Although I have to say I'm using new mics for this last one and the sound is much more realistic and closer to the actual instrument than the previous videos!

By chance do you know anything about Chevalets Despiau Cello Bridge's? Looking into getting a French bridge and having little trouble finding information about them or what even is a good one

Answering what a good one is can be tough as it's always "subjective". But of course checking that it has a straight (90° from the side of the tailpiece) thin grain is a must! As well as checking the "dots" and "lines" on each side of the bridge. Then the characteristics of the wood itself are a bit more personal.
That being said, and even if I don't use Despiau bridges (I mostly use Milo Stamm), they can be very very good and probably the most popular among the bridges brands, so you can't go wrong if you get a good quality one!
