8:11 I think the reason you need to add the garlic later is because it burns quickly. If you added it at the start, by the time the chicken is thoroughly cooked the garlic burns and becomes bitter. Hope it helps and great video as always!

I'm so happy more people are catching on to using carrots in red sauce recipes. A lot of sauces (that are affordable for us average population income households) are very acidic & need added sugar or baking soda to cut the acid but the natural sweetness from carrots helps with this a lot & chopping them really small makes them kind of just blend in with the mince
I can’t eat tomatoes anymore due to oral allergy syndrome and have started using canned carrots as tomato substitute. Though they just aren’t as juicy, so you do have to use more liquid. Carrot juice though could work too, your comment made me realize:

I think you used Ricotta Salata (I hope I spelled it right.) , which is a solid version of ricotta. It's more like Feta or Queso Fresco. You needed the tub of soft ricotta. But I'm glad it turned out for you guys. 😊
Tina your play with Lila, and watching you cook with her and letting her join in, warms my heart. So many parents see those sorts of activities as too messy and do not want to deal with the clean up or the hassle. They forget their child actually needs to learn and explore with the messy as well. My nephew an I used to make cupcakes together with hand made fondant details when he was Lila's age. He surprised me he never ate the fondant as he made the decorations but just treated as his play dough and he loved putting it on the cupcakes afterwards.... though icing the cupcakes were a challenge and I ended up doing that. (His mother always hated that activity!)

Ok comments on the cooking: Marry me Chicken: You overcrowded the pan with the chicken and it actually stewed and hence never browned. Too much chicken never browns and will go more liquidy. I was wondering if the coconut milk will change the flavour profile too much compared to cream. Ricotta incident... I was wondering if the presenter on Tic Tok used ricotta from a tub compared to the deli. Ricotta from a tub which is found in the cheese aisle is a lot more spreadable and runnier, hence it will mix in easily with the pot. The ricotta you got from the deli is more like a very soft cheese and so more crumbly like feta. It does whip up and if you had whipped it a little before adding to the pan would have not been so hard to mix in. I agree with you chicken thighs are a lot better in things than the breast. I would have just substituted the thighs in the recipe automatically
There are different types of ricotta used for different things. It looks like you bought "pressed ricotta" called Ricotta Salata. Normal ricotta is smooth and spreadable 😊 but Ricotta salata is popularly used in pasta dishes and the chunks of curd are desirable in those dishes
For the “marry me chicken”, season the chicken with all the seasoning before cooking. Also don’t cook the chicken all the way, slightly cook then add all the ingredients and finish cooking in the broth. Then add heavy cream and cheese I’ve made this a couple of times and have had to adjust it a couple of times lol Also cut your spinach into smaller pieces ( edit: I came back after watching your last dish, you need to see the ricotta out and let it come to room temp. )
The ricotta cheese you bought is a solid block of cheese whereas I know here in the US we find the container of ricotta cheese by the cottage cheese and yogurt but it’s in a container, whole milk ricotta cheese they even have part skim or what not also. I get where the confusion is because you made lasagna first and I’m not sure what the name of the stuff is you kept saying it was missing but usually you add a layer of ricotta cheese with spices and parm to lasagna so that was my indication you didn’t know about the ricotta layer and maybe it’s just simply different where you are and that’s fine too.
Love your videos. Should definitely try the normal marry me chicken recipe. The chicken breasts are lightly crumbed and then added to the sauce later so the chicken is much nicer and not dry at all. Its soooo good i love making it. Just with some white rice on the side to soak of the lovely sauce.
In the US the ricotta cheese usually comes in a container and it’s more like a creamy paste compared to the solid one you have… so maybe that is the difference?

That’s a pretty common thing. And I’m pretty sure all jarred red sauces have carrots in them too.
I grate my carrots if I want them to cook down into the sauce
I use my food processor and make them as tiny as possible! My kids don't even notice!

For the last recipe, maybe the problem you got with the ricotta cheese is its variety! Some ricottas are softer than other ones 😊

For the chicken breast try cooking it on high heat to lock in the moisture and it'll come out as moist as a thigh

you bought a very firm dry ricotta in the last one. You can buy a nice creamy ricotta like in the video.
