    ****** DINNER RAW VEGAN CHILI RECIPE ******
    NOTE: If you don't have a dehydrator (or don't want to use one), just leave ingredients out or in a warm place (like warm the oven and let them sit on top - not on a burner - we just want them not cold from the fridge)
    1) Chop a whole zucchini, and about 4-5 tomatoes into small cubes and place on a dehydrator sheet for an hour or a bit more. You can also include red onion if you want, just a bit.
    2) Chop mushrooms into small cubes and marinate in a little bit of coconut aminos (optional), lemon juice, chilli powder, cumin, oregano and garlic powder. Place marinating mushrooms on dehydrator top to warm up. Place about 1/4 or 1/2 cup bean sprouts (lentils and peas) in a bowl and put on dehydrator top too to warm up.
    3) Chop a red bell pepper - half of it chop in diced pieces (place on dehydrator as well) and the other half will be for the sauce.
    4) Blend 1/3 cup soaked cashews with the juice of a lemon and 1 Tsp apple cider vinegar. Add a SMALL amount of water to blend but keep it fairly thick. This is the sour cream. Once blended and super creamy, place in fridge for an hour or more.
    5) Right before you make the sauce, place drained mushrooms, zucchini, tomato, pepper and beans all in one big bowl.
    6) Make the sauce. It's half that bell pepper, about 4-5 tomatoes, 8-10 pieces of sun dried tomatoes (no oil), 6 dates, 2 cloves garlic, small piece of chilli pepper, 2 tsp chilli powder, 1 tsp smoked paprika, 1 tsp dried oregano, 1/2 tsp salt, 1/2 tsp cumin. Add water TO CONSISTENCY - about 1/2 cup but play around with it. Blend sauce for about 5-6 minutes on high in the vitamix. It will get warm. Measure temperature with a meat thermometer, don't let it go over 115F.
    Adjust seasonings as you go.
    7) Pour sauce into bowl with veggies. Stir. OMG YUM
    8) Transfer to serving bowl and get sour cream from the fridge. Put a few scoops on top of your chilli and top with green onion, red pepper flakes and smoked paprika if desired.
    9) Go to heaven eating it. And then wish you made more. :)
    Hey friends! Just another What I ate in a day video! Now keep in mind these are filmed throughout a day and I don't end up editing them until way later, but you get the idea!! :)
    I also take a B12 and Vitamin D supplement - brazil nut for selenium and today a tbsp of nutritional yeast
    I am healthier and more nourished on this lifestyle than on anything I have every been on. No amount of convincing will sway me because the energy and health I am enjoying far outweighs anyone telling me I need meat/cooked foods.
    P.S. I also will never hit the 100% nutrition goals because I do not follow the recommended fat intake or sodium intake. This is my choice because I believe in eating only 10% calories from fat (or about 200 calories of fat - which isn't as much as we think it is) but I get everything else that I need no problem!     Great day to be alive!!!! I just made this chilli , almost raw, heated through on a very low light, only been vegan for a couple of months, first meal that I have thoroughly enjoyed making and eating. The sauce with the dates, impressed!!! The cashew nut sourcream is off the chart 😋😋😋 Thanks Lissa for making me happy 👍

    I like it...just found you..... so different from other raw recipes in that you have done warmth going on and the spouts are something I want to have more of bit only if I do it myself for quality control! Thank you for sharing!

      You're welcome!! Yeah I tried to make it as different as I could, so fun to create new recipes! And bean sprouts are so important too, the blue zones eat lots of legumes, might as well eat them raw and living!

    I made this tonight and man o man. Im not gonna lie i had doubts but boy was i wrong. I wouldn't change a thing except maybe omit the bean sprouts thingys. Honey this recipe is so good 😋.       No, because I take care of my teeth :) It's funny when people worry about fruit but 91% of the population has dental issues and don't even really eat lots of fruit, let alone eat vegan foods.

    You have to try this recipe of raw vegan tomato sauce: tomatoes (without seeds), lots of dates, parsley, garlic and sundried tomatoes. It's divine!

    I actually think this is the recipe I would like to serve to my grown, moved out of the house daughter. This might convince her that my eating lifestyle is not so bad. Thank you , Lissa. Just a thought I should probably keep to myself: but will you ever stop the "fruit on" signature-closing? Ugh. Can't explain the aversion....sorry.

      LOL cuz it feels so weird not to end it that way - I feel really awkward without saying a tag at the end. I do know lots enjoy the fruit on though.       Actually my husband and I split up. No worries though we are still friends, it's for the better for both of us. He was plant based and some raw but not lots. I dunno how he eats now though - I don't think he's plant based anymore but he might still eat mostly like that...

