Best Tortillas De Maiz (corn tortillas) GLUTEN FREE

  • 1 1/2 cups Maseca flour
    Pinch salt
    1 and 1/4 cups warm water (APPROX more or less)
    Knead very well until it looks like playdough
    Cover bowl with saran wrap and let sit for 30 minutes or more
    Make little balls (egg size)
    Press 1 at a time in tortilla press
    Cook medium high for 1/2 minute
    Flip and cook 1 and 1/2 minutes, press lightly till it bubbles up
    Let it cook for 1/2 minute and remove

    I've made corn tortillas often, but they have never been pliable which has been frustrating. I followed the recipe and technique and paid close attention to look and feel per the video. I am over the moon - they are wonderfully bendy!!!! I have been a bread baker for over 40 years and sourdough the last 5 and I KNOW that mixing and resting is important, but I never thought to pay attention like that with tortillas. Now that I've made them successfully, I think my mistakes were: dough to dry, dough not mixed well enough, too much flipping on a comal that was not hot enough. Using your timing and temp, mine puffed just like yours. So happy - thank you Rachel!!

I grew up with my Mom making them, but don’t remember her technique , just that they were great! I lost her about 10 yrs ago, so I didn’t have her input when I attempted them. ☹️ After watching your wonderful and explicit video I saw all the things I’ve been doing wrong. Don't ever stop saying 'just a little bit' that is part of your uniqueness.     Our daughter became highly allergic to corn in her 20’s. She loves Hispanic foods but has missed out. I used your corn tortilla recipe using almond meal/flour and they are perfect! They aren’t yellow but the texture is spot on! Love your channel!

    I am so glad to have found this video. I grew up with a wonderful Hispanic cook that cooked for our family. One of my favorite treats was when Carmen made corn tortillas & sliced them open with butter & salt. Sometimes she would dice up a leftover pork chop with some green salsa. I couldn't wait to get home from school to see what Carmen had waiting for me. She was the best cook & I am so glad to have had her in my life.

    Oh Rachel! My husband surprised me with a gift of a tortilla press for our anniversary yesterday and I was so anxious to use it that I had to try it out last night. I used Masteca in the gold package like you prefer & followed your directions to the letter. I have never even attempted to make any kind of tortillas in my life & these turned out PERFECT! They were all the same size and soft and pliable and so tasty that we ate about 10 between the two of us! I can’t thank you enough for being such a wonderful teacher and such an inspiration to me to have the desire to make new food! I’m having such a great time learning & experimenting!     I just made these today along with your flour tortillas. I have tried making these for years and though they have tasted good they have never been this soft. It's the first time I have ever been able to get them to puff up. It's all in your technic. Thank you for taking the time to teach us. I'm glad I found you. ☺

      How did this corn tortilla recipe work out for you as I am also GF? Have you tried making flour tortillas or sopapillas yet?       @@toandiloya585 They're corn tortillas and corn is naturally gluten-free. If you google both "gluten-free flour tortillas" and "gluten-free sopapillas" you will see there are some recipes floating around online. Best of luck navigating your new dietary lifestyle.

    Rachel, I can’t wait to try this recipe! My mama taught me how to make puffy tacos with masa way back when I was just a young girl, the best puffy tacos ever. She was raised in south San Antonio in the 1940s-50s & Mexican food was her absolute favorite both to eat & make. Your video brought back so many childhood memories. She always let me press the dough for her… I inherited her tortilla press when she passed away in 2012, & I’ve tried making corn tortillas in the last few years, as I have to eat gluten free now, but they never turned out. Thank you for the in-depth explanation - now I realize I need more water & to let it rest. I can’t wait to try these with my carne guisada recipe, & with her cheese enchiladas. She collected recipes from her friends & neighbors from all around the state (I’m a native Texan, too!) & taught us kids how to make them, too. Such a blessing!
    How long do these keep for? And what’s the best way to store them? I’m sure fresh is best but I’m disabled & have to cook when my body is cooperating & reheat the leftovers throughout the week.
    PS I can’t wait to try your pork chop recipe, the one you linked to in your carne guisada video. I think my hubby will love it, too!

    Hi Rachel. I came across your channel about 3 weeks ago. I'm so happy I did as a gringa who was raised in South Texas but have been living in Florida for 31 years. I miss everything about Texas and will never get it out of my system. I am very partial to Mexican food made in Texas and can't find anything that compares to it here. I just wanted to tell you I made these Tortillas De Maiz and because of your excellent teaching skills I succeeded with the first batch of dough. I just made a bigger batch today with my comal but that's where my problem was. I thought I cleaned and re-seasoned correctly but I had to play around with the heat because some of my tortillas burned. I would love to know how you take care of your comal. Thanks again for this tutorial. I feel like I'm home again watching and learning from you. I can't wait to try your other recipes. Take care and God Bless you and your family.

      I like partial burned tortillas it gives food a different awesome taste. Just scrape the burned and keep using it, after a while you’ll get the hang of the temperature but I always put it on high since I don’t want to wait. The flipping is the key not the temperature

    Rachel- you are so right- the gold bag makes delicious soft tortillas. We love the flavor. EVERY SINGLE one puffed. I GOT POOF! Ive never been able to get poof. With every gentle press in the center I would just smile with such happiness when the tortilla puffed. I’m sharing this with my sister. I just know she will have success in her kitchen too.     Your video covers all the questions I had after tossing out 2 batches of my first time corn tortilla attempts hahaha! I decided to try making tortilla cause I had the best first time experience eating tacos by chance just because I happened to be in an area in California with good Mexican restaurants. As a baker and cook I thought I can do this hahaha! little did I know as you said, its one of those very easy yet very complicated situation learning how certain flours work.

