    This is a mainstay in the restaurant business (called a 'potage' in French) - just can't be throwing away all that usable product. I would like to recommend covering the top of the blender with a towel because sometimes when you start blending hot product it releases a lot of steam that pops the top and blows out causing bad burns. I also run the soup through a strainer to give it a smoother finish, and if need be it can be thickened up with some potato purée.

    I just chop steamed broccoli stems like french fries and eat them with a little lemon juice and salt. Stems are way more delicious than florets imo. That soup recipe also looks like delicious, and definitely I'll give it a try. Thanks! :)

      My friend absolutely loves the stems as well! She will just munch on them raw, she recommended I try and I think they taste great too. The inside of the stems is so tender and refreshing! Its great. :-)

    I’ve started eating the broccoli fries, coated in oil, spices and Parmesan then baked. They’re amazing but I can’t wait to try this soup and the sautéed finely chopped broccoli stems on with scrambled eggs. I can’t wait to go and buy more broccoli. It’s one of my favorite veggies.

    I have been eating broccoli stems for years and years! They are actually sweet. I eat them raw, usually while I'm preparing dinner. But i will try the soup, it sounds really good too. Tyfs!

    I always include stems when making brocolli soup but haven't tried it with stems only! Sounds like a great idea, and it saves money, too! Thank you.

    nice idea Dani! I'm making this right now. My husband and I also stirfry the stems (along with eg carrots, bean sprouts and cabbage) when we make rice and stirfried vegetables. It's delicious with cumin, cardamom or fresh coriander. (I also like to add a dash of low sodium soy sauce)

    I added additional seasoning to enhance the flavours: teaspoon of ground fennel, vegetable seasoning and bay leaf

    did not expect much from a under 4 minute and 4 ingredients video, but I am so tiered of throwing out so much broccoli....even if it is just the stem. so, gave it a shot anyway and made it for dinner tonight. at the end added some broccoli rosettes and a hand full of corn for some bite.
    bloody hell....BEST broccoli SOUP EEEEEVER! :D absolutely love it!!! was meant for dinner and lunch tomorrow.....could not stop....I practically inhaled it! all gone! Thank you Dani for sharing this brilliant little recipe! it ill become a regular in my kitchen.
    oh....also learned something new about me today. while I was waiting for the stems, the onion and the garlic to make friends in the pot, I started munching away on the raw broccoli that was draining. found out to my great surprise....love raw broccoli more then the cooked one. hmmmm......will make hummus tomorrow and have it with the rest of the broccoli and red bell pepper....
    anyway, you are brilliant and I keep my eye peeled on your channel for more magic in the pot. :)

    This soup is amazing! I've made several of your recipes and they've all been delicious, but this soup- wow! Comforting, yummy and healthy. I used the lesser amount of broth and added a drizzle of evaporated milk to my bowl for extra creaminess. It doesn't need it, but it was a nice touch. I really enjoy your videos.

    Love the way you don’t waste the stems. I would also add it to left over liver made in an Indian style and then blend for pate! I suppose u could use cauliflower stems too.

      Chef Gordon Ramsay makes his with water, tops it with goat cheese, and walnuts and it is good! I made it. the goat cheese sounds silly but believe me it's not.

    Half of my freezer is full of broccoli stems..I don't throw them away..I enjoy eating them. Now I can make soup woohoo 🎉

    I kept some stems in a bowl, I just chopped them up raw, added some salt and then heated it up in the microwave, for some reason, doesn't seem to work that way, wasn't that good. So quick search on the internet I find your video. Thanks for sharing, I can't wait to try this now!

    You can steam some broccoli tops cut in small pcs and drop them in before eating. I love it that way.

    I do something similar but I add some skim cottage cheese to it before blending and I get a lean clean cream of broccoli... try it it's amazing!

    whats up with all Cooking shows use "Kosher Salt" what is better or different with "kosher salt" ? (I'm asking since we don't get it here)

      Well I'm sorry you didn't get the response for seven years but here it is.
      Kosher salt is just coarser. So you can FEEL the salt you're adding. Table salt is harder to gage and understand. But yeah. It's nothing special.
