FullyRaw Vegan Chili!

  • Raw vegan low fat chili! Hearty, satisfying, rich, and fun, this bowl of epic deliciousness is a special treat to share with all your family and friends!
    Enjoy this recipe in front of a movie or game day and share with that soon-to-be happy tummy of yours! It's low in fat and SO savory and satisfying you won't believe it! Be sure to get the UN-salted sun-dried tomatoes if you aren't dehydrating them yourself.
    Ingredients for the Raw Vegan Chili:
    -Approximately 3-4 cups of ripe tomatoes (cherry, grape, or roma tomatoes)
    -3 to 4 cups of soaked and drained UN-salted sun-dried tomatoes
    -Another cup of sliced cherry or grape tomatoes
    -1 cup of FullyRaw corn
    -1 cup of diced zucchini
    -1 cup of diced celery
    -1 cup of diced red bell pepper
    -half a cup of chopped carrots
    -half a cup of chopped green onions
    -1 cup of sliced mushrooms
    -half cup of red onions
    -half cup of diced cilantro
    -quarter to 1 cup of diced avocado (1 avocado)
    -1 diced jalapeño pepper (optional)
    -Optional: few garlic cloves
    -Few leaves of fresh basil
    -Tablespoon of fresh chili powder
    -Paprika
    -Sage
    -Cumin
    -Thyme
    -Optional for more spice: cayenne pepper!

    Just made this tonight!! Major Hit in my home even my 8 yro Loved it. I left out the Cayenne pepper and Jalapeno it was Still really spicy. labor of Love, We were all working in the kitchen to chop up the ingredients!!

    Omg, so good! I didn't make as much base because I'm poor and cannot afford 3 cups of sundried tomatoes🙈 so I used 1/2 cup with 2 Roma tomatoes, still made a thick base. I then added a date to enhance the flavor. Instead of chopping the veggies, I processed them with avocado and like I said omg! So good, will be making again!

    I made this last night and it is amazing! I added a few more spices but I was really impressed. My hubby ate his on top of a baked potato! The key in my opinion to this recipe is the sun-dried tomatoes. It gives it a savory robust flavor. Not sure it would taste as good without those bad boys!

      FullyRawKristina Where did you get your Sundried Tomatoes? Out of everything here, those are my only concern, as they are pretty expensive. Where I'm at in Texas, we only have wal-marts and HEB's. The recipe looks so delicious. lol

    I was just thinking on how I wanted some yummy Chili on this cold night and here you are with this incredible Chili oh so yummy recipe! I am beginning to realize than nothing is off limits in creating delicious raw dishes that could not even come close to comparing or missing the traditional cooked dishes!     I think it would be better if you mixed the spices and tomatoes together in the blender so they get mixed evenly. That looks really tasty though, maybe I'll make it this summer from my own garden so that the costs are manageable.

      Never mind what I said. Omit the avocado and let it sit out in the hot sun for a few hours.
      If it’s not hot then too bad so sad

    This is the most amazing chili ever!!!! It has so much flavor and it taste like actual chii, not beans and soup like most vegan chilis. Great Recipe Kristina!!!!

    On Feb 11th I started my fully raw journey! :) I am so happy and excited, and feel GREAT!!! I just want to tell you are a true inspiration to me, and I truly appreciate that you live fully raw, and don't show us recipes using things that aren't raw. I am 100% raw, and am working on getting my nut and seed intake down, as I am currently more than a handful. But it is raw, so I am not beating myself up too much. A million THANK YOUs to you! You have changed my life more than you can imagine, and quite frankly, saved it.

    I am not raw or even a vegan, but this looks really really good!!! I am going to have to save this one. I feel like it would go good with some tortillas for those comfortable with eating cooked grains.

    Ok, so i did this for the second time today, and my girlfriend and me are SOOO Much in love with this chilly. I just add a little bit of avocado to the mixed tomatoes, that makes it a little bit creamier. But it's amaaaazing! you are an inspiration Kristina.     I just make the base and eat it with cos lettuce, it is so addictive nice!! I should actually just complete the full recipe someday though lol but the texture and flavour of the combined tomatoes is heavenly, have added a couple dates and figs to the base too..

    Kristina, this was AMAAAZZZING!
    Crunchy, tomato base, every bite was filled and bursting with flavours! I can have this every night! Had it first at room temperature then straight from the fridge, it didn't change the texture at all! Wow!
    Possible recipe can be shepherd's pie! :-) You have already done lasagna, which I will be trying soon!

    thank God for weekends b/c i made alot of the recipes over the weekends and it worked out good cause i usually have enough to eat for work lunches for the week - thanks for that! anyway, i had this on Saturday night - when i would normally eat Chinese or Subway. for someone who normally likes chilis heated this was...different, definitely different. not as bad as the minestrone soup (cause i don't like soups). very tomato-y but i like tomatoes, not really sure i care for the carrots but i did like the way what i had came together with it...i may try it again, though

    this looks so yummy!! my mouth is watering just watching the vid lol. Gonna try and make this tmrrw! Although I will probably add the jalapeño in the blender with the base/sauce that way it gets mixed in evenly so i'm not eating chunks of jalapeño but that just my preference lol. Love your recipes! it would be kinda cool to see more lebanese recipes!! I still use your tabbouleh recipe cause its that good lol.

    I wonder if I would put the mushrooms in with the tomato base, to "beef" it up. In any case, this looks amazing and I can imagine how it would taste (the flavor combo is a fav of mine). Can't wait to try it out~ I may even squeeze some lime on it before eating!

