How to cook Sausage and Eggs with Polenta in the Toaster Oven

  • In this easy cooking video, I cook some breakfast sausage and eggs with polenta in my toaster oven. I put the sausage and polenta in a lightly oiled 10 inch cast iron skillet and baked it in a 450 degree F oven for 15 minutes. Then I turned the sausage and polenta over, added 2 eggs, and let it cook for 2 more minutes.

    I cook the eggs in my little 6" cast iron pan until they stop wiggling when I shake the pan . . . about 5 minutes. Best eggs!

    The cast iron pan is a master stroke in these (Maybe they could even think about learning from you Sir when they sell them new and add one in to the package?)

    Hi Jim. I'm REALLY LOVING your mid-week videos. Keep them coming! 🙂. We eat our polenta basically like you would pancakes. Fried in a skillet, with something added to bottom of pan so they don't stick. Fried until they're a nice golden brown. It does seem like it takes forever to get the inside of them done though. So I try to slice them into really thin pieces. Then I add butter and syrup to them while they're still hot. Yummy. But the way you are making yours is so simple and easy, and looks great! I think I will try it like that next time. Thanks for all of your great recipes. Take care.

    I've never seen polenta in a tube like that… I threw some in the cart for next grocery delivery. My Italian grandmother use to fry up the leftover polenta like that, but used Italian sausage. I think I will try that for breakfast one of these days.
    I've been cooking just about everything out of my toaster oven since my stove/oven quit working… Getting too old to replace it =8-/

      You'd be surprised how handy a toaster oven can be even in ways Tos has not covered. Much better than a microwave to re-heat. They say not to put Pyrex in the oven and over years it has worked for me every time... just be sensible. I wouldn't put a frozen dish in the toaster oven at a high temperature. Put it in the oven and forget about it . . . . the oven turns itself itself off. I put my defrosted soup in there and forget about it as it shuts itself off, no standing over a hot stove. I do fried eggs like Tos taught me. He has a healthy chicken liver recipe that works great. You can easily roast a squash or baked potato.

    How in the Sam Hell did you get a Cast Iron Skillet to fit inside of a Counter Top Oven ?? Mine will not fit and I have the same Black & Decker Toaster Oven as you do !!!

      It has a pretty short handle for a 10 inch skillet. It's a Walmart Mainstay's brand. It only cost about 8 dollars and it works great!
