Cool tip I learned, if you're using the velveeta and the american you can skip the flour and the roux. The processed cheese keeps everything real stable by itself even in the oven, as long as you have enough of it.
There are plenty of naturally lactose free cheeses. Just google which ones, usually it’s aged cheeses and sharp cheddars. You’d be surprised how much cheese you can still eat! Haha
I used to add jalapenos juice to the cheese sauce for the frat house I served. They freaking loved it. Would chant mac and cheese when I delivered. (The frats here dont have chefs only sorority houses do; so we catered to them their meals) .

Next time you make Mac and cheese please grate some nutmeg (you don't need much) into the sauce along with your salt and pepper, it's gonna blow you away! Also if you can get hold of Gouda and gruyère they're great for this dish.

Those "twirly noodles" are called macaroni (or macaroni elbows), it's where the "mac" from mac n cheese comes from. If you don't use macaroni in your mac n cheese then it's technically not mac n cheese, it's just cheesy pasta (or >insert pasta name here< n cheese).
Hey Kev! I respect the Velveeta, but I saw another video that said you can make sodium citrate(the additive in process cheese that emulsifies cheese sauces) by mixing lemon juice and baking soda. I was wondering if you have ever tried that? If not, it would be an interesting experiment to see if it works and also how it tastes.

I always combine some Velveeta with my “real” cheeses; nothing beats it for creamy, melty goodness. I gotta ask, though: How many people are you cooking for?!?Thats a LOT of food!