    Eating raw is great for summer, but what about when it's cold outside? I need hot cooked food for winter!

      raw doesn't mean cold..warm it on a dehydrator or use the warm setting in rice/pressure cooker..not exceeding 118 degrees

    Come on now, who don't like vegetables? If you don't like vegetables, go back to the Mars where you came from. Before Christina, I was just eating a regular vegetable every now and then, but now that I switch for the new years, my body feels amazing. I actually want to get up in the morning and i also have so much energy throughout the day!!

      Absolutely nothing, thank you. Your raw food message is fine, but using spices in uncooked food (specifically un-fried) means that the piquancy of the spice is not released. Pointless. You're just playing games.
      If you must give advice, tell folk to eat fruit. Or whatever else you feel like saying.

      I would love to see more recipes that incorporate greens - more than just kale, though kale is good :) And more recipes with some lesser used veggies and fruits. Can you eat winter squash raw? Do you eat cauliflower and broccoli raw - or other brassica's? And how about some wild foods, that would be fun! :) I enjoy your videos, and the recipes I've tried have been excellent. The strawberry shortcake didn't look as pretty as yours did - it kind of collapsed - but it tasted good - made it for V-day :)

    Very good, I mix the herbs and spices in the food processor with the tomatoes so the flavours blend more. I make a similar mix for vegan tacos on lettuce leaves.

    So here is a question I have. If raw living and eating is a better way, why imitate non-raw items? it is almost like saying I hate soccer and then create another sport that "Looks like" Soccer right? is it because non-raw food is actually tastier and indeed better for you or is it because you miss non-raw life and want to imitate it? Either way you can only answer that!

      It's because most people won't try a raw vegan diet because they miss the foods they've always knew. So having an alternative to your favorite food that is healthy makes you more likely to try since you can still have somewhat of that flavor you love. I can vouch for that as a new vegan, I used to love pasta, now I eat the healthier raw version which is zucchini pasta. I still get my pasta, but healthier :)

      Zucchini pasta is not pasta... you know that, it does not taste or even look the same when raw. I completely agree with steven MANMAN - why would you imitate? there's so many fruit and veg which you can eat and enjoy fully raw diet, why bother making up all those recipes? Plus why would you want to convert people into raw vegan diet so much? and also does Kristina actually eat like this? I suspect she mainly eats fruit and salads. just dont get it. She's not even showing the eating part - only one tiny bite and a lot of umm ahh mmm yeah OMG this is sooo good.. well if it is I would like to see her eating the whole bowl :D

      It's all about variety and making the food exciting to eat. If you eat chicken, you're not gonna want to just eat the same chicken everyday. You're gonna want fried chicken, baked chicken, chicken parmesan, chicken alfredo, etc. Give her a break! Just because she's eating raw doesn't mean she just wants to eat salads and fruit all the time. That's boring.

      Maybe, maybe not! Have you ever made any of these recipes? I am always amazed how much food tastes when it is made this way. Although no one is around when I do my taste test, the food and the process of putting it together is really worth it. If she bugs you so much with her ways, don't watch her. :)

      There is no essential nutrient in meat, grains, legumes, or dairy that is not also available in fruits, vegetables, nuts and seeds, and in a form that is easier to digest.

    We had a much softer version for lunch. Actually, it was more like a salad... I had so many fruit in a smoothie for breakky, and another very green salad for dinner with Kristina's over loved "raspberry "nice cream". What a rawing day!! yay... I can't believe it took me 5 weeks now (thanks to the challenge) to eat fully raw day after day! Thank you Kristina for leading the way. Hugs to you

      People have diverse physical, literal differences in taste perception. Don't be so judgy. I feel exactly the same about tomatoes so I wonder if I could actually make this just with red peppers and....idk, something else "creamier." Tomatoes are the only food I truly can not eat without gagging. I gag just smelling them, despite very genuine attempts to overcome it.

      +R!na a bean option could be green or yellow beans or peas removed from the pods. Those can be eaten raw.
      One of the reasons I would never go permanently raw is because you would have to eliminate so many nutritious foods such as beans, oats or yogurt. I understand that raw foodists don't wanna cook vegetables so they get all of the nutrients; but if you refuse to eat beans, you won't get any of the nutrients at all.
      Half of something is better than all of nothing. Feel free to add beans to this recipe.

      MeLLi B Because she doesn't need them. She gets the same nutrients from raw plants , nuts , seeds, and fruit. Not to mention a lot goes into preparing beans. You have to soak overnight, and they take a long time to cook so it's just easier to eat other foods.

      I wouldn't say that, beans are easy to cook in an electric pressure cooker, just dump them in and it's ready in 10 minutes. You can also get the canned organic fully cooked beans.

      vegetarian, yes...raw, no. I am not fully raw but I do love raw veggies and fruit. I have naturally preferred them over cooked food since I was a child. Beans are not easily digested in raw form. Besides, as any Texan knows, chili doesn't have beans...raw or not ;)

      Yea so the only "cooking" that needs to be done is to soften the indigestible parts, I don't understand what's so "nutrionally lacking" if you don't eat those. In fact, any diet that prevents you from having beans because of "nutrients lacking" is a bullshit diet, in my opinion because beans are unbelievably healthy, as are other legumes. Please don't be so misinformed as to restrict yourself away from such a vital food source xP

People are more likely to listen to what you're saying if you present it to them in the right spirit. I do believe you have a point. I agree with a lot that you've said. But please, lose the edge.     I´m just having leavy greens with a sauce made from:
    - sund dried tomatoes (slightly salted, didn´t get others)
    - cherry tomatoes
    - pitted dates
    - a little water to blend up
    and it´s so lovely - very recomendable!!!

      Yum! I've just had that as a soup a few days ago.
      Just blend the ingredients above and pour into a bowl. Then chop up bell pepper, green onions, celery, cucumber, zucchini etc. and put them into your soup.
      Sweet 'n' savory and sooooo DELICIOUS!!!!!!
