In the South,where 75% of the population lives, the tortillas are corn, the beans are black and the rice is white… no tomatoes, just chicken stock, garlic and onion,salt. Delicious. And yes, both rice styles has its roots in Spain, where it’s called Paella, not Spanish rice.
