Sawadee krap Khun Nin. When I lived in Chiang Mai the local told me the real trick is to fry some kaprow (spelling intended) leaves first in the hot pan really brings out their flavour into the oil
Koo Toot Khun Nin, You add more kaprow later on at the end. Similar principle to Indian cooking where the curry leaves are always fried first and then more added at the end.
