The "deflector-plate" varies in temp quickly, I think a layer of "Fire-brick" on that plate will help sustain a saturated-heat-bank.

Looks a nice well made piece of kit. The word tank comes to mind. I love cooking on a direct wood flame I’ve got an old metal thing I made up year’s ago I’m so used to it and it makes the best wood fired pizza nothing comes close. It will be interesting to see how it cooks.

They made in the province of Qc in Canada, you can buy them to a place call BBQ Qc. The have many products and one the most impressive is a argentin BBQ style and they have the beast to that it's just insane.

Another great video review Will. Oddly enough, I had never heard of Hamrforge until now and they are manufactured close to my home (300km's by car). I'm surprised that the thermometer is only in Fahrenheit as Canada converted to metric over 50-years ago. I suppose their target market is the US. Still, most things produced here come with both measurements on dial gauges et al. It's a small detail. I concur with your assessment of the pros and cons but would add one more regarding the firebox. For me pulling the drawer out and exposing the lid handle to the heat and flames would be a problem. I would also be concerned about the metal starting to gall on the drawer slide. Is there a stop to prevent it from being accidentally pulled all the way out? I think it would make more sense for the drawer to slide in from the side. Other than that, it looks like it's built like a tank and a nice piece of kit for your BBQ stable!
Small world. I think they are still fairly small. I thought it was weird which is why I mentioned it.
I’m finding today on a long smoke that the handle does get very hot on the fire end and the left side of the grill is much much hotter than the right. There is no stop on the drawer which could be risky lol
But it is so well built and does seem to be working just like an offset

You'd be surprised to learn that most Canadians are still using Imperial units when it comes to cooking.
@@cfl1149 It's true, we tend to be measurement bilingual ;-) I weigh ingredients in grams but our stove uses imperial. lol

Another banging video mate! Out of curiosity what keg machine do you prefer? We have got the Phillips perfect draughty system, but I always find you get a lot of head no matter what I try! Cheers 🍻
I prefer the blade mate it’s a much nicer pint! PD is okay I don’t get too much head on it but you really have to tilt the glass

Nice review Will, I've owned the O.I.S MK1 for about a year and a half (also in the UK), wasn't much info on them back when I purchased it but it's been a great smoker for me. Quite thirsty on fuel compared to my pit barrel and the heavy grills are sometimes a hindrance but on the whole for the money it's a really solid piece of kit and quite versatile with the basket and rotisserie additions. Just added you @smokey_joe_norfolk

Ahaha! It fits really well on that table and is a good height. Wait till you see the cooks that come off of it