      +Jennifer Carrier Thanks!!! It's a Salton Dehydrator... I think it was maybe $40 - It's not the greatest and the heat is uneven, but I don't ever fully dehydrate stuff so I just use it to warm things up a little past room temp for certain things. I don't use it all the time.. maybe once a month? Or twice in this case making it again... hahah!

    With the tomatoes, pineapple, spices, onions, and peppers, how do you not get heartburn? GERD runs in my family and eating that many citrus-y, spicy, and tomatoe-y stuff in one day always gets to me :/ Any advice?

      Maybe stick with sweeter fruits and less spices, or use less in general of the spices. I have ZERO issues with anything like that, but I used to (not nearly severe enought to be a problem though)

    Hi, your food looks delish. I'm a new vegetarian/aspiring vegan and I feel so confused about protein. Healthy eating for me used to be a piece of fish or chicken with a lot of steamed vegetables and perhaps some whole grains. My protein goal was around 50 grams (based on my weight). Now I'm replacing animal meat with beans, grains, and soy --all which need to be cooked. You ate 6.5% protein on this day --any idea how many grams that is? I'm used to protein ratio being more like 30%. Can you (or anyone) point me to the sources you trust to confirm that this diet contains adequate protein for you? And when you say this ratio works perfectly for your body, what are you basing that on? Thanks, peace, love!

      +Angela Simonelli This day was I think 55 gm protein. I don't care about my protein levels. Read "Proteinaholic" by Garth Davis. Eye opening on our obsession with protein. It should only be 10% total calories. You can also read The 80/10/10 Diet by Doug Graham. Same thing. 10%. We don't need that much really.

    I don't have a dehydrator, so what extremely low temp in the oven would you suggest for the veg, and for how long? This looked delicious! I need something to help draw me back from killer detox, I think this would be a lovely meal for that. I'm getting crawly feelings under my skin (from what I believe is fungus or morgellons :( )

Just keep them on the top of the oven. You just want them warm and not hot.

      Nope :) To me it's no different than cooked corn, just a little chewier. I prefer raw corn because it tastes fresher

      Usually, you go to "Add food", type the respective vitamin and choose the supplement that is the closest to the one you are taking (in terms of dosage), and add that supplement to your daily food diary. But from what I saw on Cronometer, the only supplements are one of vitamin D3 and one of vitamin B12, and the rest are just foods and juices fortified with vitamins. So there's not much to choose from.

      Yeah I take them when I remember to take them and for what I eat videos cuz I remember easier haha! B12, D3, and sometimes probiotics, K2 or Iodine... but those are even less often

      I currently own a 9 tray Excalibur. I went through about 3 Salton dehydrators in my early days as a raw vegan and didn't want to buy another one so I just invested in the Excalibur. So much better!

    For your smoothie next time maybe try freezing your bananas and then don't use ice cubes.

      You’re welcome! It was actually the reason I bought a dehydrator and made this a lot a few years ago when I went through a really bad time in my life. This evening I was thinking about this chili and now I have to make it again this week! 🥰

      +RJSn2 I think that is a good idea to get first. Other good ones to read after (I just don't bother with the cooked food suggestions since I don't eat them) but Proteinaholic by Garth Davis, The China Study by Colin T Campbell and How Not To Die by Michael Greger

      for the chili? I would just leave it out and marinate it on the counter. Or warm it up on low in the oven if you aren't concerned with it not being legit 100% raw. At least it'll be close. Use the blender to warm up the sauce at least - just don't leave stuff in the fridge or it'll be freezing and not as authentic.

    Is apple cider vinegar considered raw?

      Says raw on the bottle. I'm also not a purist so I'm not crazy strict with little things like that and spices. I still eat coconut aminos, nutritional yeast, maple syrup and cashews all which aren't raw. Spices aren't raw either unless you dry them yourself under 115F. But really... doesn't make a big difference because every day I eat more vegetables than I used to eat in a month. A little apple cider vinegar isn't going to derail me. Potatoes on the other hand.... No. HHAHA

      I will never consume oil. It’s pure fat. Never ever. But I will eat tahini, you can get raw tahini. Pumpkin seed purée in a can I’ve never heard of. Doesn’t sound like something I’d choose. I try to eat very low fat.

      +Chrissy White LOL! My husband MAYBE had 1-2 cups worth. I ate pretty much the whole thing. When I make it, I eat ALL of that... if not more ;)
