    TURKISH TORTILLA DE PATATAS
    3 medium potatoes, diced (dry ones are better because of high starch content, but whatever you have is fine.)
    1 medium onion, sliced crosswise (or diced if you prefer a more distributed onion flavour.)
    6 eggs
    10 tablespoons olive oil
    2 tablespoons whipping cream (optional, if you are not on a cheat day like me)
    4 handfuls of sesame seeds
    2 teaspoons salt
    • Place a big pan on high heat and pour 8 tablespoons of olive oil in it.
    • Add the potatoes when the oil is hot. Wait for 3-4 minutes to let the potatoes get a good sear.
    • Stir the potatoes and scrape the bottom with a spatula. Then set the heat on low.
    • Squeeze the onions and place top of the potatoes. Wait for 2 minutes.
    • Give it a stir and add 1 teaspoon of salt. Let it cook until the onions are browned and the potatoes get crunchier.
    • Beat the eggs, cream and a teaspoon of salt.
    • Put a smaller pan (24 cm, 9 in) on high heat and pour 2 tablespoons of olive oil.
    • Cover the bottom of the pan with half of the sesame seeds.
    • Transfer the potatoes and onions to the smaller pan and add the egg mixture.
    • Give it a good shake, put the lid on and lower the heat.
    • Let it cook for 8-10 minutes.
    • Cover the top with the remaining sesame seeds. You can finish it off in the oven until the top is golden brown.
    • To continue with the pan, scrape the sides and the bottom in case it sticks.
    • Put a flat-bottomed lid on and flip the eggs onto the lid. Do this away from the flames to avoid any burn.
    • Slide the eggs back into the pan and let it cook for another couple of minutes.
    • Place the egg onto the dish using the lid and enjoy the crunchy outside and silky inside of the potato eggs. For a full Turkish breakfast experience, eat with tomatoes, olives, purslane, fresh cheese - and of course, Turkish tea!

    • You need to curdle the milk as shown in the video.
    • When the curdling is done, take them on a sieve and add salt while it is hot.
    • Put some weight on it and let cool with weight. Curdles will merge and your cheese will be ready to slice when it is cold.

    My wife and I are British. We are both in our sixties now, we didn’t get to go abroad for Holidays till 1997 but we have had some great holidays in Turkey. Many dishes stand out and one I wanna see you do is liver. The way the people over there cook it makes it so creamy and succulent.
    I’m going to give this one a go and see if it tastes like I’ve tried over there.
    With the way this crazy world is going we probably won’t get back again as I’m very disabled now. Lots of love Joy and Dave xx

      There is 2 populer typle of cooking liver in Turkey one is lamb liver kebap which cooked on barbecue. Second one is called edirne ciger which covered with flour and fried in very high tempeture oil and it has to be cow liver. İ would like to learn which one you tasted

    There is little doubt that Turkish produce and cuisine competes at the highest level. Turkish breakfasts are hard to beat!!     Again a great video full of joy. 8 years ago we moved from Amsterdam to rural Sweden ,now winter is coming soon again a boy do I love to see the beautiful warmth of Istanbul. Now the wood stove is lid I can make this nice recipe.

    As a return gift I'm suggesting the recipe of a 'kheer' that is my comfort food....you take a bottle gourd(medium sized), peel it grate it and then cook it with little water in a pressure cooker or a pan for about 5 mins...on the other hand take a litre of full cream milk and boil it till it gets thicker and boils down to almost half the original quantity...now add the grated bottle gourd cook for about 5 minutes add sugar to taste and some cardamom powder ...let it cool down and enjoy! 😀

    My mom is from Barcelona, I learned it from her, so very fun to see a turkish twist on it. We sometimes make all kinds of different ones (for example the classic, chorizo, paprika, asparagus, tuna, artichoke, well almost every variation is possible) and a couple of different salads for the side and bread and dips like alioli and herb butter (tapas style).

    Oh my soul! Purslane! Down here in South Africa, we think this is a weed and we pull it out and discard it! And it's not like we can afford not to eat whatever Nature gifts us, being a poor country. I read that this was very nutritious and edible, but I never believed it... NOW I do! Thanks, Rafika!

      Actually it is a common plant used in many Turkish recipes; you can cook them with some tomato paste, onions and some rice with a little bit of water, or you can chop them finely and mix them with some plain yoghurt and garlic and eat it cold as a side dish. These two ways they are pretty tasty in my opinion especially because I like the savoury taste of it 😍👌

      I also pulled them out of my garden into the trash. Then my auntie got cancer and her Dr. suggested she eat it for its high vitamin and mineral properties and cancer fighting enzymes. We eat it like a Watercress salad (onions tomatoes and vinegrette.)

