Thank you for the hint of making the extracts in small batches using different solvents. I will definitely be doing that. I already have vanilla made using vodka that I made a year ago. I need to start using extracts in more of my cooking.
I just made orange extract with dark rum, lemon extract with vodka, and chocolate extract with dark rum. I had brought over a lot of rum from Nicaragua the last time I was there, so I'm glad to use it. I have a 14-month vanilla extract with vodka, and a 9-month vanilla with the dark rum. I can't wait to try others!

That same day in the evening it will be 50F. But yes we are in our winter now. Using the green house and winter garden and staying dry. Jim

Hello Heidi! I’ve got several extracts going right now and all is going well thanks to your advice. I did do a cinnamon sticks extract and after only two weeks it’s delicious. I used a little in a cinnamon raisin bread powder sugar glaze and it turned out delicious! Thanks for your helpful videos!!❤️

1:20 startish higher proof alcohol for more extract. Vodka had less flavor alteration. But prefers apple wine. 80 proof for tinctures. All tinctures are extracts but not reverse. Glycerine food grade is non alcoholic tincture. 9:44 extracts 13:35 making 16:03 timing

I think you will really like it, I just love the flavor it adds and how much more intense the vanilla is. I believe it is because the spiced rum also has vanilla in it

I am watching this again, in amazement at how you keep everything going, God bless you...with my small garden and chickens, I am pretty busy, but am watching again because a recent storm tossed a lot of mistletoe into our yard, and I picked it up, and am drying it...I have read it can help in cancer treatment and heart disease, inflammation, etc...so, I was hoping that you had used some or knew about it...but I guess I can try it, probably in the honey and some organic wine...does it not ferment and have gas bubbles? Been canning tomatoes and pickles, it's so great to learn how to do extracts. I know a little bit but trying to get much info in this brain🤓. But I got some elderberry wine. Can I use it to extract elderberries? To make medicine? How much would you do per quart of wine to dry elderberries? And thank You so very much for keeping the videos coming. One thing about elderberries is they can make a pretty strong extract. I have not made an extract with them in years but I am thinking up to a half cup of dried elderberries per quart. Because I like to make things very strong, I would use as much as a cup.

@@donnamichaelgolelswholesom385 As an extract, you may only need up to a Tablespoon but I find elderberry to be pretty safe. When I make it as a syrup, I take up to 2 Tablespoons at a time when needed
I use frozen elderberries. I dont measure. I use half gal. And gallon pickle jars. Put in elderberries and cover with vodka about 2" more than level of elderberries. In a few days if u need to add more vodka.
hi Heidi thank you for you interesting videos .vanilla beans are very expensive where i live ….that is the reason why i finally decided to buy the vanilla powder that is pure vanilla bean powder for half the price ….i used that powder with white rhum that quickly gave me a very good vanilla extract….my question today is : regarding that i have a very good quality ground coffee in a container still closed do you think that i could use that coffee instead of coffee bean in order to make coffee extract ? 💐

