    Thank you to everyone who took the time to watch or comment. While a personal motivation and inspiration for my work is derived from finding sustainable solutions for feeding the burgeoning population of the world, it is also really fascinating and delicious! There are over two thousand species of edible insects with wildly different flavor profiles, textures, and functionality--as a chef, think about how fun it is for me to work with so many new ingredients!     Honestly, I'm 100% ok with eating bugs, as long as my eyes can't register that it is indeed a bug. I can know it's a bug and be perfectly fine, but the second I see a leg or feel a wing on my tongue, it's game over

      Yeah, that's fair. Snail is way more edible to me when diced up. Hell, ANYTHING is way more edible to me when cut up instead of feeling its dead eyes staring at me.

      Hilariously, this is probably the reason locusts are considered the only insect thats kosher in judaism, since if it eats all of your crops you dont really have a choice

      Ive eaten bugs regularly as a kid in Vietnam before and let ne tell you. Roasted crickets are so good.
      We put cheese power or instant noodle powder on them and just munch. Smokey savoury crunch. As long as i closed my eyes anyways.
      I never had a problem with bugs just the thought of eating one even tho they are freaking delicious

    I once had to proctor a test for a nutritional studies professor who'd brought in a bag of cricket-flour cookies for her class to try. She looked a little bummed that so few people wanted to try them, so I went up and gave it a shot to embolden more people. It really isn't bad! The chitin flakes definitely stick in your mouth a little bit, kinda like the papery outside of peanuts, but the flavor is like sunflower seeds.

      Black ants dont have venom (cmiiw☺), the red one has... I always eat any black ants or termite (theyre not as big as the one in this video tho, probably only half-1mm) that got on my food 😂 too much of a hassle to dismiss em 😂

    For everybody commenting about how they don’t dislike the idea, and the benefits make eating insects worth it, but being scared of bugs, it is worth noting that what he did with crickets already has another use. Grinding crickets up into a powder allows them to be used as flour, and then baked into a protein-rich bread. It’s a great way to consume insects without knowing it’s insects!

    In Brazil we do have some insects in our culinary, mainly the queen ant "tanajura" abdomen fried in a farofa. Actually, I tried crickets once on a research, where they were repeating the testings (us trying crickets) on different places around the world to see the acceptance of people around consuming insects. The crickets would be better with seasoning, cause without them they taste like dog food.

      Crickets are actually quite good imo, in Southern and (some parts of) Central Mexico you can sometimes even find street vendors selling ready-to-eat crickets 😵‍💫

    As someone who is just finding your channel for the first time, seeing this opened my eyes to new food items. Despite the "shock factor" that eating bugs gives, you're correct in that "If we enjoy sea bugs, why not enjoy land bugs as well?" I have reason to believe that some of these dishes would open my mind further to more ecologically mindful food (that is, food that takes up less land, O2, etc in the rearing and slaughtering process). I thought I'd never appreciate bugs as a food item, but my mind has been changed today, so thank you! I love to learn and reevaluate my opinions and ideals, and this challenged everything I thought I knew about ingesting bugs of all kinds, although the tarantula will take some warming up to, haha! Thanks for the knowledge! I'll be subbing!

      I've eaten snails and crickets myself. Crickets, when fried and flavored with things like 'salt and vinegar' or 'cheese powder' honestly just taste like tiny potato chips. Same dry crunch, no lie. As for snails, I swear to you, they taste like clams. If you like clam chowder at all, and if someone made it with snails without telling you, you wouldn't think anything of it.

      There use to be a street food stand in London (candem town) that sell all sort of food with insects ... dude the roasted insects themselves had such a nice yummy smell, like you'd never expected it. Hope they are still there.

      I think hes just doing that because its a "food/cooking" channel. I think when we do get to the point where we have to be eating bugs it probably wont be for taste it will be for necessity. However crickets with flavor powder on them arent the worst thing once you get over the legs in your teeth.

    Just one note: when Chef Yoon says that scorpions are not insects, but arthropods, like shrimps, I would like to say that both insects and crustaceans are arthropods, and scorpions are, in fact, arachnids, and belong to the phylum arthropods as well.

      The phrase "his truth" and/or "my truth" clearly tell me that it's not actually true
      So people talk about how bugs have an amazing amount of protein compared to meat or other foods, the way we ESTIMATE protein in food is by nitrogen content.
      Bugs, by mass, contain a huge amount of chitin, the exoskeletons of crickets and the skin of worms and stuff, and chitin is a polysaccharide with amine groups attached, so it's got a pile of nitrogen in it. It is completely indigestible and it's NOT protein.
      Some may say the people measuring protein content wouldn't make that mistake, but obviously we can't trust them to accurately represent their findings, they're the people telling you to eat boogs after all.
      Incidentally, chitin is an antigen in humans, it causes an immune reaction because the body uses its presence to infer a parasite or a yeast infection, so whilst it won't inherently "give you" cancer or any other disease, eating lots of chitin would very likely reduce your immune response to other illnesses.

