The American cheese is key! It contains sodium citrate, a common food ingredient that prevents that fats and solids in your cheese from separating. Without it your cheese will end up gritty and oily. With it, you'll end up with that silky smooth cheese sauce you're looking for 🤙
Fun fact Kev, depending how much American cheese you use you may not have to make a roux. American cheese contains phosphates, both calcium and sodium which are both preservatives and emulsifiers. Eventually you’ll exceed its emulsifying power though. I’ve been tinkering with substituting American cheese for a roux and haven’t found the perfect combo yet but it always turns out decent!
I use a very similar recipe, but I have a secret ingredient of Chick Fil A sauce instead of mustard. Adds a little smokiness and goes great if you use smoked gouda as one of the cheeses