Prior to seeing your video on extracts, I had made a heat extracted vanilla essence using straight vodka in my electric pressure cooker. They say to let it sit after heating for two weeks before using. I was wondering if you had any thoughts on heat extraction for vanilla? I was going to continue to let the vanilla slow extract on the shelf now, decanting what I want to use, and topping it off with more vodka to let it steep on the shelf. Bless God GMomma Heidi. My question is when making extract with your wine and raw honey do it create gases again that would need to be burped? I have been being extra careful not to have any bottles explode because I had a half gallon cracked all the way down full of 1:1:1 honey, apple cider vinegar, and oranges. It would have been ants forever on this old hardwood. I am learning soooo much. I even kept 3 containers of ferment starter alive for a week until my wine making jars come next week. I used frozen berries and the next day threw a couple raisins in it and the next day threw a few pieces of watermelon in it. Lol yes I was desperately making sure it stayed active and it has. My biggest and only concerns now is knowing when I can put the tops on tight to store things. I'm bedridden about to start therapy on my own to walk and i need to make your pain reliever. Also salt. I know when you make your kimchi you use your starter and salt to make it savory. Can I make a starter with salt too instead of sugar? Lol before its over in going to be a expert on these ferment with your videos that I restudy daily for these last few questions. I ve made a lot of extracts with vodka (60 percent) but i havent been baking much. I made an extract this year from black salsify flowers because they taste and smell a bit like cookies or vanilla when you catch them on the day they open. Im not sure when it is done, but il try some in september and see how it tastes in some muffins. I tried to extract my favorite smelling herb, roman chammomile, but it turned the alcahol a redbrown color and im afraid ot will stain if i get it on my clothes. It certainly smells good though lol its a shame its irritating when ingested.
Do you have a video JUST using the wine extracts. You cover a lot of turf, and you are very thorough, but being all over the map I’ve got to listen over and over again. You want your time respected, and I’d appreciate that it return. If there is a video addressing using just wine, from start to finish I haven’t found it yet. Thanks.
It is really up to the person and everyone will also have their own opinion as to what they think is best but there are many options. One can do an oxymel that is alcohol free by using 1:1 ratio of vinegar and honey. I mostly often use homemade wine (3 parts) to one part honey. One can use a straight spirit such as vodka, rum, bourbon, whiskey. One can even use 3 parts glycerin to one part water for another alcohol free option
Hi Rain Country! I just came across your video about making your own homemade extracts, and I love your site with tutorial videos! Thank your for sharing!! You are so knowledgeable and inspiring to listen to. I have a question for you which I hope you can help me with: I made my first liquid stevia sweetener using fresh leaves from my 2 stevia plants in my garden. I watched several videos on how to prepare the liquid sweetener- which is basically the same procedure as with herbal tinctures- using vodka to marinate in, but for stevia, no more than 24- 36 hours or it becomes more bitter than sweet. I made 2 batches (to test the difference in using) one with fresh, slightly chopped leaves; the other with fresh, whole leaves, both marinated in vodka for 28.5 hours. Both were strained with cheesecloth, and then each one was put on a VERY slow, miniscule bubbled simmer for 10 minutes; they both still smelled VERY STRONG of alcohol, so I added another 10 minutes; all recipes I found gave it 10-20 minutes, one suggested 30 minutes, all stressing NOT to hard boil the liquid or you sacrifice the sweet taste, as well as evaporating all the liquid out. Since the directions stated that ‘you’ll know when it is finished (how long to simmer) based on when you no longer smell the alcohol’, and mine STILL reeked of the alcohol, I left it in total up to 30 minutes. At this point, I just turned it off since half the liquid was already evaporated out (which was expected to happen), but in my opinion, it STILL smelled too strong of alcohol! I’m not sure what I did wrong or if it’s just me that feels super nauseated and sick to my stomach from smelling (checking) if the alcohol was sufficiently evaporating out during this 30 minute process? I really wanted to love this new found independence on growing Stevia plants, and making my own stevia liquid sweetener, but after trying the finished product, I am very disappointed! The taste is sweet enough on my finger- even if a bit on the alcohol side, but when I put SEVERAL drops in my cup of coffee (which I usually use just a couple drops of Sweetleaf Stevia Clear liquid or powder form), it doesn’t taste at all sweet! I have to keep adding more and more to get a slight ‘earthy’ type taste (not sure how else to describe it); it tastes from 0 sweetness to terrible, and left me with such a nauseated, sick feeling- probably from the alcohol, that I couldn’t even drink my coffee or eat anything afterwards! I had to make a chamomile tea to settle my stomach. I know this probably sounds a little dramatic, but I am severely disappointed and trying to understand where I went wrong. In your experience and educated opinion, do you think I didn’t have the bubbles high enough to evaporate all the alcohol sufficiently out or is it ‘normal’ to have somewhat of an alcohol base taste to Stevia/ herbal tinctures? Or is it possible then that it’s just me who perhaps is not able to use and consume tinctures, teas, etc. made using alcohol as the marinating medium? I saw some videos on the option of using glycerin instead, but am very weary about using a sugary syrup to make them; I would rather prefer staying away from sugars (unless natural and low glycemic- which is why I love Stevia, but not the chemically processed ones!) Isn’t there an option for using purified water to make herbal teas and tinctures for consuming? Or perhaps if I’m just making herbal salves and topical creams, I could still use the vodka alcohol as my marinade, as long as I understand how, and for how long, to properly simmer out the alcohol. Thank you for any information and help you can offer me. I love so much your videos and am very inspired to continue to learn about medicinal herbs so I, too, can help myself and others. We are in a very important time now to return to God’s nature and utilize the gifts we were given, freeing ourselves from toxic pharmaceutical dependence- especially for ‘non emergency’ home health remedies. I am not a fan of stevia nor do I ever cook my extracts so I cannot help you on all that but you may want to know that glycerin , though syrupy and sweet, has a very low glycemic index and is not actually a sugar so it cannot be compared to honey, maple or any other such. So if you are trying to avoid carbs, it is a better option but if you are just trying to make a sweetener, it is pretty pointless using glycerin to extract even more sweetness from stevia. You could simply dry and powder it and add it to your coffee that way or toss a fresh leaf into your cup and let it steep in there for a bit to add sweetness. This is what I do some mornings with my chocolate mint when it is coming in fresh, I add a small sprig to my cup and it adds that nice flavor to it.
@@RainCountryHomestead thank you for the suggestion. I will try this. It was my next thought to try the Stevia leaves dried or like you said, just a leaf steeped in my cup. It's a shame what these moral less corporations are doing to the only organic brands people like me have been using for years- they are being bought up and the original, organic alternative recipes are being changed (without warning); now Sweetleaf is another, like Tom's of Maine, and many others. We have to return to nature and learn to make as much as we can ourselves. Thanks for your help! God bless!

