How to cook solely with wood splits on the Hamrforge Old Iron Sides / OIS

A quid video of how I like to run my Hamrforge OIS on wood splits/logs. In this cook start with a very small bed of coals and build up Cherry wood on top to light it.
I show how I rotate the logs to ensure a minimised period of white smoke and get back to a clean burn as quickly as possible.
