  • Want a new brunch dish? How about these absolutely delicious rhubarb and custard brioche tarts or buns whatever you want to call them. If you don't have rhubarb where you are you can top these with all manner of berries, blueberries being a favourite for these.

    Do you think this recipe would work if I wanted to bake it in one or two fluted rectangular tart pans instead of little ones?

    This looks amazing. I have made Brioche before but never used it this way. What can I use in place of rhubarb as it is pretty difficult to find? My first thought was strawberries or blueberries.

      Mike you can use blueberries, just adding them to the custard and baking as in the video. With strawberries I’d be tempted to add after baking as they get mushy when baked

    Do you have any substitute for the tart tins? Could you place the flat discs directly onto a baking tray?

      Fiona yep you absolutely can do that, you’ll just need to use your fingers to create the depression in the middle

      Marie Domander no I’m in London, would love to visit Sweden though. I’m guessing this comes from my cardamom? I buy it from a Scandinavian grocer here

      Alon Maayan it’s a vegetable although it’s most used like you’d use other fruits
