the cherry start to loose color ,and when I went to shake the jar . I open them and notice a litle pshit and small bubble coming to the top .like fermentation.
      Is it normal ? Is it safe to drink later on ?
      Do you think I ll get a good final product at the end? How long can I leave it in the jar with the cherry ?.

      Sounds like you have the right combinations for fermentation. This is not a bad thing if you monitor it and follow the right steps. It that case it would be safe to drink.
      You need to do a little research about making cherry bounce or or making fruit wine or mead. I am not your guy for that part sorry.

      always before you add anything. The higher proof will actually dry out the vanilla beans.

      I think ( (current proof mL * current pct alcohol) / desired pct alcohol ) - current proof mL Note: pct alcohol being half the proof, so 100 proof = .5
