those Kasspatzen variation are regular made Käsespatzle on the stove but then put additional cheese on top and then put in the oven in order to gratinate..no frying on the bottom and flipping over And in the pumpkin soup that wasn´t balsamico but in fact pumpkin seed oil that´s how we in Austria serve pumpkin soup and I´m pretty sure at the salad as sidedish for the Gröstl it was pumpkin seed oil as well simply because it is here in Austria a common habit to use pumpkin seed oil for salad dressings as well..it is our "black gold/Schwarzes Gold" in common speech because it is a very pricy special Austrian dressing oil from Styria/Steiermark.....But yes I admit it looks like quite similar like balsamico vinegar but the taste is different.

I went to Vienna last summer and in fall I visited Linz and Salzburg. I never can leave Austria without eating at least once Schnitzel, Kaiserschmarrn and also Leberknödel. That's something you missed out on. It is a meat dumpling with liver which is served in a broth. Normally I hate liver but they are so good. Was a lovely video from you again. I watched some of your old ones lately as well as a inspiration for my own bookings this year. 😊

He created them back in 1890, and they are still handmade from the best ingredients. They do not have different varieties because there is only one "Original". And they are still the very best 😋

The dark stuff on top of the pumpkin soup was actually "Kernöl" (pumpkin seed oil), not balsamic. It is a specialty from Styria but is used all over Austria on salads and also on pumpkin soup. A bottle of this oil, which is so dark it is almost black in color, is the perfect souvenir to give to a foodie!

Greetings from a „Salzbuger“ 😊 Sorry to tell you, that Käsespätzle are not „nudels“! Spätzle are fresh made out of flour, egg, milk and salt. You mix it and take a special sieve, where you let the „dough“ run through in boiling water. You can eat them sweat with butter and cinnamon and sugar, poppyseed… or with cheese…. They are very easy to make! Try it out!

For the bread dumpling, you have to rip it up! Do not cut it. This way it is much more fluffy. If you cut it, the dumpling gets "spindig", means dense.

One thing to remember if you want to try it: many restaurants in and around the state of Salzburg offer it, but often you have to preorder (sometimes a day in advance) because it takes some time to prepare. So, if you make a reservation, also mention if you want Salzburger Nockerl. It is quite difficult to make to stay that airy and puffy. And yes, it is served as a main dish, as are several other sweet options around Austria and Bohemia.

It's surprising how many dishes are similar to what I grew up on....like that one assortment looks like a charcuterie board. The meringue dessert reminds me of Baked Alaska or Pavlova. The portion sizes look friggin huge...I don't know if I could finish anything off without help. 😋🍻
Two of the best brand of Mozartkugeln are Mirabell (Salzburg) Reber (German). Their street weiner was so much better than the restaurant versions! Kaiserkraner is a must. Enjoy the food adventure!!!
Actually, the two above-mentioned Mozaertkugeln are the cheap, poorer- quality types. The higher-quality version is made by the company called "Fuerst".

You guys have actually been going from tourist trap to tourist trap. None of those restaurants you've visited is seen as any good by the locals. Goasn Wirtshaus is a place we go to, but that's because it's on top of a smaller mountain, which makes it a nice finish to a hike and get some beers, you also should have taken the Kasnocken there, they are among the best. Other recommendations: Müllnerbrau, a monastery brewery which is more about the experience. Amazing beer and everybody goes there, young to old, poor to rich, people in fancy dresses, traditional clothing or even garbage men in their working cloth going for a beer after work. Lots of little food stalls with anything you can think of. Amazing in summer with a garden that fits well over 2000 people and the atmosphere is just bustling with people enjoying their time. Fuxn, an Austrian Wirtshaus with a modern flare and amazing traditional food. From Schnitzel the size of a door mat, to the traditional Zwiebelrostbraten (roasted beef with onionsauce), a roasted pork leg (which is a challenge to finish even with 2 people), a good choice of vegetarian and vegan food (which is pretty rare in traditional restaurants) and a large selection of beers. Probably my favorite. Zwettlers, an other traditional Wirtshaus and this one is actually in the tourist centre of the city, close to the Mozart square. Good quality Austrian food with a little bit of a Balkan flare as well. Book a table though, this one is always full. Die Weisse, a wheatbeer brewery with a restaurant. Again one where it's the atmosphere that makes it a place to visit. Decent food and a really good homemade wheatbeer. And again one where you want to book a table.

11:40 "Salzburger Nockerl" would be the complete name. One thing to remember if you want to try it: many restaurants in and around the state of Salzburg offer it, but often you have to preorder (sometimes a day in advance) because it takes some time to prepare. So, if you make a reservation, also mention if you want Salzburger Nockerl. It is quite difficult to make to stay that airy and puffy. And yes, it is served as a main dish, as are several other sweet options around Austria and Bohemia.

It's surprising how many dishes are similar to what I grew up on....like that one assortment looks like a charcuterie board. The meringue dessert reminds me of Baked Alaska or Pavlova. The portion sizes look friggin huge...I don't know if I could finish anything off without help. 😋🍻

Two of the best brand of Mozartkugeln are Mirabell (Salzburg) Reber (German). Their street weiner was so much better than the restaurant versions! Kaiserkraner is a must. Enjoy the food adventure!!!
Actually, the two above-mentioned Mozaertkugeln are the cheap, poorer-
quality types. The higher-quality version is made by the company called "Fuerst".

No balsamic on the pumpkin doup. It must be delicious pumkin seed oil. You have to try vanilla ice cream with a spinkle of this oil ... heaven!

You guys have actually been going from tourist trap to tourist trap. None of those restaurants you've visited is seen as any good by the locals. Goasn Wirtshaus is a place we go to, but that's because it's on top of a smaller mountain, which makes it a nice finish to a hike and get some beers, you also should have taken the Kasnocken there, they are among the best.
Other recommendations:
Müllnerbrau, a monastery brewery which is more about the experience. Amazing beer and everybody goes there, young to old, poor to rich, people in fancy dresses, traditional clothing or even garbage men in their working cloth going for a beer after work. Lots of little food stalls with anything you can think of. Amazing in summer with a garden that fits well over 2000 people and the atmosphere is just bustling with people enjoying their time.
Fuxn, an Austrian Wirtshaus with a modern flare and amazing traditional food. From Schnitzel the size of a door mat, to the traditional Zwiebelrostbraten (roasted beef with onionsauce), a roasted pork leg (which is a challenge to finish even with 2 people), a good choice of vegetarian and vegan food (which is pretty rare in traditional restaurants) and a large selection of beers. Probably my favorite.
Zwettlers, an other traditional Wirtshaus and this one is actually in the tourist centre of the city, close to the Mozart square. Good quality Austrian food with a little bit of a Balkan flare as well. Book a table though, this one is always full.
Die Weisse, a wheatbeer brewery with a restaurant. Again one where it's the atmosphere that makes it a place to visit. Decent food and a really good homemade wheatbeer. And again one where you want to book a table.
The eggs in Austria are always so delicious and the yolk is always golden orange not pale yellow, they must feed their chickens something special.