Aside from making a tea, I can only assume it would work just as well or better if extracted or tinctured but if you are trying lower blood sugar, the best way would be in the form of a tea

The perpetual extract is made in a larger jar, at least a quart or half gallon. When it is ready, you take out enough to fill a smaller bottle or jar that you keep in your kitchen to work through, it should be enough to last you at last a couple of months. It takes me several months to work through the 8 ounce bottle I fill up which is plenty of time for the perpetual extract to get strong again

Just love this, today I made a mullein flower quart jar extract I didn't have enough apple cider vinegar so topped it with vodka is that ok? I used 1/2 honey part vinegar topped 2 inches vodka.
How do you store your extracts, vinegars, and homemade wines? I was proud of myself for making the homemade apple cider vinegar. But it doesn't smell like vinegar now. It kinda smess bad now. Any tip would be appreciated! I love you and your videos!!
I'm not sure about a safe ratio but I know I've diluted honey with water and it did indeed rot and mold. I think if it was done with sanitization like wine, there is a type of fermented honey drink (mead?) But yeah, refrigerate.

I believe glycerin likely works best with the greens and flower parts of herbs. Usually woody items like roots and bark do better with alcohol but the stronger the alcohol, usually the less you need to take
Would it be a good idea to combine different flavors in a single extract, or would it really be better to just make individual’s extracts for each central flavor or ingredient? For example if I wanted to make a sort of “Nutella” extract with chocolate and hazelnuts, would combining them into one bottle be acceptable?

I personally would avoid the red wines and stick with any more mild in flavor. I like my apple wine most for this but I would also use my blackberry wine for berry extracts as it would not change the color or flavor much
Crazy question but could you add honey to the vodka or rum as the base then add like the vanilla beans or cinnamon sticks to sit and fuse together for a super sweet extract? Or would it mold?

These are the most recent ones I have purchased but have yet to use them in extract making. I bought them through subscribe and save to save a bit more: amzn.to/2P71okm I did compare them by straight taste and smell to the ones I bought 5 years ago that I keep vacuum sealed in jars and found them comparable One thing to consider is cutting your beans in half lengthwise to get more flavor from them
@@RainCountryHomestead Yep...that's what I forgot to do when I started the batch. After several months it was still weak, so I added some more beans that I did split. But now, after several more months, it smalls like vanilla but is still peaked and with not very strong vanilla fragrance. I'll add more beans and hope it improves. Thanks, Heidi. Not sure if you'll see this, but I think I messed up! I wanted a jewelweed salve, but wasn't thinking, had watched some videos, but, mixed it in glycerin/water ratio from an older video. I also did that with my nasturtium... Thankfully, I hope, when I did my comfrey, I mixed it with olive oil. Still shaking everything. But not sure what to do with the nasturtium and jewelweed now. Any hope?? I did get beeswax pearls to make a comfrey salve. Thanks so much for all your information!

