SOPAIPILLAS: How to Make New Mexico Style Sopaipillas that are Soft, Puffy, & Delicious

  • Whether you call them "Sopaipillas" or "Sopapillas," these light and puffy little pillows of fried dough are delicious. I grew up in Southern New Mexico, where we call these wonderful treats "Sopaipillas" (with the "ai" in the spelling). And we serve them hot with honey, or we dust them with powdered sugar or cinnamon sugar. If sweets aren't your thing, you can also fill them with meat, refried beans, and cheese for a more savory option. Read on for the easy recipe.
    Sopaipillas
    2 cups sifted flour
    3/4 tsp. salt
    2 tsp. baking powder
    1 tsp. sugar
    1 Tbsp. fat (lard, shortening, or vegetable oil)
    approx. 3/4 cup warm water or milk
    enough oil for deep frying
    Combine dry ingredients in mixing bowl. Cut in fat until mixture is crumbly. Add in warm water or milk a little at a time and knead until you have a soft dough. (You may not need all the liquid.) Form into smaller dough balls, cover with dish towel, and let rest 20 minutes.
    Pour enough oil into saucepan to where it's 2 inches deep, and heat over medium-high. Once oil is hot, lightly flour your surface, and roll out individual dough balls like a tortilla. Each dough ball should be about 1/8" thick when done. With a small knife, cut into fourths and fry individual pieces in in hot oil. Flip them over to ensure both sides are golden brown. Remove and drain excess oil.
    Serve hot with honey, powdered sugar or cinnamon sugar, and enjoy!

    In '72'73 I worked at La Hacienda in Old Town Albuquerque. I was the Sopaipillas maker in the restaurant. I was in a little booth adjacent to the Dinning Room and people would watch me make them. I'd toss them up in the air into the hot oil. The salad station was right behind me in the kitchen and I get guacamole to stuff in them. Fun times!

    I am from New Mexico and growing up sopaipillas were not considered a "dessert" they were actually part of your meal, eaten in place of tortillas. I discovered that they were considered a dessert when we visited California. Wow what a culture shock, but they are delish with honey or cinnamon/sugar. But I go traditional, dip it in your New Mexican red chile or better yet, go Christmas!

      Live in California but my grandma was from Hot Springs NM before it was Truth or Consequences. She made these with us when we were little but always rolled it out into a circle like a pizza and cut into triangles, then put slits in them with a knife so they wouldn't be one large puff. We ate them with beans in place of a tortilla also, or sometimes honey or plain. I prefer them savory, and bet they would be good stuffed too.

    I'm from South Texas and I remember Panchos very well. Absolutely loved the sopaipillas. So sad, when their restaurants closed throughout Texas. Thank you for the memories!❤

      I’m so glad other people remember how awesome Pancho’s sopapillas were! We had one in Louisiana that we ate at every few years when I was younger. I’ve loved sopapillas ever since. The last time I checked a few years ago, Pancho’s still had a few restaurants in Texas. That was before covid though so things might have changed.

    i was born and raised in NM and have not had Sopaillas in soooooooo long !!! i remember going to Pancho's when i was little and they where always one of my FAVS !! True comfort food !!! 💙💙💜💜💙💙💜💜💙💙💜💜

      I was raised in Albuquerque and I also remember Panchos from my childhood. Those endless sopapillas you can actually eat when you are a growing kid.

    lived in ABQ from '84 until '89. I remember one place that would cut the side open and slide a green chili cheeseburger inside instead of the bun. Total heaven. Memory fails me after that but thank you for showing us that us mere mortals can make them.

      OMG. A green chile cheeseburger in a sopapilla. Sign me up. I live in Washington state now but grew up in Albuquerque, leaving in 1979. My family is still there and I love to visit. I am not going to wait until next trip. I will have to make the sopapilla burger.

