I've got Vanilla Extract as well as Cinnamon and Mint planned, a variety of Herbal Oil Infusions, Chai and Pumpkin Pie Spice blends and some Homemade Elderberry Syrup for us to work on today!     Remember quality matters, try and source organic if you are able.
    Chai Spice:
    4 tsp cinnamon
    2 tsp ginger
    1 tsp cardamom
    1/2 tsp nutmeg
    1/2 tsp all spice
    1/2 tsp ground cloves
    1/8 tsp black pepper
    Pumpkin Spice:
    3 tbsp cinnamon
    2 tsp ginger
    2 tsp nutmeg
    1.5 tsp allspice
    1.5 tsp cloves
    ELDERBERRY SYRUP
    Ingredients:
    1 Cup dried Organic Elderberries
    6 Cups filtered water
    1/2 Tbsp Ginger
    1 Tbsp Cinnamon
    1/2 Cup Honey
    Bring everything, except Honey, to a boil. Cover and reduce to a simmer for 30 minutes.
    Strain berries from liquid. Add honey and store in the fridge for up to 6 weeks.
    Dosage: Children 1 year and up (Do not give babies under 1 honey) - 1Tbsp a day or every other day. Adults 2 Tbsp a day or every other day. *During times of sickness can be taken 3-4 times a day.

    If you have access to buckwheat honey, it has a ton of added medicinal properties.

    This is awesome! Gives me so many ideas of things to make!
    I make my vanilla a year in advance and use about half as many beans and keep the year befores beans too (they have a lot of life left in them). I'm not strict about it, if I need to crack it open and use some but I've done it for so many years, I usually have plenty for the whole year and I bake a LOT.

    A woman after my own heart! Everything is so beautiful and useful. I always feel glad to see the young generation carry the torch for these kinds of home crafts. I was always a bit of an oddball in my circles, but my children never knew doctors and antibiotics! And my skin still looks healthy in my 60's. 😊

    I’m a Master Herbalist and I love this so much! Do you grow lemon balm? I’m sure you do. It’s a versatile plant as well.
    I also make vanilla extract with all 3 of those alcohols and as a matter of fact, I have french plums in the crock pot right now to make preserves with spiced rum. I really like peaches with bourbon vanilla but who doesn’t! Have a great weekend 😀

      Ahhh so cool Nikki! I’m hoping to take a course this winter and start on that journey! My husband and I just started getting into foraging as well! It’s so fun and so beneficial! Those plums sound divine! Yes, I’ve got lemon balm and plan to make some tinctures!

    Loved everything about this video!
    I’ve never thought about making my own cinnamon or mint extract. I’ll have to try that. If you have a Sam’s Club membership they have a great deal on their brand of vodka - $12.84 for 1.75 L.
    I’ve always been intimidated by making my own herbal oil infusions. After watching you, I now realize just how easy they are to make. I’ll definitely be planting more herbs next year so I can try my hand at making some oil infusions.
    Thanks for showing how to make those spice blends! I’ve been making our own pumpkin pie spice for a while now but have never made chai spice. We love adding pumpkin pie spice to our teas in the morning. I’m definitely going to be making the chai spice so we can change it up and add some chai spice to our teas :)

      I’m so glad you enjoyed! I need to get either a Sam’s or Costco membership for some good bulk deals, unfortunately it’s about an hour and 15 minutes from us. I want to try and make it an every 6 weeks thing if I can!
      Herbal infusions and tinctures are so simple, especially with “easy” herbs like these. The hard part is knowing which herbs to use when and how much, but even that isn’t hard, just time learning! It’s great knowledge to have!

    I leave my vanilla sat for 16-24 month but as you said - so many different opinions on that. I make big batches so I always have some I can use while 2 jars usually sit in the basement pantry marinating :)

    I made my first vanilla about 10 years ago and I also triple the used beans to make another batch. I havent made any salves yet so Ill be looking forward to those videos! I cant believe how warm it still is there, my son said 80 today and tomorrow! We are getting snow and it will feel like 6 degrees, BRRRRRRRRRRR.     Love this. I have my first batch of Vanilla Extract going. I have lots of different Mints that I dried. I think I may make extracts from some of them. Cinnamon extract sounds interesting. I made a couple salves this year. All this is new to me. Thanks for sharing with us.

    I love rose hips.I have made rose hip apple cinnamon jelly, and rose hip teas this year with hips from my roses. I dont spray anything either. I was sick with a virus ( not THE virus) just a regular one a few weeks ago and made rose hip hibiscus tea sweetened with local honey, Worked wonders on my sore throat. Nature is amazing.

    Fantastic episode. As for the vanilla use what you like to drink. Elderberry as a shot, with a bit of maple syrup and a splash of fresh lemon juice is what we use. Hugs from Esquimalt

    I’ve been making homemade vanilla for many years. Most often I just slice and add the beans directly into the vodka jar. I will dispense it into the bottle I keep in the cupboard as needed. Over the years I have gifted bottles of the vanilla and pretty regularly I will get the bottle back with the hopes I’ll gift another bottle 😆
    The bottles on the windowsill look so pretty. I look forward to when you share how you use them. Fun video Kelsey, thank you for sharing. The autumn scenery is so beautiful! ❤

    For your vanilla you should try putting them in the instant pot or pressure canner. I prefer it that way now. Immediately gives you the intense vanilla flavor.

    What do you do with your vanilla beans once you remove them? Are there other uses for them afterwards?

      I’ll reuse them a second time! If they still have some life in them you could scrap them and use them in baking or a simmer pot for a lovely aroma!

      I have a 2 gallon jar, with allot of them in it. I was thinking of removing them, try drying them somehow? Storing them somehow? So I could get more " uses" out of them. Maybe get more new beans..start more! Lol!

