    Mango Confit

    Ingredients:

    Mango puree 170 gr
    Sugar 70 gr
    Pectin nH 4 gr

    Bring the puree to the boil in a saucepan.
    Mix the sugar with the pectin.
    Add to the puree.
    Bring to the boil and pour into moulds.
    Freeze.

    Mango ganache

    Ingredients
    Mango puree 75g
    White chocolate 29% 200g
    Cream 33% 150g
    Philadelphia cheese 130 g
    Glucose syrup 10g

    Heat the puree with the glucose syrup.
    Mix chocolate, purée and cream.
    Add the Philadelphia cheese.
    Blend.
    Pour over the confit and freeze.

    Coconut Mousse

    Ingredients:
    Cream 33% 120g
    Coconut puree 70 g
    White chocolate 29% 120 g
    Gelatine (220bl) 7g +42g Water
    Whipped cream 33% 140g
    Cream cheese 70 gr

    Soak the gelatine in cold water.
    Bring cream #1 to the boil. Add gelatine and coconut puree.
    Mix well and add the chocolate.
    Blend and add cream cheese.
    Add the whipped cream.

    Fill the moulds with the strawberry filling.
    Freeze.

    Rice dough

    Ingredients:
    Rice flour 100 g
    Powdered sugar 50 g
    Cornstarch 12 g
    Water 150 gr
    Colour

    Mix all ingredients together, cover with cling film and microwave for 1 minute on maximum power.
    Remove, stir and microwave again for 1.5 minutes.

    The dough is ready!

    Roll out thin sheets of pastry, wrap the frozen filling around them.

    And your delicious mango mochi is ready!