    I was born in Albuquerque and lived there for my first 32 years. Now I am in Arizona. Every time I visit, and I mean EVERY TIME, I go to El Modelo to get stuffed sopapillas. They are next to the railroad, almost under the bridge at Avenida Caesar Chavez. Still a hole on the wall. Everything is take out, no tables or seating. The absolute best New Mexican food experience!! My mouth is watering 😋🥰❤️. Thank you, Marcy for the recipe and the wonderful memories!!

    I went to a restaurant in Albuquerque many years ago that I believe was call Seraphinas (something like that). They had the most delicious stuffed sopapillas, filled with the lightest egg and potatoes and covered in a red enchilada sauce. They were magical. 19 years later and I have not forgotten that meal. Thank you for sharing.

    I am from New Mexico and when I was small my parents would take our family to La Posta in Roswell. This was between 1947 to 1958. My sis would get a plate stacked with tortillas and red sauce and I would always get a basket of sopapillas. When we left New Mexico it was a sad day. I've always wondered if the restaurant was still in Roswell. Now that I'm 70 I would go back just to experience it again.

    I remember my mom making sopaipillas a long time ago. But, today, with your recipe, I was able to make some for me and my dad. It's been nine years as of today (March 31) that my mother has passed to be with the Lord. Take Care

    My mother grew up in Santa Fe. We had Sopaipillas served with our pinto beans. We ate them as a bread not a dessert. We tore off the top and stuffed the sopaipilla with our beans and cheese. Later in life I made them for my children and now my children make them for my grandchildren 😊

    I grew up in Albuquerque and El Paso. I loved La Posta and when I was a child , I’d go to Guardunos in Albuquerque. I’ve been looking for a Sopapilla recipe from NM , Thankyou. I live in New York now .

      Just the other day I had a sopaipilla with carne adovada, and when I finished it, I was ready for another sopaipilla with honey for dessert! Lol Thanks for the comment. Love how many people share the same memory.

      Oh my gosh- Panchos!!! I have talked to THOUSANDS of people about this restaurant since I was a kid! My mom used to drive me from Houston all the way to El Paso once a year, just for my birthday, because I loved this place so much!

    I just found your channel and I am enjoying your recipes! Being born and raised in CA, I had never heard of sopaipillas, not until I married my husband who was born and raised in NM and El Paso, TX. My first time eating them was at Panchos in El Paso and I remember the flag. The sopaipillas were simple, but delicious! I have also been to La Posta in Mesilla, and they have delicious ones too. I will definitely be making these for my family! FYI-My grandmother and her parents were born in La Mesilla. I love going to Mesilla, to visit the San Albino Basilica, they've been very helpful with my genealogy research. Thank you for your recipes.

      I live in Albuquerque and cried when they closed Pancho's. I loved the rice, the beans, the salsa, and the SOPAPILLAS. It was such a family place to be and my son would be so excited to go. You think we were at a carnival or something the way her carried on. What a little flag will do.

    Pancho’s was down the street from my High School and we ate there at least 2 times a week! Love the reference.
    My best friend’s family are Mesilleros so La Posta was also a regular thing growing up. Your video brought up so many good memories!

    I love sopapillas even more than Louisiana’s own beignets, and that’s saying something.
    The best sopapillas I’ve had came from The Sopapillas Factory. It’s a nice restaurant some where betweeen Albq. and Sante Fe. Thanks for your recipe.

    Love your recipe. I grew up in Los Alamos between 1955-1061 and craved these ever since. Now I am retired in Hawaii and I can finally enjoy foods like you have brought to my table. I entertain lots of people from Japan who love my cooking and I know they will love your recipe.

      Was in vacation once up north and the fam took to a " Mexican restaurant " , it was ... uh ... mostly ICK! Though I asked pillows sopaiillias and they whisked off and brought me a Flat dough sort of thing ... yuck

    Love Sopaipillas but can't find them in restaurants anywhere around where I live in north east Texas. LOL. Lived in Las Cruces as a teenager and know exactly where Old Mesilla is. When I was there it was just a hole in the wall, if you blinked you would miss it. Funny you went there. Going to save your recipe so I can make them. Thank you very much for posting.

