BEEF TAMALES in Red Sauce | Step by Step Tutorial ❤

  • Making tamales is a tradition I was brought up with, these Beef tamales are seasoned beautifully with the best authentic flavor, I've made them using Maseca ( instant corn flour) for my masa, an easy and delicious method. These tamales freeze well and can be warmed up perfectly too without losing any flavor. I used Chuck roast which is super tender and delicious when cooked slow, making these tamales so perfect. These tamales are perfect for family get togethers, gifts or can be enjoyed at Christmas parties. Beef tamales can be enjoyed year round but are always so perfect during the holidays.
    INGREDIENTS----------------
    MEAT-------------
    3 lbs. Chuck roast (not shoulder roast)
    10 C. water
    3 Bay leaves
    1 tsp peppercorns ( ground in molcajete)
    1/2 medium onion
    7 large garlic cloves
    2 & 1/2 tsp salt (you decide amount)
    1 & 1/2 tsp whole cumin (ground in molcajete)
    (YOU CAN ADD CHILE SAUCE ONCE MEAT IS CHOPPED FINE)
    MASA------------------
    7 C. Maseca (Instant Corn Masa Flour)
    2 &1/4 C. lard
    3/4 C. chile blender sauce for color and flavor
    Salt (as needed)
    6 C. broth
    2 tsp baking powder
    CHILE BLENDER SAUCE--------------
    9 guajillo chiles (seeds and veins removed)
    3 Ancho chiles (seeds and veins removed)
    1 Pasilla Chile (seeds and veins removed)
    2 tsp whole cumin (ground)
    1 &1/2 tsp whole peppercorns (ground)
    1 tsp oregano
    4 large garlic cloves
    Salt as needed (I used 2& 1/2 tsp)
    1/4 onion
    3 tsp beef bouillon
    2 & 1/2 C. broth from meat
    1 BAG CORN HUSKS
    ● please use caution when steaming tamales

    I've paid a fortune for authentic tamales many times in the past. I may be brave enough to try this recipe. I just LOVE your cadence when you teach. Every time you say "See? Just like that", I giggle. You're just sheer joy.

      I LLOOOVVEE watching you cook Ms. Rachel, and I'd Iove to make these beef tamales. However I cannot eat pork products. Have you ever used Crisco instead of lard? Will that work as a substitution? Thank you!

      Rachel, except for 1 or 2 slight differences, your tamale making method is just like my mother's, God rest her soul!! I made 5.5 dz for my oldest daughter this past Thanksgiving while visiting her in California. I live in Texas where the art of tamale-making is a tradition!     My mother passed away three years ago. We have not had tamales since then . We decided to try it out this Christmas Eve in her honor.     I’m just seeing this 2 years old recipe by this lady! She is ultra precise with instructions and I love that, her extra detail from cooking to cleaning the peppers and corn husk, to the shredding of the roast and picking out of little pieces before cutting! I just love her. I wish I had a neighbor like this because (one I’m single), (two I can’t cook), and (three.. I love Mexican Foods), especially authentic like this lady does! It is wonderful just watching her.. thank you 🙏 ❤

    My wife and I followed your recipe to make our first batch of tamales ever. It was a success. The "mistakes" that we had were all on us. Too little masa and too much filling in each tamale. We omitted a lot of the salt, which in hindsight it really needed. You were absolutely right in saying that the process isn't hard, just time consuming. Seriously the hardest part for me was cleaning the corn husks. Now that we know what to expect, we will definitely make these again. Thank you again for inspiring us to step out of our comfort level. We can't wait to try some of your other recipes.

    Looks Delicious! Love the tip of chopping the meat a little finer🙂 You did it again. I grew up making tamales on Christmas Eve. My favorite memory is seeing my mom and all the Aunts and my grandma in their aprons and rollers in their hair around the table making dozens and dozens of tamales such a wonderful time. 🌲☃️ Merry Christmas to you and your family.

    This video is wonderful! We lived in Corpus Christi, TX many years ago. Some of the ladies at our church made tamales at Christmas time and would take orders. They were so delicious! I always wanted to learn how to make them but the house they cooked in was small and there wasn't room. Oh how I miss all the delicious Mexican food we had available back then!     I have never made tamales but I decided to try following this recipe. Because I was press for time, I cooked my chuck roast 1 day (shredded and chopped then placed in baggie and refrigerated).
    Next day, I cleaned and cooked the chili. I blended and strained as said to do. Brought out my meat (warmed up) and added the chili sauce. I left my meat mixture in dutch oven and when cooled, placed back in refrigerator. Next day, cleaned the husks and setup my work area. My daughter made the chicken mixture and her daughter (granddaughter) brought the pre-made masa she purchased at mexican store. We took a chance and added reserved chili sauce to store bought masa...turned out fantastic. Took us 4 hours but was so worth it (received so many compliments). Already planning for next year.     That looks so simple. Back in the late 1940's/ early 1950's, my parents moved to New Mexico. They were blessed to live next door to a wonderful Mexican family. They became best friends so through the years, my mom learned how to make many amazing authentic Mexican dishes. I learned what I could from my mom, but never had the opportunity to learned how to make tamales before she passed.
    Thank you so much for your easy instructions. It makes me feel like I'm now the one living next door to a professional chef. I will definitely make these one day soon. Have a very blessed Christmas! 🎄 🎁

