Rhubarb Pie Dream Bars

  • It’s a sign of spring when you can start pulling fresh stalks of rhubarb. Rhubarb Dream Bars remind me of my mothers, Rhubarb Custard Pie. This layered fruit bar has a crust consisting of flour, sugar and margarine topped with a filling of eggs, sugar, flour, salt, and rhubarb. I make both the crust and the custard filling in my food processor. Enjoy this taste of spring!
    INGREDIENTS FOR CRUST
    1 C flour
    1/2 C sugar
    1/2 C butter, room temperature
    INGREDIENTS FOR FILLING
    2 large eggs
    1 C sugar
    1/4 C flour
    1/4 tsp. salt
    2 c rhubarb, diced
    DIRECTIONS
    1. Preheat the oven to 350°. Line an 8x8 inch pan with parchment that comes over the edges.
    2. Whirl crust ingredients in the food processor. Press in to the prepared pan. Bake 15 minutes. Crust will be pale in color.
    3. While the crust is baking, dice the rhubarb into small pieces. Set aside.
    4. In the food processor mix the eggs, sugar, flour, and salt. Pulse rhubarb in the food processor three times.
    5. For the rhubarb mixture over the hot Crust. Baked for 40 to 50 minutes.
    6. Let the bars cool. Lift out of the pan using the parchment edges. Cut into squares.
    For a 9 x 13 inch pan simply double all ingredients.
