Broccoli: Harvesting and Cleaning Fresh Broccoli
Fresh broccoli is easy to grow and harvest. Just be sure to watch out for the little green worms. Always soak the broccoli in water. Liberally sprinkle it with salt to draw out any insects. After cutting the broccoli heads, leave the plant in the garden. It will continue to produce florets until fall.
Freeze your broccoli by blanching it in boiling water for three minutes. Remove from the pot and immediately immerse in ice water. This stops the broccoli from coking any further and helps the broccoli retain its bright green color. After thoroughly chilled, drain the broccoli. Freeze in one layer on a cookie sheet.     Apparently, I’ve read somewhere that the harder the items you want to grate, the slower the speed is supposed to be. So, I think you should have gone with the slower speed for carrots rather than the same speed as you did the cheese. If you ever get the meat grinder for the kitchenaid, you should grind the meat when it’s half frozen. So the juices of the meat don’t flow back into the mixer. As few people said they had to open theirs due to smell and they discovered a crime scene in there. 😂 so half frozen meat, and not much pushing - as the mixer has enough power to pull the meat in mainly by itself.

      @@ThymetoCookwithSusanBeck just to clarify though - I do not have this KitchenAid attachment, I have the one that is vegetable processor. The round horizontal one that has the option of cubing and slice thickness adjustment. And I tell you what - the cubing option is freaking amazing! And I just wanted to say that when I was doing the veg prep, I did the sweet potatoes at max speed and it was great, then I went to butternut squash (I’d say it approximately the same hardness as carrots, but definitely not as hard as sweet potatoes, and I dropped the speed to about 6, and that’s when my veg processor started to make the horrible sounds of being stuck. It did it several times and when I opened the book and read up on the guide of which speeds are used for what I understood that while for me there was a huge difference for the hardness between sweet potatoes and butternut squash, for KitchenAid there was no difference - both were still hard vegetables and required full speed. When I switched onto full speed, the food processor attachment didn’t get stuck once or had any other issues. However, I don’t know if it’s suitable for grating cheddar cheese - I didn’t have success with it on that food processor, it it completely massacred half a block of mature cheddar (which I’d say on the very soft side) by turning majority of it into a mush under the round grater blade. So, in conclusion, I cannot comment of hardness of the veg vs the speed of grater such as yours, only from what I’ve heard from others, but slower speeds didn’t work on mine with harder items. And if the attachment makes a horribly loud sound of being stuck - that’s a good indicator of not enough speed.

    Boiled ham water is not a flavorful stock. Use some aromatics and a splash of vinegar to extract the bone marrow to make a true ham bone stock. put it in a slow cooker on low overnight and you will have a rich flavor packed stock to use as needed.

      Others also said freezing helps. The blades can go in the dishwasher, but I wouldn't do that all the time. Just use the dishwasher when you have grated something harder to clean, like softer cheese.

    I'm just curious as to why you tighten down the lids so hard? I was always taught to tighten jars to finger tight only so jars down break in the canning process. I'd like to know your thoughts on this

      It probably needs to be turned a bit. There is a locking mechanism. I always hate it when that happens to me, but a little twist and you should be good to go.