    This video is bring back to my childhood when I'd visit my grandparents in El Paso tx for the summer. I fell in love with the food there we'd go every Sunday to Casita Linda mexican restaurant in El Paso after church for Sunday lunch!

    If you ever make your way to Silver City NM, find Jalisco’s downtown, hands down the best sopaipillias anywhere!!!! I’ve had them all over NM and Jalisco has perfected the recipe and they are massive too 👍🏼👍🏼👍🏼👍🏼

      I'm very familiar with Jalisco's and all of Silver City! My oldest sister has lived there most of her life, although she's in the process of moving back closer to home now. Whenever I visit, we make it a point to walk downtown and go into the bookstores and antique shops, and we usually eat there. I love it.

    Having grown up in Southern and Northern New Mexico, this was such a delightful reminder of childhood meal memories! Had them both in a sweet and savory style. My favorite was the stuffed sopapillas at El Pinto in Albuquerque. And oh yes, I recall the flag at Panchos! So much fun. Thank you for this video!     I used to live next to Old Mesilla in the nineties. Such great restaurants. There was a place in San Luis, Colorado that would serve sopapillas with honey butter or with ice cream and chokecherry syrup. So amazing! Most of the sopapillas I see today are like hard little crackers. Thank you for the recipe!

      I used to work in Old Mesilla in the 90s, and lived not too far away in 'Cruces. Loved the smell and feel of the different seasons in that part of the world! The food was spectacular, Loved this little restaurant that served the hottest green chili anywhere at Nelly's in 'Cruces. Grew up in ABQ so, yes, nice video!😃

    Was raised in Alamogordo. We went to both of those restaurants all the time! Loved Ponchos! Another great place for sopaipillas is Si Señor in Las Cruses. All of their food is amazing! Glad I found your channel!

    I was raised in Hobbs, NM in a big family so we didn't eat out much.I remember the first time we did. I had sopas I ate 2 with honey and licked my fingers all the way home. I thought I was in heaven!! THANK YOU FOR THIS RECIPE!

      Loved reading your comment. That pretty much described my experience, too! I was the youngest of five, so "eating out" was when we happened to be visiting my tia's house at dinner time! Lol I guess that's why eating at Pancho's was such a big deal. It was the highlight of my existence! (Unlike today's kids who eat out almost everyday.)

    My first introduction with them were stuffed! Delicious beans and seasoned ground beef with shredded cheddar cheese. They were topped smothered in spicy chili verde and more cheese and shredded lettuce. OMG! They were the most delicious thing I’ve ever eaten. The cook of my mother-in-law’s cafe’ was from New Mexico and she introduced me to many of her family’s recipes. Now I show friends and family how to make her chili verde. I even spent time with her and her family to learn how to make tamales and we would form an assembly line and make them for Christmas! The chili and cheese tamales were among my favorites!!

    OMG! I live in Albuquerque and I remember going to Pancho's restaurant when I was very young. I always got in trouble for raising the flag too many times. I even remember it being on Central Ave. in ABQ. They had the best sopapillas.

    The same for me , I loved them when my aunt made a fresh pot of pinto beans , I also like to dip into my sweet cup of hot coffee ‼️ ☕❣️😋No sugar or honey. Miss them alot ...going to try and make some today! 🤞🤗

    Yep, ""La Posta" is the place I first had "Sopa's" and fell in love with them with Honey. A basket was brought to the table. And Panchos in Texas when visiting. These places spoiled me. Some restaurants take a tortilla fry it and call it a Sopa, NO NOT FOR ME! I'll give your recipe a try it looks authentic.

    Hey you wonderful cooking lady. I havnt lived in new mexico for a long time but i one thing i truly miss is new mexican food hands down the best anywhere.
    So now you got me thinking about good ol ponchos. And the rio grande cantina and some of the best food anywhere with hatch green chille. So for my niegbors birthday I'm making him new mexican stuffed sopaipias!
    Problem is the filling is soo yummy iam eating it before i get them all filled.

