    2 handfuls Thai basil
    6 Thai chilis
    6 cloves garlic
    2 tablespoons cooking oil
    3 tablespoon Golden Mountain seasoning sauce
    2 tablespoons fish sauce
    2 tablespoons oyster sauce
    1 teaspoon sugar
    2 tablespoons black soy sauce
    1/2 teaspoon white pepper
    1/2 teaspoon black pepper

      I am glad to be back cooking for you too. I got the mortar and pestle from a local Asian grocery store called Lee Lee Market. I like it because it's course, great for when I am not trying to grind fine.

    Very nice gas oven/cooktop .....
    Do you have a rangehood to suck out the fumes and smells from the kitchen.
    Only notices a microwave oven above the gas stove instead of a rangehood.
    What brand and model is you oven please? It looks so nice.
    Would love to compare it with what is available here in Australia.

      Yes indeed. The bottom of the microwave is a fan that vents smells and smoke out through the backside of the wall to the outside.

    I used to order this from an old lady in Kamala, outside Phuket. She always bought everything fresh in the morning in small quantities and closed her shop when she sold out. She treated me almost like a son, and always fed me this with an egg on top. Pad see ew, pad krapow, pad med mamuang, pad kee mao etc..Sweet memories, I hope this covid misery will end soon so I can go back to the land of Smiles.

      The sugar is important for a flavor profile, but you could substitute it with a sugar alternative. But if you don't like to use the alternatives, then yes, you can omit it.
