  • Chicken Korma:
    I made a batch of chicken korma. I shared some with my neighbors and froze some. I made this medium spicy. Go easy on the spice if you like it mild. Feel free to skip the cashews.
    Ingredients:
    For the chicken:
    3.4 pounds chicken breast cut into medium pieces
    2 tsp salt
    1/2 tsp turmeric
    1 tsp chili powder
    2 tsp Kashmiri chili powder
    2 tsp garam masala
    1/2 cup greek yogurt
    2 tbsp olive oil
    Olive oil spray
    For the curry:
    1/2 large red onion chopped
    3 Roma tomatoes chopped
    1/3rd cup cashews
    1 inch ginger sliced
    1/4th tsp saffron
    1 tsp salt (adjust to taste)
    1 tsp Kashmiri chili powder
    1/2 tsp turmeric
    1.5 tsp garam masala
    2 cups water
    2 tbsp olive oil
    1 tsp cumin seeds
    1/2 cup cilantro
    Here is what I did:
    I took a bowl, added chicken
    I added salt, turmeric, chili powders, garam masala, greek yogurt, olive oil and mixed with the chicken
    I put this in the fridge for an hour
    After an hour I took the chicken out
    I turned the oven on and put it at 375
    I took a baking tray, lined it with aluminum foil
    I coated it with olive oil spray
    I spread the chicken on the baking sheet
    I put the chicken inside the oven and baked it until done. It took 16 minutes
    Making the curry:
    I took a medium pan and put it on the stove on medium heat
    I added 2 tbsp olive oil. I let the oil heat
    I added cumin seeds and let them sizzle
    I added sliced ginger and cashews and let them brown a bit
    I added onions and let them brown a bit
    I added chopped tomatoes and let them turn into a mush
    I let this cool a bit and blended with a cup of water and Greek yogurt
    I added this back into the pan.
    I added salt, turmeric, Kashmiri chili powder, garam masala, saffron , mixed it up
    I added water, mixed everything
    I mixed this up and let it come to a light boil
    I added the chicken and mixed it in
    I let it cook for 15 minutes
    I added cilantro on top and folded it in
