Love the explanations as to why something is called this and not that. Makes understanding Indian cuisine a bit easier. I've seen Indian chefs call a naan a roti while they were making it and that had me stumped.

To make it vegan is actually a pretty easy fix. If you’re ever at a vegan store or organic food shop, there is usually a plant-based dairy section. Plain coconut, yogurt or cashew yogurt would probably do the trick. you just have to check the label to make sure there’s no added sugar so that it’s not a sweetened yogurt. And that’s pretty much the only swap out. I use it all the time for chicken wings korma, and haven’t had a problem so I think if you follow the recipe with the plant based yogurt, it should be fine.

I can still make it for my family. Being lactose intolerant doesn't stop me from using dairy whenever necessary, but I do envy people who can just eat without restrictions 😅

I try not to eat fried foods, and I don't deep fry at home- but I love bhajis! Do they work in an air fryer?

@@FoodwithChetna why wouldn't it work? There are various kinds, oats, coconut, soya, almond, I'd start with the coconut one, coconut milk is often used in (South?) Indian recipes. So maybe you do not get the same taste, but I think it wouldn't be too awful 🤣
@@IvanIV05i did some quick googling and yes, you can use vegan yogurt BUT, it’d definitely exceed the 30 minute limit because vegan yogurts, especially those made from soy, almond, or coconut, can sometimes curdle when boiled. To prevent this, it’s best to cook the kadhi on low heat and avoid bringing it to a rolling boil. There could also be variations in consistency and taste so although it would make a kadhi, I don’t think it could replicate the classic khadi (I’m assuming, I’ve never tried before though 😅)
@@thepotatobich I googled, too, apparently you can cook it, but it's better to use a full-fat yoghurt, cook it on a low heat (but that's the same as milk one), stir it frequently and add starch, it should stabilize it. If and how it tastes is probably another matter. But if it's such a hassle, maybe it would be better to use coconut milk and a bit of mango powder to add acidity that comes with yoghurt.
@@thepotatobich my cousin is vegan and makes the yogurt from curdling the soy milk with lemon juice and makes the gujerati kadi and dhokla. I am yet to try it.
I also think we can make a low calorie version by air frying the pakoras, although a bit of a challenge but can be done, very important to also encourage avoidance of deep fried food

Why do you want not so much color on the onion / herbs mix? I always thought that more browning = more taste?

Mam why your kadi didnt get curdled since u were not stiring it till it comes to boil. i mean we should stir it continuesly till it get boiled..
I don't know why I've never made this, the deep frying puts me off, but I make falafel almost weekly, need to just buy some gram flour...

What can I use instead of fresh curry leaves absolutely no chance of getting anything like that where I live on the south coast of England.

Hi, i see them in Sainsbury’s. You can find them where the fresh herbs like parsley and mint are x I hope this helps
Here in Auckland, New Zealand you can get them at most Indian/Asian supermarkets, my local fruit and veg shop 10 mins walk from my house has them. I'm sure every decent size town in England has somewhere you can get them.