It depends on what you are using it with. I would never use such a high proof alcohol with delicate herbs but it should be fine with woodier items such as roots and barks

When I was doing it in 8 ounce bottles, I used four. But now I make a perpetual one in about a liter jar. I cannot remember how many I added at the start, maybe a dozen or so
I have thought about taking natural sugar and distilled water, using it to steam the vanilla beans. Steam it until there is a good concentration of vanilla in the water/sugar mixture below. Allowing it to cool to room temp then add steamed mixture and vanilla beans to container and then adding alcohol. Would this method allow for mold or any other unwanted, like shorter shelf life? Or is this just a crazy idea? Just thinking it would be usable in a much shorter period of time. What do you think?

Not these kind of extracts, no, just the ones involving oil. It is a form of an extract but I refer to it as infused oils. I have videos on various infused oils and making muscle rubs, skin creams, and salves out of them

Hello Heidi! I know u recently mentioned in a video (can’t remember which one it was) that you no longer use glycerin for your medicinal non-alcoholic extracts cuz u just use honey now. Can u explain y u switched to honey instead of glycerin and have u figured out the shelf life of the honey extract? Also my understanding is that for medicinal purposes honey is not that strong of a solvent so I’m not sure wat to do as I don’t want to use alcohol for my children.. Thanks for your help!
I switched because honey is healthier and preserves much longer. When I add raw honey to my elderberry syrup after it has cooled, it keeps it preserved for years. I still store it in the fridge but I have never had any go bad, even four years later
Seem like i did ask some where but impossible to remember where..sorry….wanted to know if we could use freezed fruits to make extract?…or you think it could not come out right ?…have you tried it one time?
That is because rum is not an extract, it is an alcohol already. If you buy a rum extract from the store, it is not an extract it is an artificial flavoring. So you would be better off just buying rum, in particular, a spiced rum which makes a great flavor for many things

I might have missed this but did you discuss doing 2-4x extracts (such as spending the mint, wringing our the goodness then repacking it in the same menstrum and just topping it off for rounds 2-4?

We are wet and cool in the winter here. No snow, and cool cool summers with a max of two days a year around 88F. That same day in the evening it will be 50F.

Hello Heidi! I’ve got several extracts going right now and all is going well thanks to your advice. I did do a cinnamon sticks extract and after only two weeks it’s delicious. 1:20 startish higher proof alcohol for more extract. Vodka had less flavor alteration. But prefers apple wine. 80 proof for tinctures. All tinctures are extracts but not reverse. Glycerine food grade is non alcoholic tincture. 9:44 extracts 13:35 making 16:03 timing

I think you will really like it, I just love the flavor it adds and how much more intense the vanilla is. I believe it is because the spiced rum also has vanilla in it

Butter is not something that can be extracted, one would have to create an artificial flavor instead. I say just use real butter instead of an extract

I am watching this again, in amazement at how you keep everything going, God bless you...with my small garden and chickens, I am pretty busy, but am watching again because a recent storm tossed a lot of mistletoe into our yard, and I picked it up, and am drying it...I have read it can help in cancer treatment and heart disease, inflammation, etc...so, I was hoping that you had used some or knew about it...but I guess I can try it, probably in the honey and some organic wine...does it not ferment and have gas bubbles? Wow, I am glad I kept searching! American mistletoe is very different than the European mistletoe that has healing properties, so glad that I didn't already make my extract!!! The American mistletoe can have some pretty bad effects! oh, well, thank you, but I am still wondering why the mint in the honey/wine would not bubble and ferment...lol...thank you

Been canning tomatoes and pickles, it's so great to learn how to do extracts. I know a little bit but trying to get much info in this brain🤓. But I got some elderberry wine. Can I use it to extract elderberries? To make medicine? How much would you do per quart of wine to dry elderberries? And thank You so very much for keeping the videos coming. One thing about elderberries is they can make a pretty strong extract. I have not made an extract with them in years but I am thinking up to a half cup of dried elderberries per quart. Because I like to make things very strong, I would use as much as a cup.

