Not bad , I use garlic , scallions, lemon juice, salt,pepper chilli flakes. Parsley , Thyme marinade. then tempura flour mix ( replacement for egg) and fry, garnish is cooked onions and bell peppers with vinegar some sparing brown sugar. A West Indian recipe. I fry sardine fillets all the time but because I prefer a crispy bite, I do not use egg. I make like a tempura batter instead

I wonder if this will work with canned sardines.
Canned are already cooked and contain brine or water content, not a good idea.
