Which rear option retains closest factory ride? Blocks, AAL, or a totally new leaf pack?
Blocks pick up the factory setup so that would be the closest. Big change once you lift a truck, really no such thing as going back to factory ride after that. Best option if you can afford it is full leaf spring next is the extra leaf and last is the block. IMO
Whats the best place to go to if you want a shop to do the lifting work for you?

@WiseSilverWolf the kind that does lift kits. Haha but seriously if you have a Toyota dealership near you they most likely have an auto-shop with someone who specializes in Toyota's. That would be my first try

I watched quite number of videos talking about the vibes after lifting your taco. Some people reported they experienced vibes after a 3 inch lift and the issue is solved by swapping the stock needle bearing with a branch new ECG bearing. I think 1 or 1.5 in lifting, you should be fine.
3/10 video. Not even close to an “ultimate” lift video.