    Thank you Rachel now I can try my luck. I missed out on learning all my grandma's recipes as she passed away too early plus I was an Army brat and we moved around so much so I missed out on learning how to prepare many things. Tortillas was one thing she made day and I remember how fascinated I was watching and sneaking a bit of raw dough to eat. You bring back many memories, so glad you are sharing these foods.

    My husband is from Central America and I’m from South America so I taught myself how to make corn tortillas for him to eat at home and like you i tru out a lot of totilla dough I figured the warm water trick but not letting the dough rest and because of that they would always break, stick on my wooden corn presser no matter how much I try.     As I was watching this video and paying attention to your hand movements, the way you speak, the way you put your heart into your cooking, I realized you remind me so much of my mother-in-law. She owned a restaurant for a while and then she worked as school lunch room manager for several years. And now her daughter, my wife, has worked in the food business most of her life.

    Just great. I learned so much. I have never cut my hefty bag in half. I always just left it together split the sides and kind of folded it. Having the plastic in 2 pieces is such a great idea. Seems to help peel the plastic off without tearing up the tortilla. Love your videos!

    Remember my grandmother making them by hand, I was about 5. Never have be able to make them that way. Will buy a press and try again. Thank you for teaching this over 70 year old women a few tricks. When my granddaughters ask me how I make something, I refer them to your videos, because this old brain of mine forget somethings.

    Thank you! I've watched a lot of videos on tortilla making but yours helped me understand the perfect hydration and texture for the dough. Yesterday I made a big batch based on a different video that told you how much water to add. I had about 150gm of masa left over before I open a new bag so after watching your video I used that to make three 😁. Puff was perfect. My puff yesterday was hit and miss. My dough wasn't hydrated enough. This wasn't even my first time but you helped me understand the perfect hydration AND a lot of videos say your pan should be medium low and they look like they're using a non-stick pan. I fired my cast iron up today. 👍 BIG THANK YOU. I made three just now. Perfect!

    Hi, Rachel! Thank you so much for sharing your video - it helped me tremendously! I am in Ghana and do not have access to Maseca, normally. But a friend brought some to me from the States, where I'm from, and your tips made it so much easier for me, especially since I have to make my Maseca last and cannot afford to waste any, due to it not being readily available here.     This is the easiest thing to make. With ur second ,third try , you’ll get it. Not too wet ,not too dry. Just knead till it doesn’t stick to ur hands. N its delicious fresh. My husband n i love it w sardines. Actually its good w anything u eat w bread or rice. Rachel , i love watching u. Especially ur taste test.

    I’ve never made them. Looks so good! I hadn’t had an appetite for like two years! I was in depression and just wasn’t feeling well at all. Then Covid hits me! But watching you!!!     Great video! You are a great teacher. I have been making my own corn tortillas for a few years now, the package tortillas have a weird taste. I also cook mine on a cast iron skillet. I know the skillet is hot enough when I sprinkle a few drops of water and the water "jumps" and quickly evaporates. I also knead the "taistal" once again individually before placing it on the plastic. The only thing different is I use a thinner plastic for the tortilla press. Completely agree, after making them a few times, you can make them in your sleep. My mom can flip the tortillas without using the spatula, I can flip it using my hand only the second time, not the first time. She started making tortillas when she was 9 years old, she even cooked the nixtamal and ground the maize herself in the farm, so I am proud to say that even though I have never cooked nixtamal, I can at least make them from masca!

    My mom has that same griddle pan. We use it to toast bread. Tortillas are not our basic every day meal, because it's not part of our food culture, but I do like them with tacos Al pastor, and although we are not Mexicans, I do whip up some Mexicans dishes, e.g. enchiladas, I also have that same bag of corn flour, my neighbor gave me. I thanked her for it, but I thought 🤔 What am I going to do with this? Now I know. Thank you, Rachael 😊

    Its so nice to listen to you. My moms mother had the same soft voice and Mexican accent. Grandpa was from Spain different accent but wonderful too, I miss them, and especially watching her make tortillas. Man she could roll flip and cook 5 dozen in no time.. Thanks for sharing Rachel.

    Thx again Rachel, one thing I learned fr your show, cooking is a process, not mixing all ingredients at once, each ingredient has to incorporate with the other to 'release' their own flavor. You are a great teacher...maybe in the near future a cookbook would b awesome. My biracial g/daughter loves TexMex food. 💕

    ❤ My first time making tortillas and before this video it was a disaster 😬the masa was more like wet cement. I wanted to give up. But I just kept adding more maseca until it soaked up the extra water & it felt more like playdoh. That was the best advice! Not easy but it worked out. Took me hours to make them. Something in me lit up when they kind of puffed up cooking 🤩. So even though my picky family didn’t try them I’m learning to trust myself and the process. They were good. 😎 thank you for your help!!

    My first taste of corn tortillas was over a year ago when I bought some from the grocery store to do chicken fajitas. The packaging made them look authentic, but they were nothing of the sort; they were rubbery and had some offputting, bitter, chemical taste. Needless to say, I threw the whole bag into the garbage.
    Recently, I began trying to make them at home; they tasted great, but they didn't puff up and were dry and tough, as well as broke when folded.
    I watched your video months ago, and I watched it again yesterday. Well, I must say that I just got through making a batch tonight, and these are the best ever!
    I paid attention to the measurements and "playdough" texture/consistency, and I let them rest in a bowl covered with plastic wrap for about two hours. I followed also your cooking time and temperature recommendations.
    I don't have a press, yet; I forgot to look for one in the grocery store when I shopped yesterday. I used a heavy cast-iron pan to do the pressing. I measured with a scale 8 balls (45 grams each), and the size was perfect.
    Now, I know how to get real corn tortillas at home. Thanks so much for your kindness, showing us how to make our own. Happy New Year!
