The Yiga are hands down my favorite enemies in the game, specifically the Blademasters. I just love the Yiga Clan as a whole, I love everything about them. The designs, the backstory, the freaking attack animations from all Yiga enemies - I love it all. They're my absolute favorite. I also love the lynels. Again, the enemy design is what I absolutely love about them. They look so cool! And the size difference between the lynels and Link is something I really like. Their out of battle animations are a bit stiff, though. I wish lynels had more idle behaviors aside from just patrolling their territory. Even just having them rest on the ground like IRL horses do would be nice.
I just finished replaying Skyward Sword, and when you said "bees", it reminded me of how much Breath of the Wild suffers for lack of a bug net. What were they thinking? Skyward Sword is a really great game, by the way - I forgot how good it is.

I love moblins and lizalfos. I just love how the art of this game is that everything is so beautful and I like the moblin's pig noses and that pig grunting and how I can do them a 50 bomb parry streak non stop and they just get angrier. What I love about lizalfos is how fast they are and also how silly look when you stand still in front of them with their mask. I like to hang out with them and jumping when they jump. I love this game
Once you learn how to dodge them though they're not hard anymore because of the flurry rushes. Urbosas fury and stasis+ also make any threatening attack not effective. Its a bit sad that the enemies are so underwhelming
The Molduga one is great, but I think the more fitting movie would be Tremors, because I think the Moldugas are actually based off of the monster in that movie. They hide under the ground and attack where they feel the vibrations of movement.
Thunderblight Ganon is my favorite enemy for the simple reason that bosses/mini bosses need to teach players something. Some games just have bosses that are considered hard because of strong attacks, for example. Thunderblight taught me how to flurry rush, it has a really cool design and I think it’s bossfight is the most creative. The only other enemies that taught me something are guardians (parry ftw), the other blights just felt basic and Calamity Ganon is just all the blights mashed together.
Guardian stalker one was TOO REAL. I looooove fighting them and have basically perfected the parry, but my brother can still play the music from RUclips and jumpscare me😭😭😭
lynel killing just gives you satisfaction, they are easy after a while but doing those flurry rushes, fighting clotheless, eventually getting that headshot and killing the lynel from their backs, man its good

I actually thought Calamity Ganon was fun to beat. Many people think it was a lame boss fight, but I personally found it to be an epic battle.