    Have you ever used castor oil for your infusions? Cast oil has a lot of benefits to the body on its own. I’ve never done an infusion with castor oil but it’s on my list of things to do.

    Could you use fermenting weights to hold the herbs down? I know some herbs float and will not stay down?

      Great for gifts, definitely one I’d appreciate! Just remember with the chai, it’s a spice, not a tea but you can add it to black tea with some cream and maple syrup for a fantastic chai tea! I personally only use dried herbs, the water content in fresh can cause spoilage ☺️

    You grabbed my attention. Elderberry, which I love the flavor.
    Making something to help fight of colds is a big thing. Vanilla I have plenty for now. But the Elderberry syrup. Besides a health benefit item for winter. Can this also be used as pancake syrup, or flavoring in recipes.

      I personally wouldn’t use it as a pancake syrup, it’s not that sweet, much more bitter than a typical syrup!

      I’ve never attempted using elderberry for anything other than medicinal purposes though so I can’t really say if or how it could be used in other recipes ☺️

    Completely off topic, seeing you with the lavender & roses made me think of something. Have you tried cooking with lavender? It’s so delicious! I went to a restaurant that served everything with lavender, lavender butter, lavender cakes, chicken with lavender, etc probably even lavender honey. I want to try making a few dishes to recreate them, it was something I never would’ve thought of using but a billion years later I still remember that meal.
    I’ve been thinking of roses to make rose water and use in desserts. There’s a panna cotta recipe I have that uses rose water, I’m not sure exactly the process involved but I would guess it’s getting edible rose petals, boiling them & probably let them sit for infusion before use.

    How do you prep your wild rose hips for tea? I collected roughly eleventy billion off our property, and I will likely be working on them til next October if I really need to cut them in half and scoop out the middle as the internet seems to suggest.

      LOL, that’s a pain! I personally don’t scoop if using for tea. I’ll dry them completely, then grind with mortar and pestle or run through a coffee grinder or food processor, then sift out the hairs using a sieve. I then use them for tea. If using for jelly I pick the big ones, slice in half and scoop. Also Eleventy billion is most definitely a measurement I’d use 😂😂😂🤍🤍🤍

      @@seedandsparrowhomestead that is music to my ears! My hubby "helped" forage, so I'm already hours into separating the bad ones. It's what I was doing while watching your video.
      I'm not at all surprised that you would use my unit of measure. My favorite part of watching is that you're so much like me which clearly makes you very entertaining. Your movie and book references always get me, and I appreciate that you don't pretend to be the picture of perfection so many do. I mean we all have areas of homemaking we fall way behind on and feed our kids frozen nuggets when need be right?

    Please tell me how you use the yarrow infusion. I have a ton of yarrow and no clue how to use it. Every one tells me what I can do with it ie: oil infusion but that doesn't tell me how to use the oil or what situations I can use it for. Thank you in advance for any assistance you can give me on this matter. ❤

    Very curious. I have vodka left over from making vanilla. I saw you put cinnamon sticks with the vodka. What do or can you do with? I was at a loss as to how I would use it. Other than what you mentioned

      I’d use it in baking ex. cake, cookies, cinnamon rolls, icing, whipped cream, also ice cream and sorbet. Hot chocolate, wassail, apple cider. I’m thinking some stewed fruit as well like apples, pears and peaches ☺️

    I’m going to be making vanilla extract! I bought the 10 piece vanilla beans from Amazon you recommended. You said 20 per quart jar. Does that mean the 10 vanilla beans cut in half making 20 pieces? Or 20 whole vanilla beans?

      Awesome! I do 20 per quart but that’s just my method, I’ve seen others do less and have success but it may take a bit longer for them to infuse the vodka.

    How do you get your vanilla to even smell like vanilla? When I tried making vanilla, I first tried eight beans and scored them and put Into a pint and added good vodka. Yuck smelled like vodka. So I tried again. This time I filled the jars with vanilla beans ( scored and cut) and did one with vodka and one with brandy. Still the same strong alcohol smell. So they sit on my shelf unused.

      How long are you letting them infuse for? Even store bought vanilla will have a slight smell of alcohol. Could be the quality/quantity/brand of beans, could be time, perhaps more stirring up the jar would help.

      My oldest is two years old, the newest is about six months. I know that it takes time, but I just thought it should be smelling like vanilla by now. @@seedandsparrowhomestead

    would this really work , I have hard time believe the jars wouldn't mold; Mason Jar Pumpkin Bread🎃
    Ingredients
    2/3 cup shortening
    2 2/3 cups sugar
    4 eggs
    2 cups canned pumpkin
    2/3 cup water
    2 1/2 cups flour
    2 - 3 teaspoons baking powder
    1 teaspoon cinnamon
    1 teaspoon ground cloves
    1/2 teaspoons salt
    2/3 cup nuts
    Spray 8 mason jars with non-stick spray
    Directions
    Cream together shortening and sugar, beat in eggs, pumpkin and water. Sift together flour, baking powder, salt and spices. Add to pumpkin mixture. Stir in nuts. Pour mixture into greased wide mouth, pint jars filling 1/2 full.
    Bake at 325°F for 45 minutes. When done, remove one jar at a time, wipe sealing edge with paper towel or cloth, and screw cap on tightly. The heat will vacuum seal the jar and the bread will keep up to 1 year.
    VARIATIONS
    Substitute for pumpkin, one of the following:
    1 bag whole ground fresh cranberries plus 1 can whole berry cranberry sauce
    1 3/4 cup applesauce plus 1/4 cup pineapple
    1 3/4 cups applesauce plus 1/4 cup raisins
    2 cups mashed bananas
    2 cups apricots
    2 cups shredded zucchini
    2 cups chopped fresh peaches

      They don't mold because the herbs are dried.