@@donnamichaelgolelswholesom385 As an extract, you may only need up to a Tablespoon but I find elderberry to be pretty safe. When I make it as a syrup, I take up to 2 Tablespoons at a time when needed

I use frozen elderberries. I dont measure. I use half gal. And gallon pickle jars. Put in elderberries and cover with vodka about 2" more than level of elderberries. In a few days if u need to add more vodka.

hi Heidi thank you for you interesting videos .vanilla beans are very expensive where i live ….that is the reason why i finally decided to buy the vanilla powder that is pure vanilla bean powder for half the price ….i used that powder with white rhum that quickly gave me a very good vanilla extract….my question today is : regarding that i have a very good quality ground coffee in a container still closed do you think that i could use that coffee instead of coffee bean in order to make coffee extract ? 💐

Hello Heidi, I found your videos this year and have been loving you sharing your experiences, tips, tricks, and methods. Thank you for taking the time to do this channel. Prior to seeing your video on extracts, I had made a heat extracted vanilla essence using straight vodka in my electric pressure cooker. They say to let it sit after heating for two weeks before using. I was wondering if you had any thoughts on heat extraction for vanilla? I was going to continue to let the vanilla slow extract on the shelf now, decanting what I want to use, and topping it off with more vodka to let it steep on the shelf. I have never used heat for such an extraction so not much I can say. I just allow mine to sit for at least two months before using
Bless God GMomma Heidi. My question is when making extract with your wine and raw honey do it create gases again that would need to be burped? I have been being extra careful not to have any bottles explode because I had a half gallon cracked all the way down full of 1:1:1 honey, apple cider vinegar, and oranges. It would have been ants forever on this old hardwood. I am learning soooo much. I even kept 3 containers of ferment starter alive for a week until my wine making jars come next week. I used frozen berries and the next day threw a couple raisins in it and the next day threw a few pieces of watermelon in it. Lol yes I was desperately making sure it stayed active and it has. My biggest and only concerns now is knowing when I can put the tops on tight to store things. I'm bedridden about to start therapy on my own to walk and i need to make your pain reliever. Also salt. I know when you make your kimchi you use your starter and salt to make it savory. Can I make a starter with salt too instead of sugar? Lol before its over in going to be a expert on these ferment with your videos that I restudy daily for these last few questions. Yes it will work since mead is wine. The only difference is it is made with honey and water instead of fruit juice and sugar.
I ve made a lot of extracts with vodka (60 percent) but i havent been baking much. I made an extract this year from black salsify flowers because they taste and smell a bit like cookies or vanilla when you catch them on the day they open. Im not sure when it is done, but il try some in september and see how it tastes in some muffins. I tried to extract my favorite smelling herb, roman chammomile, but it turned the alcahol a redbrown color and im afraid ot will stain if i get it on my clothes. It certainly smells good though lol its a shame its irritating when ingested.

Do you have a video JUST using the wine extracts. You cover a lot of turf, and you are very thorough, but being all over the map I’ve got to listen over and over again. It is really up to the person and everyone will also have their own opinion as to what they think is best but there are many options. One can do an oxymel that is alcohol free by using 1:1 ratio of vinegar and honey. I mostly often use homemade wine (3 parts) to one part honey. One can use a straight spirit such as vodka, rum, bourbon, whiskey. One can even use 3 parts glycerin to one part water for another alcohol free option