    You should do a method mastery named 'How to grind every herb and spice'. It would showcase the way to grind, grate or powder the spice or herb. The tools used could include a grater, grinder, microplane and others. Then what you would use that spice for.

    I love his passion in all of this, I especially loved how he took the only two bugs I’ve eaten (crickets and black ants) and elevated them because that seems wayyyy more appealing than those novelty dried ones with chip seasonings that just taste like dirt.       Arthropods have mainly 4 groups
      Insects (Hexapods);

      Arachnids (including spiders, mites and scorpions);
      Crustaceans (including slaters, prawn and crabs).
      Spiders are not related to crabs nor other insects, if it relates to anything it relates to scorpions.

      I haven't tried everything on the list, but I have had some dishes with crickets and cicadas. I was actually blown away how good they were. A lot of food depends on how you prepare it, I guess. Kinda like how if someone doesn't like broccoli, and yet hasn't tried broccoli baked in the oven with olive oil and salt on top. Totally changes it. Not sure how I feel about a tarantula tho

    I find that there is such a stigma against bugs that even though I want to eat them, I am compulsively disgusted by them. With that being said, I find the spread of knowledge on how to eat these bugs is unbelievably important for sustainability.

      Honestly, I genuinely wanna try all kinds of food at least once, including bugs, but coming from a poor and abusive home, bugs being in food normally means that food is bad, and when you've been forced to eat weevils or you've seen maggots all over your kitchen as a child then it gets hard to get over the idea of eating bugs and it is something that grosses me out a lot, I hope it's something I can get over in the future cuz I find this genuinely interesting

      @@dannyboy4142 Fair enough, but if there ever is a meat shortage this would probably be the best option. I still prefer a burger, or fried chicken, or bacon anyday over bugs. But you never know, what if we have to? Except tarantulas I could never eat those lol. Some of his recipes have the bugs as the main ingredient, I could never eat that stuff. But if it’s more subtle, like the stir fry. I could eat it if I need to.

    I admire his enthusiasm, I really do.
    I’m not personally ready to deliberately eat a bug. Maybe one day, but right now I’m not there mentally. I don’t even eat shrimp or shellfish, so I’m not even close in my culinary habits at this point in my life.
    But its interesting for sure.

      you can try worms and crickets, especially the silk worm - they are the least intimidated to eat and super tasty that you can try as snacks first - fried or stir-fry are also the best way to cook at at the beginning ^^ the spidey and scorpion are still scare me too much to eat tho

      I tried crickets, honestly their not bad. They actually taste like peanuts. I respect you if you really aren't ready. But I still encourage you to explore other cultures. Fish is soooo damn good, especially shrimp.

    As a mexican I can confirm that insects have some original flavours. It's not in our main diet but you can find them easily looking for bolder culinary options.

      I feel like it's just weird to us because most of us didn't grow up eating them. I eat all kinds of sea critters (prawns, crabs, isopods and I've even had snails) because I was raised eating them.
      I tried to get friends to try them and they were absolutely disgusted. I'd have no issue eating an insect just because crustaceans look a lot like insects lmao.
      Worms would probably be my limit just because I hate buttery, creamy textures.

    I think eating it whole is scary for me for a person who is scared of insects, but grinding it into powder makes it less scary for me to eat. I will definitely add this to my diet

      I bought cricket powder out of curiosity and it tastes surprisingly good! I mixed it with dates, cocoa and some other ingredients to make a sort of power bar as it has good nutritional properties. Worked great!

    To be honest to see someone actually cook with insects instead of eating them raw makes them look way more tasty. And to be honest I am a really picky eater. But like in a sauce, Tortellini or wrap basically when I don't see them as the only ingredient this sounds like I should give it a try. Very cool video, and a host with great personality.

    Colombian here, I can confirm that we have bugs in our diet in the form of ants (very widespread snack) and sometimes crickets. Never tried the ants myself but they say that tastes like peanuts.
    Edit: I tried them, the texture is gross, very salty and taste...odd, like a mixture of nut and chicharrón (similar to fried bacon).

      Brazilian myself.
      It is common to eat ants here too! When they are in mating season in some regions of the country we catch then, take the abdomen off and cook it with beans or rice
      Some people also enjoy mixing scorpions on beer to make the drink more zappy

    I feel like it is important to know, but if you have a shellfish allergy, DO NOT eat insects. They are in the same family as crustaceans so they have a risk of triggering a similar allergic reaction

    Being bilingual, every time he said "gusano worm" my brain got stunned for a second. In Spanish, gusano is worm, so it's just worm worm.
    Btw, at least in Mexico it's just the agave worm, commonly consumed dry and crushed as "worm salt", it's also found in alcoholic drinks like mezcal.
