Stir with a wooden spoon, gradually adding more water until the dough starts to come together. Using your hands, finish mixing to ensure the dough is well combined. It should be quite a wet consistency. Note: do not knead or overwork the dough at this stage. It should be just mixed, 3. Cover the bowl with cling film and allow the dough to rest overnight. It should double in size. 4. Once the dough has rested, generously flour a surface, pour the dough on, and work it with your hands until it forms a smooth ball. It should be quite soft, so you can incorporate as much flour as you need to help it form a nice round shape. Divide the dough into 4 pieces, and fold the corners of each piece in, so that each one forms a mini ball. Place each dough ball in an oiled pan to rest for another 30 minutes. (I know there's been a lot of resting, but this is the last time, I swear) 5. Preheat a fan forced oven to 250°C with a pizza tray inside. 6. Lightly sprinkle semolina on a pizza peel (or round chopping board) then using your hands, take one piece of dough and stretch it out to form a pizza base. You should be able to stretch it so that the center is very thin and almost opaque. Be careful not to tear. 7. In a small bowl combine the tomatoes, sugar, salt and pepper then stir. Using a spoon, spread it over the pizza base in a thin coating. 8. Pull a-part the burrata, and add half of it on top of the pizza. 9. Slide the pizza off the pizza peel (wooden board) straight into the oven and onto the hot pizza tray. Allow it to cook for approx 10-12 minutes. The cheese will completely melt and the crust should puff up on the edges. 10. Remove the pizza then place on a serving tray and add the final fresh toppings. Lay down pieces of bresaola, the rest of the burrata, a handful of watercress, some chilli flakes, and a drizzle of olive oil. It’s your pizza, so add as little or as much as you like. 11. Slice, serve, and enjoy all that hard work you put in. It will be well worth it.

I have noticed, that lady always gives very low numbers to a tough competition, if you are chef your ratings should be close enough if you understand what a good pizza is, if 2 rate it 9 and you rate it 6 means your judges are not calibrated or CHEATING...

True, Italians love simplicity, they don’t want to complicate things or add unhealthy fattening additives. For them it’s their day to day staple alongside pasta, If Italians eat loaded up extravagant dishes like in America or Australia and other countries that serve exaggerated "Italian" food , they would succumb to heart disease. Italians are mindful and intelligent people, so they’re experts at making their own cuisine accurately as they’ve mastered the techniques they experimented with for ages.
Lived in Italy for 4 years, and yes that pizza looked like true Italian pizza. Makes sense though, was made by an Italian man after all. God I love pizza in Italy. Sadly I live in america now and the pizza here isn’t that good.

It just came down to personal preference - she said she liked loaded pizzas so she rewarded the one with the biggest toppings the most stars and the ones with the least topping the least. She was consistent with her ratings so I don't think it's as malicious as you're making it out to be. However, the first pizza is something I would have given nine stars to. Looks like my style.

Okay people, i am reading the comments and a lot of hate going around for Italian chef not winning. As a chef working in Michelin Restaurant, I will give my 2 cents. I believe that this was a competition between chefs, where each chef made pizza with their own twist. Only the Italian chef went traditional way, he made the pizza which any decent chef for sure knows how to make. That might be the reason he scored a bit low. Generally even for me original Napoli is my favorite style of pizza, but if I am going into a competition I will go with something new not traditional. As you have been always seeing in shows like master chef. If they start making only traditional recipes, will you guys watch it with same interest? It was a very fun video to watch, seeing everyone's culture represented in form of food, and I love all 4 chefs.

It just came down to personal preference - she said she liked loaded pizzas so she rewarded the one with the biggest toppings the most stars and the ones with the least topping the least. She was consistent with her ratings so I don't think it's as malicious as you're making it out to be.
However, the first pizza is something I would have given nine stars to. Looks like my style.

What about that Italian guy, Ryan who gave Will a 6 or 6 1/2 out of 10 when he made it seem like Will's was really good but just "too cheesy?" and it wasn't "refined enough?" It's pizza. Most people like lots of cheese on pizza and who needs it to be "refined?" Its something we eat when watching "the big game" or when "chilling with friends" in Most cases. I preferred the sound and look of the simple margarita pizza. The chilli oil eggplant focaccia didn’t seem like a very harmonious combination.
Okay people, i am reading the comments and a lot of hate going around for Italian chef not winning.
As a chef working in Michelin Restaurant, I will give my 2 cents.
I believe that this was a competition between chefs, where each chef made pizza with their own twist. Only the Italian chef went traditional way, he made the pizza which any decent chef for sure knows how to make. That might be the reason he scored a bit low.
Generally even for me original Napoli is my favorite style of pizza, but if I am going into a competition I will go with something new not traditional. As you have been always seeing in shows like master chef. If they start making only traditional recipes, will you guys watch it with same interest?
It was a very fun video to watch, seeing everyone's culture represented in form of food, and I love all 4 chefs.
I am still going to give it to margarita pizza. That's the actual pizza. No offence to other chefs except for Ryan.
Perhaps they weren't the most traditional, but they were still definitely pizza and it can be fun to get creative with different toppings! 🙂

The restaurants that popularized these cuisines in foreign countries were typically owned by immigrants. They may have developed new styles and employed new ingredients, but that is hardly new. Saying a dish isn't authentic discounts their experiences and their heritage.

She only won because her scores for the other pizzas were so much lower. You need to have each judge rank the other pizzas instead of using points because her best score for, in her words, "A really delicious pizza" was an 8/10, while the others were giving 9s and 8.5s everywhere

Giulio - that base looks amazing, a good base is %70 of what makes a pizza and I really want to try that one because sourdough is always good.
