    This is one of my favorite recipes to cook. I love it baked with breadcrumbs and a little bit of crispy pork on the top from what sticks out. Yellow mustard or mustard powder is a must for my baked Mac.

    Señor. I made this for my wife, my two daughters, and Mother-in-law two nights ago. 🎉🎉 Baller man.
    I followed the recipe and obviously it was way too much, but dat gum it…we shared it with friends, and froze the rest. 👍🏼

    I used to be a cheese snob. I was always hating on American Cheese. Now I know it brings that perfect zip to a burger. A slice of American along with some cheddar or pepper jack...heaven! Also, mac n cheese with chili on top. Don't knock it till you've tried it. Perfect for Fall.

    Cool tip I learned, if you're using the velveeta and the american you can skip the flour and the roux. The processed cheese keeps everything real stable by itself even in the oven, as long as you have enough of it.

      There are plenty of naturally lactose free cheeses. Just google which ones, usually it’s aged cheeses and sharp cheddars.
      You’d be surprised how much cheese you can still eat! Haha

    Adding a half cup to a cup of real parm cheese to your cheese mixtur during the last 5 mins of cooking also adds a nice zing to your cheese sauce

    Yum! Throw the leftovers on a pizza crust. Use the BBQ sauce as the sauce and top it when it's done.

    I used to add jalapenos juice to the cheese sauce for the frat house I served. They freaking loved it. Would chant mac and cheese when I delivered. (The frats here dont have chefs only sorority houses do; so we catered to them their meals) .

    I usually go straight yellow mustard but recently have been trying grey poupon. The wine in the mustard is a nice enhancer.

    Velveeta is one of the best cheese to cook classic comfort foods. It's a great base sauces or toasted sandwiches. I use cream cheese as a substitute for a more neutral flavor.

    Kev, you don't need any excuses to use American cheese in mac n cheese. Used that aged stuff and the oil'll just separate, you gotta used that processed stuff or it's not real mac n cheese!

    Next time you make Mac and cheese please grate some nutmeg (you don't need much) into the sauce along with your salt and pepper, it's gonna blow you away! Also if you can get hold of Gouda and gruyère they're great for this dish.

    Gulden's Spicy Brown is the best! That was a righteous cheese sauce.
    People who hate on Velveeta and American cheese have never had water and sleep for dinner, and it shows.

    Those "twirly noodles" are called macaroni (or macaroni elbows), it's where the "mac" from mac n cheese comes from.
    If you don't use macaroni in your mac n cheese then it's technically not mac n cheese, it's just cheesy pasta (or >insert pasta name here< n cheese).

    Hey Kev! I respect the Velveeta, but I saw another video that said you can make sodium citrate(the additive in process cheese that emulsifies cheese sauces) by mixing lemon juice and baking soda. I was wondering if you have ever tried that? If not, it would be an interesting experiment to see if it works and also how it tastes.

    Wow, that looks good 🤤 I’ve never tried actual mustard; usually a combo of Colmans and cayenne for a spicy kick, but I may have to try some Guldens. I always combine some Velveeta with my “real” cheeses; nothing beats it for creamy, melty goodness.
    I gotta ask, though: How many people are you cooking for?!?Thats a LOT of food! Or are you just as into leftovers as I am?? 😅

    Why the velveta hate?? Many a time my mom used to make homemade Mac with a velveta rue. But the mustard is a must for the flavor!! If you like, cayenne adds just a little heat without blasting you and it works amazing.

    Fun fact: California Pizza Kitchen uses whipping cream and velveta to make their max and cheese. It’s the best Mac I’ve ever had, ever in 23 years… so Kev’s right.
