I was 3 yrs old when dad landed a job in Las Cruces after he retired from the Army in 1959! I basically went from the bottle to Hatch Chilies! Stacked red enchiladas are my favorite. Green pork enchilada style burritos! I grew up eating Chili Rellenos at La Posta in Mesilla! After graduation from high school in 1974 I move to the east coast but my family still lives in Las Cruces and Ruidoso! When I go back for a vacation I hit all my favorite restaurants! Love your video,,,,,,,,takes me back down memory lane!
The gringos think Mexican food has to have cumin, and I'm always telling them, Mexicans don't use cumin that much and some not at all! The worst is how some make enchiladas without any "chile" they make a sauce with cumin and spices and tomatoes but they don't put any chiles, the word "enchiladas" means "in Chile". I've been waiting for an authentic New Mexico channel on youtube. Awesome, I love your video. I have never heard of diced Dill pickles with enchiladas. If we're a small family, just two of us or three of us we will make our enchiladas individually like you are. If I am making a big batch, we make our enchiladas and put them in a casserole dish. I have never dipped my tortillas and red chili. Thank you for teaching me that. I am going to try it.

I’m so glad to have found this channel. I live in Texas and don’t get this kind of cooking anymore. My grandma (from espanola) passed away a couple yrs ago and my mom recently had a stroke that left her partially paralyzed
Those look good! Mom made hers a bit different... but we are from West Texas... she would melt the cheese and do lettuce etc on the side... and always with fried eggs! and we always had fresh or refried beans on the side... and maybe some rice.
Looks good. We put our chile in hot water too. And we use clean water too, but we don't add spices to our chile only garlic salt and a little flour blender because we use hot chile as well. We add flour in the blender to cut the chile hot, cuz some of our family can't eat it too hot. I love hot chile, cuz we were raised on a farm and my grandfather planted green chile, jalapeños, and chile guerito and other produce. We strain our chile and we don't add meat, only in green Chile chila quiles. That's when I add ground beef. And I make Green Chile enchiladas. Oh, we make rice, beans, and our salad. We only add an egg to whoever wants it. But we sure love red or green enchiladas. Oh I don't add onions on mine. 😂🥰

I had tears in my eyes. My mom would make her enchiladas every Saturday. Stacked with/ sopapillas and beans. My most favorite meal in the world. My mom has passed, and I just miss her enchiladas. Hello from Deming!!! Yes! Thank you for making them right!😍 The only thing I do differently is use some Knorr powdered bouillon for a little extra flavor. Either chicken or beef is good. Thanks for the video!
I boil Chile pods. Then I sauté a cup of garlic and like two onions. Then I throw them in with the Chile. Add some beef and chicken base for salt. Add some oregano. Then I add some Chile Pequín. Boil em for a loonng time like 3 hours. Then I blend a ton! Then I strain it. Not every time tho. Sometimes I leave the pulp. I don’t mind it. But some people might not. That last step is optional
Thank you for posting this tutorial! It looks amazing! I do have a question, though. Why do you put meat in your red Chile if you are not going to use any of it on you enchiladas? Seems to me that a good spoonful of that beautiful red chile with a heaping portion of the ground beef should be poured over the last tortilla before it is topped with the lettuce, tomato and fried eggs.

Just came back from Albuquerque on a COVID road trip. Got 4 bags of dried NM Chiles. Today vegan enchiladas, same recipe minus the beef. Shout out to Casa Flamenco. Was able to see the outside show. Wow what a treat.

Don't use the liquid That is used when you boil the chiles to mahe them soft, blend with frest water half chicken broth

Your Chile should be hot enough to melt your cheese when stacking them
@@MargaretsKitchenNM I made them last night. They were delicious. I put fresh water in the blender instead of the soak water. That made all the difference. No bitterness at all. It was the best enchilada sauce I ever made. Thank you again.
I live in Alaska but I’m from las cruces New Mexico and I just ordered New Mexico red Chile to make some authentic enchiladas. Alaska is as white as you can get😂😂 thank you for this video! It’s just like how my mom used to make them!
I am born and raised in New Mexico, odd fact when I was growing up in the south valley of Albuquerque, I went to school with a guy name Joe Baca. He was my bully all thru the years will never forget him and how I feel to this day. By the way I love your videos.

Hello from Deming!!! Yes! Thank you for making them right!😍 The only thing I do differently is use some Knorr powdered bouillon for a little extra flavor. Either chicken or beef is good. Thanks for the video!
I boil Chile pods. Then I sauté a cup of garlic and like two onions. Then I throw them in with the Chile. Add some beef and chicken base for salt. Add some oregano. Then I add some Chile Pequín. Boil em for a loonng time like 3 hours. Then I blend a ton! Then I strain it. Not every time tho. Sometimes I leave the pulp. I don’t mind it. But some people might not. That last step is optional

Thank you for posting this tutorial! It looks amazing! I do have a question, though. Why do you put meat in your red Chile if you are not going to use any of it on you enchiladas? Seems to me that a good spoonful of that beautiful red chile with a heaping portion of the ground beef should be poured over the last tortilla before it is topped with the lettuce, tomato and fried eggs.

Hi! Thank you for recipe. I’m from NM but we never did enchiladas w hamburger meat. We would cook red chili ( w lard) and once it boiled it was ready to dip tortillas and stack en hiladas. Will try w meat. Thx

Just came back from Albuquerque on a COVID road trip. Got 4 bags of dried NM Chiles. Today vegan enchiladas, same recipe minus the beef. Shout out to Casa Flamenco. Was able to see the outside show. Wow what a treat.