I have a question for you which I hope you can help me with:
I made my first liquid stevia sweetener using fresh leaves from my 2 stevia plants in my garden. I watched several videos on how to prepare the liquid sweetener- which is basically the same procedure as with herbal tinctures- using vodka to marinate in, but for stevia, no more than 24- 36 hours or it becomes more bitter than sweet.
I made 2 batches (to test the difference in using) one with fresh, slightly chopped leaves; the other with fresh, whole leaves, both marinated in vodka for 28.5 hours. Both were strained with cheesecloth, and then each one was put on a VERY slow, miniscule bubbled simmer for 10 minutes; they both still smelled VERY STRONG of alcohol, so I added another 10 minutes; all recipes I found gave it 10-20 minutes, one suggested 30 minutes, all stressing NOT to hard boil the liquid or you sacrifice the sweet taste, as well as evaporating all the liquid out. Since the directions stated that ‘you’ll know when it is finished (how long to simmer) based on when you no longer smell the alcohol’, and mine STILL reeked of the alcohol, I left it in total up to 30 minutes.
At this point, I just turned it off since half the liquid was already evaporated out (which was expected to happen), but in my opinion, it STILL smelled too strong of alcohol!
I’m not sure what I did wrong or if it’s just me that feels super nauseated and sick to my stomach from smelling (checking) if the alcohol was sufficiently evaporating out during this 30 minute process?
I really wanted to love this new found independence on growing Stevia plants, and making my own stevia liquid sweetener, but after trying the finished product, I am very disappointed!
The taste is sweet enough on my finger- even if a bit on the alcohol side, but when I put SEVERAL drops in my cup of coffee (which I usually use just a couple drops of Sweetleaf Stevia Clear liquid or powder form), it doesn’t taste at all sweet! I have to keep adding more and more to get a slight ‘earthy’ type taste (not sure how else to describe it); it tastes from 0 sweetness to terrible, and left me with such a nauseated, sick feeling- probably from the alcohol, that I couldn’t even drink my coffee or eat anything afterwards! I had to make a chamomile tea to settle my stomach.
I know this probably sounds a little dramatic, but I am severely disappointed and trying to understand where I went wrong.
In your experience and educated opinion, do you think I didn’t have the bubbles high enough to evaporate all the alcohol sufficiently out or is it ‘normal’ to have somewhat of an alcohol base taste to Stevia/ herbal tinctures?
Or is it possible then that it’s just me who perhaps is not able to use and consume tinctures, teas, etc. made using alcohol as the marinating medium?
I saw some videos on the option of using glycerin instead, but am very weary about using a sugary syrup to make them; I would rather prefer staying away from sugars (unless natural and low glycemic- which is why I love Stevia, but not the chemically processed ones!)
Isn’t there an option for using purified water to make herbal teas and tinctures for consuming?
Or perhaps if I’m just making herbal salves and topical creams, I could still use the vodka alcohol as my marinade, as long as I understand how, and for how long, to properly simmer out the alcohol.
Thank you for any information and help you can offer me. I love so much your videos and am very inspired to continue to learn about medicinal herbs so I, too, can help myself and others. We are in a very important time now to return to God’s nature and utilize the gifts we were given, freeing ourselves from toxic pharmaceutical dependence- especially for ‘non emergency’ home health remedies.

I am not a fan of stevia nor do I ever cook my extracts so I cannot help you on all that but you may want to know that glycerin , though syrupy and sweet, has a very low glycemic index and is not actually a sugar so it cannot be compared to honey, maple or any other such. So if you are trying to avoid carbs, it is a better option but if you are just trying to make a sweetener, it is pretty pointless using glycerin to extract even more sweetness from stevia.
You could simply dry and powder it and add it to your coffee that way or toss a fresh leaf into your cup and let it steep in there for a bit to add sweetness. This is what I do some mornings with my chocolate mint when it is coming in fresh, I add a small sprig to my cup and it adds that nice flavor to it.
@@RainCountryHomestead thank you for the suggestion. I will try this. It was my next thought to try the Stevia leaves dried or like you said, just a leaf steeped in my cup. It's a shame what these moral less corporations are doing to the only organic brands people like me have been using for years- they are being bought up and the original, organic alternative recipes are being changed (without warning); now Sweetleaf is another, like Tom's of Maine, and many others. We have to return to nature and learn to make as much as we can ourselves.

Aside from making a tea, I can only assume it would work just as well or better if extracted or tinctured but if you are trying lower blood sugar, the best way would be in the form of a tea

The perpetual extract is made in a larger jar, at least a quart or half gallon. When it is ready, you take out enough to fill a smaller bottle or jar that you keep in your kitchen to work through, it should be enough to last you at last a couple of months. It takes me several months to work through the 8 ounce bottle I fill up which is plenty of time for the perpetual extract to get strong again

I store most in the bottles and jars in a dark cabinet. The vinegar may have not fully been finished when you put it up.

I'm not sure about a safe ratio but I know I've diluted honey with water and it did indeed rot and mold. I think if it was done with sanitization like wine, there is a type of fermented honey drink (mead?) But yeah, refrigerate.

I believe glycerin likely works best with the greens and flower parts of herbs. Usually woody items like roots and bark do better with alcohol but the stronger the alcohol, usually the less you need to take
Would it be a good idea to combine different flavors in a single extract, or would it really be better to just make individual’s extracts for each central flavor or ingredient? For example if I wanted to make a sort of “Nutella” extract with chocolate and hazelnuts, would combining them into one bottle be acceptable?

Does it matter wine flavors, like Chardonnay vs Merlot
I personally would avoid the red wines and stick with any more mild in flavor. I like my apple wine most for this but I would also use my blackberry wine for berry extracts as it would not change the color or flavor much
Crazy question but could you add honey to the vodka or rum as the base then add like the vanilla beans or cinnamon sticks to sit and fuse together for a super sweet extract? Or would it mold?