    Been to La Posta, and Andele in Mesilla a few times each. Nellies in Las Cruces had these babies too! Loved Nellies, went many times, I lived in Alamogordo, 14 years.

    Thanks for repping southern New mexico. I grew up with green chili stew and sopapillas. Never did them for desert, that was tres leches, or flan.

    I too remember Panchos in Phoenix. Always enjoyed their food and yes on the raising of the flag 🚩. Yummy sopapillas is how I'd say it and always had to put honey 🍯 in mine too. Great stuff! As always I really enjoy watching Marcy Inspired. Keep cranking the making of wonderful food. 👍👍

    My ex and I were always at Poncho's Mexican Cafe when I lived in El Paso !!
    In fact that's the place I was thinking of when I was watching you make these!
    I'm going to Albuquerque in September and I don't know if it's still there, but before I left Albuquerque I actually found a Poncho's Mexican Cafe! I'll have to see if it's still there before I get there. I love Sopaipillas! Yum!😋

    hi Marcy we are going to make these tonight it just sounds so good .. We had a restaurant in Denver that made these so soft ask you could eat combos beef or chicken meals they would seat you with your meals i always raised the flag to order the sopas and the refried beans and what ever i wanted but the sopas. were the star of the meal. they also had shows like divers, magic acts games and game shows plus more things to do . The restaurant was Casa Bonita good memories for us .Thank you for the video im sure i will love these with hot hamburger and diced fried potatoes and refried beans ....thank you marcy

      well marcy they reminded casa bonita for the sopas were fluffy and soft i did use milk instead of water altho im sure the water is great also. i will use this recipe from now on thank for replying have a great week marcy...

      we had the sopaipillas with fried potatoes,hot or spicy hot fried hamburger kinda like sloppy joes but hot so good with beans stuffed we had the best meal has anyone been to a restaurant where they made the tortillas in front of you while waiting in line for your food i thought that was interesting check out casa bonita on the google search they will show you the whole experience if it is still up have a good day marcy ...

    Ii am from Silver City , NM and we did not have sopapillas for dessert either. We would get them when my mother didn't feel like making a stack of tortillas for a family of 8. Of course, we loved those times and would have preferred them more often, but my dad didn't care for them. Come to think of it, we probably had them when she was mad at my dad. Unfortunately for us, it was not often enough. Fond memories!

    Living in the East mountains by Albuquerque we ate at a restaurant called Grandma's. It was located in Tijeras. She had the best beans and sops. Of course that was 30 years ago. Then we discovered Monroes. Yummy.

    I miss Poncho's!
    We Native Indians call it fried bread mostly eaten with red or green chile stews or you can also make Indian tacos or simply steam some honey all over it- all delicious.
    At the local NM restaurants they're served with your meal so you can enjoy your Southwestern Mexican/Spanish dinner. Oh so good!

      The one on Central, and the one on 4th St. are where I would get my chile relleno-stuffed-sopapillas topped with green chile. Didn't matter if I went there feeling sad, angry, or already happy, every time, I left with a big happy smile!!!! 😀

    There are many variations all the way from Tierra del Fuego (Chile, Argentina) to New Mexico. It's a fried bread brought by the Spaniards but of Arab origin. The original name was sopaipa.

    Can't wait to make again and stuff with NM red beef chile or green, frijoles, cheese, lettuce, tomatoes, etc.... yum!
    Reminds me of a hot spot growing up in NW Albq called "Mexican Kitchen" Restaurant famous for their Stuffed Sopapillas filled with whatever you choose....and were almost the size of NFL footballs (doggy bag needed, for sure). I believe MK is still there today.

      @@teresab3198 Yes! My parents took us a couple of times to the one in El Paso. It was very, VERY rare that we would go out to eat, so it was so exciting for us. And to know it was all-you-could-eat, my family is probably the reason they closed. Haha!