I'm surviving covid by keeping myself busy and spending time with my family and friends at least twice a month and making sure everyone is well before visiting so far thanks to the Creator of all that exits we are doing well. I'm learning so much from you! Please show how to thicken soups or sauces. I want to step away from using flour.

      Depending on the dish I’ve found that a purée of a suitable vegetable can help thicken. Doesn’t have to be a lot, especially if it’s potato. Also, red lentils break down so easily and melt into whatever you’re making. I find I don’t taste them at all and tend to put them into a lot of things for the fiber and iron benefit.

      Dawne Smith-Sliming correct me if I’m wrong: cook red lentil in a batch until it’s soft and creamy, add a spoonful of red lentil into the dish to thicken it... one batch of red lentil can last several meals... or if it’s for pot of soup, add handful of red lentil while it’s cooking, treat it as additional ingredients

      LotusPrayer2 Exactly! Anything that I’m going to bring to a boil and then simmer for at least 20 minutes I can put the lentils right in the dish. I prefer to have some prepared but sometimes I don’t plan ahead. I should have also mentioned I always rinse my lentils even though they don’t need soaking this beans.

      If in a hurry I thicken soups and stews with instant mashed potato flakes (or grate a raw potatoe a la Julia Child.)
      Bread crumbs and a spoonful of instant rice can also be added.
      My grandma from Morocco used bean puree ( lentil or garbanzo.)
      Powders such as tapioca starch, arrowroot or seaweed powder can also thicken broths.

    I will be making this for my sister and I on the weekend!! Perfect comfort food for a weekend of sadness and fun as we honour and celebrate our brother, who passed away on August 31st from ALS and my birthday on September 16th. I live on Vancouver Island in British Columbia, Canada and we have been doing well with Covid. I think living on an Island has helped us but we are also doing what we should to stop the spread; washing hands, wearing a mask and social distancing. I have also kept my people bubble pretty small too. I am enjoying your videos immensely and have made your hummus from scratch, so good!! Excited to see your new kitchen!

    It looks delicious. As a Spaniard, I missed a touch of finely chopped garlic. I'll try the sesame seeds thing next time.
    And if you don't mind risking to be imprisoned by the Spanish gastronomical inquisition, it is also worthy to try other additions like frying a bit of apple and a few raisins together with the potatoes or going full crazy and replacing them by blanched cauliflower or aubergines.

    This looks so delicious. I am definitely making next weekend for a late breakfast/ lunch. Thank you. Well i am working, spent long time working from home but went back to the office about 3 months ago. So far my grown son has had to isolate twice and grandchildren twice. I have been lucky so far

The beauty of your country’s history, majority of its people, its food, its landscape has make us fall in love with Turkey. Stay true to your roots and traditions. I love the fact that aside from delicious foods you also encourage organic gardening, make your audience aware of the toxic substances in cooking tools, avoid as much possible plastic.     That is a staple in our home, with some cheese melted on top .
    I think I'm going to have to grow some purslane next year , looks really great !
    Surviving covid by knitting, cooking, bothering the husband and taking care of my FB group members who are all disabled creators .
    Only went out twice because I had to have my upper teeth all pulled out so I've been searching your channel for some nice very soft recipes and have found a few that look so, so good ! Ordering the ingredients Monday lol .
    Love that outdoor kitchen ! Wouldn't mind cooking there myself, then sitting under the fig tree with a tea, coffee and simply enjoying the present moment .

    I am from Spain and in my family we make the tortilla de patatas almost like you do. We like potates crunchy on the outisde and soft in the inside. The onion cooks almost the same time as the potates and becomes soft and caramelized. We also flip the tortilla to brown it on the other side, but we really like the eggs to be some kind of raw in the inside so we cook it at high heat so only the outisde parts of the eggs are set. It makes the creamiest tortilla ever. My grandma made the best tortilla in the family, I loved her to bits.

Many people can cook, but you give us not only your experience, but also your love of food, and that is very important to me! We now have a bad situation with covid, the second wave has appeared and the numbers are not good. People are no longer willing to follow the measures, they feel that the disease does not exist, because we managed the first wave well ...     I've made something like this before but I like the look of your version so I will definitely be making it Refika style next time! Honestly your food always looks so good the only things I wont be trying to make are the ones with too much dairy for me to handle.

    Refika, I loved this recipe. It reminds me of something that my family does, but with vegetables, sometimes potatoes, but no seeds. Thank you for your wonderful videos, especially the different cheese and sausage recipes. I binge-watched them all during the shutdown, so now I have to wait patiently each week for the new video.We have had to be very creative with food during COVID here in the Caribbean, especially countries that rely heavily on imported food, but it meant that even children had a chance to watch RUclips videos and as Bajans would say,"Try a ting!"
