Experimental Insect Sushi Rolls with Miya's of New Haven: Sushi Chef

  • Miya's in New Haven, Connecticut is not your typical sushi restaurant. When the restaurant first opened in 1982 by Yoshi Lai it was the first of its kind in the area, and very traditional, but when Yoshi's son Bun became involved it all changed.
    From a young age, Bun was always interested in food and its impact on the environment. When he started working at his family's restaurant it became clear that he could lessen their carbon footprint by swapping out traditional sushi fish (salmon and tuna) with more sustainable options like lion fish, asian carp, and even foraged plants. Today, Miya's is a New Haven favorite where you can eat all kinds of experimental rolls, many of which use ingredients foraged and grown by Bun and his family.

      When it comes to plants, he's right, and many communities are affirming it. In the desert southwest it isnt unusual to cook the cactuses (nopal) or make palo verde flour. We have created a dependency on the production and manufacturing process. This detaches and desensitizes consumers from the process and impact of nurturing and harvesting resources. If you eat meat, maybe learn and participate in the graphic process from killing to butchering. If you eat plants, try eating stuff you grow. People who do tend to change their outlook on the balance of nature in America, the impact of commercial farming and industry on America's greatest waterway, the Mississippi. "Civilized" people have become too domesticated, distant, dependent, and destructive. Props to him for emphasizing this as well as battling invasive species.

    As someone who has actually eaten at Miya's many times, Bun is maestro with flavor. The whole point of his restaurant is that sustainable and delicious are not mutually exclusive if you take the time to understand the ingredients and prepare them creatively. I guess it's too much to ask of some people, but this is a classic case of "don't knock it 'til you've tried it."

      Start with some Pumpkin Miso and Tokyo Fro (crispy shredded potatoes in a yummy sauce) for the table. The "Ebibaba" is a must-try: A thin roll of potato skin encasing shrimp, covered in a cow's milk cheese and lemon dill sauce. VERY good. other than that I'd say just peruse the menu and don't be afraid to be adventurous, or ask if the chefs can just whip something up for you. I used to go for "late night specials" all the time, wherein they'd just create things up with whatever was lying around, and it was pretty much always excellent.

      The stuff they were picking from their farm aren't weeds. They are legit wild vegetables that can be found in traditional rural Japanese cuisine. The word for vegetables in Japanese is yasai, written as 野菜, where the kanji literally mean wild plants or vegetables. So the concept of going out into the wilds and picking up edible plants is a big part of rural Japanese culture (at least back in the days, don't know about modern day).

    The first time I ever had Japanese food was in this restaurant, a long time ago. Bun was a really cool guy. I'm not surprised he took this route with his food. I remember him being very passionate and pretty experimental.

    this bring back memories of our grandma taking us into the forest and showing us what we can eat and collecting wild ferns, plants and roots and than her doing her magic in making soups, dishes and medicine out of them. it's truly a dying art but so cool that you are able to share this tradition in preserving history...your mom is awesome!!!

    Miya’s is an amazing restaurant. Beyond the experiments and exploration they do, the food is just very good. Some of the most delicious things I’ve ever eaten have been here.

      it's actually true for a bunch of edible "weeds". when analyzed they contain more iron, vitamin C, etc than things like spinach of broccoli or whatever. it's just harder to sell stuff that grows Everywhere.

      SampaJasli If that were true, people would've commercialised the production those weeds and advertised them as having a higher nutritional content.
      The only reason a weed would be more nutritional than a cultivated plant would be if the weed were hard to produce industrially but the point of cultivation is to get plants better, in which case, at some point, they'll obviously be more nutritional than weeds.
      TLDR: farmers make plants better than weeds

    I know this guy, he's my dad's high school friend... He's a great guy and even better chef! One word about the food after seeing all the comments about how horrible it seems: Don't knock it till you try it, it's actually very good.

    Definition of sushi from google :
    a Japanese dish consisting of small balls or rolls of vinegar-flavored cold cooked rice served with a garnish of raw fish, vegetables, or egg.
    So, the toppings doesn't matter, what matters is the vinegar rice.

    I spent my summers as a kid fishing Kentucky Lake and Lake Barkley. We were always told to keep the carp but not to eat them. I mostly ate Catfish and Bluegill.

    Came over here because I saw a short video about them on GreatBigStory and was super intrigued! I have to say I am a little put off by some of the ingredients BUT, since they craft these recipes so carefully I would say I‘d try it :D Some of them actually look quite cool! Definitely a wonderful concept :)

    I respect what he is doing, and I would consider giving the place a shot even though the few meat options on their menu are a bit more expensive than what I would want to pay for those fish. However, if I was craving sushi I think I would be pretty dissapointed going here blind. The whole reason I like sushi is because of all the delicious fresh ocean creatures. 20 bucks for carp sashimi when I could have tuna down the road...... I know where I'm going.
