Great job on the restoration, like how you extended the short tang with the screw, it reminds me of a few knife makers that do that with a piece of wooden dowel and slide the handle on. Ingenious way to extend that tang if you don't have access to a welder. Personally, I would have left the threads on the back end usable and then counter sunk a nut in the end of the handle, so you have a mechanical bond as well as a glue bond. You do nice work. Do not apologize for your English or anything else. In fact, if you care to speak more, I really don't mind. I find accents interesting. The handle does look brilliant on this knife. Fits it more than just in the literal meaning. Turned a rather ugly, cheap knife into a beautiful creation. Never apologize for your materials being a problem. You work with what you have, there is no shame in this.

Nice! But, in my opinion, it would be better instead of the brace plate to make two faces to the blade at angle ≈45°. Most of the chefs hold the knife so that the thumb and index finger are on the blade.

Этот нож, думается мне, выкинули даже раньше, чем сломали рукоятку - из-за того, что на нем за время работы, оказалась большая выработка. Поверь - таким ножом, какой-бы о острый не был, работать не удобно. Из-за той пятки, которая сейчас имеется перед рукояткой. Таким ножом не сможешь враскачку нарезать овощи, не сможешь дорезать до доски какой-нибудь мерзлый кусок мяса. Пятка-выступ будет мешать. Лично я вывел-бы лезвие в ровную прямую, сточив пятку.
I'm able to understand what you say, that's good enough for me. I thought the restoration looked good, but one thing that could be problematic for the tang area are the hard 90° edges. Rounded edges are usually better off just for stability's sake of the tang as after heavy use, it can snap there, particularly on hardened steels. But still it's fine nonetheless. One thing to do other than filing or grinding it in, you can also put a small drill bit through there to create a round area to reduce stress

your knife restorations are great, but you need to grind down the heels on chef/kithen knives. If you set the knife down on its edge there should be no gaps along most of the edge. In this knife you losing several inches of cutting surface.

Всё правильно. Это китайский болт типа калённый.
Хвостовик не нужно было стачивать этим ты ослабил его надо было прокачивать пазы под него в рукояти