Now I have to start my own tradition of making them as best I can with only the hubs to help so when my sons come home for Christmas they can remember the delicious tamales mom and dad made for them .     I am from Houston and we always had a cousin or 2 bring us authentic tamales that someone's sweet grandma made and sold in a local parking lot. No one in our family has attempted to make them. But they always disappeared before the turkey every year. I had a Mexican lady teach me how to eat them a few years ago with just salsa on them and it changed my world. If you get them at a Tex-Mex restaurant they always come with chili and cheese which is very good but salsa (even pace picante) is delicious. I am definitely going to try this recipe to serve to my family this year and i'll let you know how it turns out.

    Rachel this is the best instruction for beginners I have ever seen! You are a master at this my dear, and your instructions are so perfectly explained! You have made a complicated dish so approachable. On of my dearest friends over these 87 years on earth, named Emma and her daughter Mary helped me to learn the process you have covered.     What the perfect tutorial you've created for making these tasty morsels my sweet Rachel. Lord knows how many of tamales I've made over the years especially when my mama was alive.     I grew up Yakima, Washington and had a lot of Mexican friends, I was blessed by having one of my friend's dear grandmother teach me how to make tamales almost 40 years ago and I've been making them a few times a year ever since with our home raised meat. I love your content so I watched your video to see if I could get any new ideas and I did, love the jalapeno addition and adding the Chile sauce to the masa dough. I'm making pork and beef tamales today and I'm going to try those additions. One thing I would like to suggest to you, is when you soak your corn husks put them in a cook pot, fill with hot water, weight with a plate that has a bowl with a lid filled with water or jars of water on top, put on the lid and then keep on a burner and if the water cools you can put the burner on a low heat for a short amount of time to reheat it. Thank you so much for all your wonderful recipes! Oh...if you don't have an extra pot you can put them in a big bowl with hot water, weight down, cover with foil or a lid and put in your oven on lowest temp.

    Thank you for the video. I love how well you explained each step. It's been a while since I made this so a refresher is always good. I use to go to my Mom for tip on how to but she been gone 2 1/2 years. My sister and I will try making them this next week. The chilies have always confused me because our family doesn't do really spicy. So I'm really glad you went over that. I will be looking at this again before we make them. Your a sweetie.     I spent yesterday making these. My family had a big holiday celebration today. I made your Chile Colorado recipe (again) and these beef Tamales. They were a huge hit! I should have made more spicy ones than not. My boys liked the ones with extra slices of jalapeños and Serrano peppers.     This is the authentic recipe I’ve been looking for-for years! Tamales using meat not ground beef. Finally. I will use this beef In enchiladas too. Unless Rachel has a recipe for beef enchiladas too!

    Yesterday I watched the tamale episode from last year! I got so motivated, my daughter and I are making them next weekend. But I prefer using the standing mixer as opposed to working the masa by hand (cuz I’m basically lazy!) 😄

    I do LOVE tamales! I've never been brave enough to try and make my own though. After watching you make these, I just might give it a go and see. I do have one question. How do you know when they're ready? You said you checked, but I don't even know what to look for to tell.

      I found a place in San Antonio Texas by the name of Bolner’s Fiesta Brand. They have a kit of ingredients and are reasonably priced. Very nice business.

    Please show just how to pronounce that stone grinding bowl you use. Please... Also, please explain just why we need to remove that white stuff ("protein"??) from the top of the meat water just before it comes to a boil. I always need to know WHY we should do or not do something. Thank you!!!

    I made these before Christmas to practice for Christmas dinner & everyone raved! They are delicious! I cook mine in an Instant Pot for 20 minutes, then remove & let sit (the hardest part of the whole process!!) before serving but nobody has ever topped with salsa or anything else, we love them as-is.
    Actually going down to start my prep on a double batch now. What better way to spend a snow day!

    Rachel, I have heard that while your tamales are steaming, you must be sure that no one opens an outside door, as this supposedly affects the tamales... Have you heard of this?? Can you address this, please? Thank you!!! Also, just HOW do you "check your tamales"??? How do you KNOW that your tamales "are perfectly ready"?? You don't explain what you are looking for. Please do explain. (I LOVE your videos!!!)

      Thank you so much for your question, I've never heard that before, but I do remember us running in and out of the house as children when my mama made tamales and nothing ever happened, they were always perfect and delicious...I always check for the masa to come away from the husk easy, and I always let them sit for awhile before eating them because the are a little mushy when very hot.❤

    Now this is the way to make tamales!!! Thank you for sharing your recipe this is the way my mother-in-law used to make tamales I was very young and didn't pay attention to the measurement but I know that her masa was flavored with broth and lots of lard and was so tender and flavorful. Let me just say I have bought a lot of crappy tamales over the year where the masa is thick and hard and no flavor most people buy it pre-made and don't add any lard, salt or broth anything to it it makes for a very dense unflavorful tamale. Once again thank you for sharing the traditional way and putting all of the measurements excellent!!!