My only question on this one, is: which of the myriad of choices of vanilla beans do you usually order from AMAZON??? :-\ Many months ago I used Vodka to start a batch of vanilla extract, but I must not have put in enough of the beans because it was very weak after sitting for a 2-3 months. I did compare them by straight taste and smell to the ones I bought 5 years ago that I keep vacuum sealed in jars and found them comparable
One thing to consider is cutting your beans in half lengthwise to get more flavor from them
@@RainCountryHomestead Yep...that's what I forgot to do when I started the batch. After several months it was still weak, so I added some more beans that I did split. But now, after several more months, it smalls like vanilla but is still peaked and with not very strong vanilla fragrance. I'll add more beans and hope it improves. Thanks, Heidi. Not sure if you'll see this, but I think I messed up! I wanted a jewelweed salve, but wasn't thinking, had watched some videos, but, mixed it in glycerin/water ratio from an older video. I also did that with my nasturtium...
Thankfully, I hope, when I did my comfrey, I mixed it with olive oil. Still shaking everything. But not sure what to do with the nasturtium and jewelweed now. Any hope?? I did get beeswax pearls to make a comfrey salve.

hi, Heidi, I was wondering can I use alcohol as strong as 90 or 95? You said for tinctures it has to be higher than 80, but can the alcohol be too strong? I have't done any extracts or tinctures yet, but I'm planning to start as soon as I get all the supplies. Thanks! Greetings from Lithuania ;)
It depends on what you are using it with. I would never use such a high proof alcohol with delicate herbs but it should be fine with woodier items such as roots and barks

When I was doing it in 8 ounce bottles, I used four. But now I make a perpetual one in about a liter jar. I cannot remember how many I added at the start, maybe a dozen or so

I have thought about taking natural sugar and distilled water, using it to steam the vanilla beans. Steam it until there is a good concentration of vanilla in the water/sugar mixture below. Allowing it to cool to room temp then add steamed mixture and vanilla beans to container and then adding alcohol. Would this method allow for mold or any other unwanted, like shorter shelf life? Or is this just a crazy idea? Just thinking it would be usable in a much shorter period of time. What do you think?
The addition of the alcohol would prevent it from spoiling and should last for a long time but I cannot tell you how long.

Not these kind of extracts, no, just the ones involving oil. It is a form of an extract but I refer to it as infused oils. I have videos on various infused oils and making muscle rubs, skin creams, and salves out of them

Hello Heidi! I know u recently mentioned in a video (can’t remember which one it was) that you no longer use glycerin for your medicinal non-alcoholic extracts cuz u just use honey now. Can u explain y u switched to honey instead of glycerin and have u figured out the shelf life of the honey extract?
Also my understanding is that for medicinal purposes honey is not that strong of a solvent so I’m not sure wat to do as I don’t want to use alcohol for my children..

I switched because honey is healthier and preserves much longer. When I add raw honey to my elderberry syrup after it has cooled, it keeps it preserved for years. I still store it in the fridge but I have never had any go bad, even four years later

Yep, I have used freeze dried fruits several times to make extracts: Raspberry, pineapple, and cherry

That is because rum is not an extract, it is an alcohol already. If you buy a rum extract from the store, it is not an extract it is an artificial flavoring. So you would be better off just buying rum, in particular, a spiced rum which makes a great flavor for many things
Thank you for your reply - I understand! I thought the method involved boiling off the alcohol to create an intensified “syrup” of the rum to be used in place of rum extract. I guess that’s not done. You have saved me time & effort - many thanks!@@RainCountryHomestead
@@TimMicheleSanders There probably is more to it than just using it as is, I could see the boiling off being a good idea and might be worth a try :)
I might have missed this but did you discuss doing 2-4x extracts (such as spending the mint, wringing our the goodness then repacking it in the same menstrum and just topping it off for rounds 2-4?
No, I did not discuss that and it is not something I bother to do but if one wants even more flavor, yes, you can do that

Maple extract purchased in the store is artificial. All you need to do is use maple syrup instead
I just found on Pinterest a recipe for maple extract 1/2 vodka - 1/2 maple syrup.

I do not recall if I have done a specific update but I have had no problems. Honey is a natural preservative as is wine
