    I remember coming across this recipe on the food network wensite. I was like the state of new Mexico stacked their enchiladas? I made it for my Mom one day because she makes enchiladas using Grandma's recipe.

    I'm from Burque. Your enchiladas look delicious! I like using Bueno brand corn tortillas in my enchiladas and like your husband I also like beans in my enchiladas. New Mexico is the chile capital of the world. Thanks for sharing.

    I heard you say grandma, nana. So, your grandma, grandma? = ). I've been trying to find an enchilada sauce recipe that was like my mom made, she didn't make it often but I remember a smokey flavor. My grandparents grew up in New Mexico and when my mom was young, they moved to Colorado. My grandpa Ignacio's mother, "my Nana" (we always used "my" when talking about her) stayed in New Mexico with my grandpa's brother, my Tio Acacio. I remember visiting her when I was really young, she had long grey hair that she kept braided and in a bun and used one of those round hair clips. I also remember that she kept small, glass animal figurines on a shelf above her bed.

      My Grandma had the nickname "NaNa" (pronounced nah nah). It wasn't nana like short for Grandma. Those are great memories to cherish ☺☺

    My grandma is from NM and I still have alot of cousins and relatives that live in NM. This is how my grandma would make her enchiladas. I'm hoping I can make them just as good as hers!

    My Grandmother tought Us to make Our New Mexico enchiladas with Hamburger Meat ..
    We browned Our meat add floor add water for the gravy then add Çhili powder, salt to taste...
    It is easy and Delicious...

    My Great Great grandmother from Southern California made these, then my Great grandma, my grandma, and my mother!
    Now I make them and so do my children!!
    6 Generations of stacked enchilada making!!!

    Maria, you are the first I've seen talking about
    putting a fried egg, on the STACKED UP Enchiladas.
    Well, the first here on the Tube. My father, his sisters,
    and my Grandmother (Dad's mother) did the same
    thing. Cheese, chopped onion, and shredded lettuce
    between each layer. Cooked beef, pork, or chicken if
    you must. I prefer no meat, but I'm weird that way.
    Not a vegetarian, in any way, but I like my Enchiladas
    with just veggies.

      Thanks for bringing that to my attention! But NO, my grandma didn’t put garlic 🧄 That scene is used from my Chicken Mole show video (the garlic just happens to be in the dish). We just used that clip to show how to do the chili pods! I've updated it in the description area as well.
